A favorite of my husband and father who are both diabetic. And even my babies love these. I always have to double the recipe to have enough to go around!

2 large honeycrisp apples are best (can use any really sweet apples of your choice)
2 can(s) pillsbury big & flaky crescent rolls
1 stick light butter or margarine
1/2 c splenda/sugar baking mix
1 tsp cinnamon
1 tsp pure vanilla extract
20 oz diet sprite/diet 7up or diet mountain dew

Steps:

  • 1. Slice apples in 16 slices wrap securely in crescent rolls try not to leave any openings for more even cooking of the apples.
  • 2. Place wrapped apples in 11x13 glass baking dish
  • 3. Melt butter and add splenda mix,cinnamon and vanilla. Mix until well blended pour over the top of your wrapped rolls making sure each is well covered. Open your soda and pour over the top and down inbetween the rolls.
  • 4. Heat oven to 375 and bake for 20-30 minutes remove when rolls get golden brown and serve. Great served with vanilla icecream or just with a bit of sugar free whipped cream for those that can't have sugar!

Number Of Ingredients 7

1 basic pie shell, unbaked
4 apples
1 tablespoon lemon juice
3 tablespoons sugar substitute or 3 tablespoons granular fructose
1/4 teaspoon cinnamon
4 teaspoons margarine
1 egg white, beaten slightly

Steps:

  • Roll out pie dough and cut into four equal pieces.
  • Peel and core apples and sprinkle with lemon juice.
  • Place an apple in the centre of each piece of dough.
  • Combine sugar replacement and cinnamon in a bowl, sprinkling evenly into apple cavities.
  • Top each apple with one tsp margarine.
  • Bring opposite ends of dough up over apple.
  • Moisten slightly with water and seal securely.
  • Brush dough with beaten egg white and place in shallow baking pan.
  • Bake 425F 35-45 mins or til pastry is golden brown.
