Grilled Lamb Chops with Curry, Apple and Raisin Sauce image

Personally, I have never been a lamb eater. However, this recipe for grilled lamb chops is superb. The lamb is succulent and the sauce is such a flavor combination you will want to make this frequently. This is a recipe for those people who don't even like lamb -- as it made a true convert out of me. It is a great sauce for beef and poultry as well, with a definite East Indian flavor.

¼ cup butter
1 tablespoon olive oil
3 cups chopped onion
1 clove garlic, crushed
2 tablespoons curry powder, or to taste
1 tablespoon ground coriander
1 tablespoon ground cumin
2 teaspoons salt, or to taste
2 teaspoons white pepper
1 teaspoon dried thyme
½ lemon (including peel), seeded and finely chopped
3 cups apples - peeled, cored, and chopped
1 cup applesauce
⅔ cup dark raisins
⅔ cup golden raisins
1 tablespoon water, if needed
6 (4 ounce) lamb chops
1 teaspoon seasoned salt

Steps:

  • In a saucepan over medium heat, melt the butter with olive oil, and cook the onions and garlic until the onion is translucent, about 8 minutes. Stir in curry powder, coriander, cumin, salt, white pepper, thyme, lemon, apples, applesauce, dark raisins, and golden raisins until thoroughly combined. Bring the mixture to a boil, turn down the heat to a simmer, cover, and simmer the sauce until it has the consistency of applesauce and the raisins are plump and starting to break apart, about 1 hour. Mix in a tablespoon of water if sauce starts to become too thick.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate. Sprinkle the lamb chops with seasoned salt.
  • Grill on the preheated grate until the chops are well-browned, cooked to your desired color of pink inside, and show grill marks, 3 to 5 minutes per side for medium-rare. An instant-read thermometer inserted into the center of a chop, not touching bone, should read about 145 degrees C (65 degrees C). Serve the lamb chops with the sauce on the side.

A wonderful change from the traditional pork chops and applesauce. Boneless pork chops are browned, and then baked in a coating of caramelized onions, apples, and curry powder. Savory and wonderful! Serve with rice and your favorite vegetable.

4 (1 inch thick) boneless pork chops
vegetable oil
salt and pepper to taste
1 large onion, diced
1 large apple, cored and diced
1 ½ cups unsweetened applesauce
2 cups apple juice
¼ cup margarine
2 tablespoons chicken bouillon granules
1 clove garlic, crushed
3 tablespoons ground curry powder, or to taste
salt and pepper to taste

Steps:

  • Season pork chops with salt and pepper. In a large skillet over medium-high heat, brown pork chops in a small amount of oil, flipping once to brown both sides. Arrange chops in a 9x13 inch baking dish.
  • In the same skillet, melt margarine over medium heat. Cook and stir onions and apples in margarine until caramelized. Stir in applesauce, apple juice, chicken bouillon, garlic, and curry powder. Season to taste with salt and pepper. Pour over chops, and cover dish with foil.
  • Bake in a preheated 400 degrees F (200 degrees C) for 40 minutes, or until pork chops are cooked through.

I discovered the Loaves and Fishes Cookbook while reading through one of Ina Garten's cookbooks because she made frequent references to it. It appears to be out of print, but I found it at my local library. This dish is wonderful and like most curries, tastes even better the next day.

1/4 cup clarified butter (I used regular butter)
6 boneless skinless chicken breasts (I think I used 3 breasts, cut up when I made it)
4 tablespoons butter
1 1/2 cups finely chopped onions
2 garlic cloves, minced
1 1/2 cups peeled cored and finely chopped tart apples
3 tablespoons flour
1 1/2 tablespoons curry powder
1/2 teaspoon cardamom
1 teaspoon coriander
3/4 teaspoon salt
1/2 teaspoon pepper
3 cups chicken stock
2 teaspoons grated lime rind
1 tablespoon lime juice
1/2 cup mango chutney, finely chopped

Steps:

  • Preheat oven to 200°.
  • Heat the clarified butter in a large pan and sauté chicken breasts on both sides till browned.
  • Cover the pan; heat the chicken breasts over low heat for five minutes.
  • Transfer to a platter. Keep warm in the oven while you're making the sauce.
  • To make the sauce, melt the butter in the sauté pan.
  • Add the onion and sauté over low heat till transparent.
  • Add the garlic and apples and sauté for 2 minutes.
  • Add the flour, curry powder, cardamom, coriander, salt and pepper. Stir to mix well.
  • Add the chicken stock, lime rind, lime juice and chutney.
  • Bring sauce to a boil, stirring constantly.
  • Pour around chicken and serve.
  • It's great served over rice.

Apple Curry Sauce
1 teaspoon unsalted butter
2 shallots, chopped
2 cloves garlic, chopped
2 teaspoons chopped fresh ginger
1 tart apple, preferably Granny Smith, peeled and diced
1/2 cup dry white wine
1/2 cup apple cider
1 tablespoon curry powder
1/2 cup heavy (double) cream
salt, to taste
freshly ground black pepper, to taste
4 boneless chicken half breasts
salt
freshly ground black pepper, to taste
1 tablespoon olive oil
slices of red apple, for garnish
chopped green (spring) onions, for garnish

Steps:

  • Preheat the oven to 350 degrees. In a large saute pan over medium heat, melt the butter until very hot. Saute the shallots, garlic, and ginger for about 2 minutes. Add the diced apple and toss to coat with the butter. Add the wine and cider and cook for 3 to 4 minutes, or until half the liquid has evaporated. In a small saute pan over high heat, dry-saute the curry powder for 2 or 3 minutes, until it begins to give off its aroma. Add it and the cream to the apples and cook until the sauce thickens, about 5 minutes. Season to taste with salt and pepper. Set the sauce aside, keeping it warm. Season the chicken with salt and pepper, In a large saute pan over high temperature, heat the olive oil until smoking hot. Place the chicken breast halves skin side down in the pan and cook for 3 or 4 minutes, or until well browned. Turn the chicken over. If your saute pan is ovenproof, place it in the oven; otherwise, transfer the chicken to a roasting pan. Bake for about 5 minutes, or until the chicken reaches an internal temperature of 165 degrees. Place the chicken breasts on a serving platter and pour the Apple Curry Sauce over all. Garnish with slices of red apple and a sprinkling of chopped green onions.

1 small Granny Smith apple, peeled, cored, chopped
1/2 onion, chopped
1 tablespoon all purpose flour
1 teaspoon curry powder
1/2 cup dry white wine
1/2 cup whipping cream
1/2 cup chicken stock or canned low-salt broth
1 1/2 cups chopped tomatoes
1/2 teaspoon sugar
1 large garlic clove, chopped
1 teaspoon chopped fresh basil or 1/2 teaspoon dried
1 teaspoon chopped fresh rosemary or 1/2 teaspoon dried
12 large fresh sea scallops

Steps:

  • Melt 1 tablespoon butter in medium saucepan over medium heat. Add chopped apple and onion to pan; sauté until onion is soft and translucent, about 5 minutes. Add flour and curry powder; stir 1 minute. Add wine, cream and stock; stir until mixture thickens to sauce consistency, about 3 minutes. Stir in tomatoes and sugar. Season with salt and pepper.
  • Meanwhile, prepare barbecue (medium-high heat) or preheat broiler. Melt remaining 4 tablespoons butter in small saucepan over medium heat. Stir in garlic, basil and rosemary. Remove from heat. Brush scallops with melted herb butter. Grill or broil scallops until opaque in center, about 3 minutes per side.
  • Divide scallops among 4 plates. Spoon sauce over scallops and serve.

I love Indian food although I usually only eat the vegetarian recipes. My Hindu friends who taught me to cook their food would shoot me if they knew that this recipe contains alcohol and chicken broth, but I couldn't help myself--this is so good! Oh, I don't serve this to them!

2 cups sweet apples, chopped
1 red onion, chopped
10 1/2 ounces chicken broth
1/3 cup Burgundy wine
1 tablespoon lemon juice
1 cup flaked coconut
2 tablespoons canola oil
2 tablespoons cornstarch
2 tablespoons curry powder
1/2 teaspoon salt (optional)
1/4 teaspoon black pepper, fresh ground

Steps:

  • Sauté apples and onions in oil over medium-high heat, until turning golden brown.
  • In bowl, blend flour, curry powder, salt and pepper. Add broth, lemon juice and wine.
  • Add to apple mixture, stirring until smooth.
  • Turn heat to low.
  • Cover and simmer 15-20 minutes, stirring occasionally.
  • Stir in the coconut and you are "ready to go".
  • Wonderful served over hot rice.
  • One of the best things about this recipe is that it freezes well. It can be used in several different dishes, so I always make more then I need.
