Time 5h10m

Yield 8 to 10 servings

Number Of Ingredients 19

Nonstick cooking spray, for the pan
15 graham crackers (or 2 cups crushed graham cracker crumbs)
3 tablespoons packed light brown sugar
1/4 teaspoon kosher salt
5 tablespoons unsalted butter, melted and cooled
1 1/2 cups all-purpose flour
1/2 cup packed light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1 stick unsalted butter, melted and cooled
1 tart apple, peeled, cored and diced
1 cup granulated sugar
2 tablespoons cornstarch
Pinch kosher salt
Three 8-ounce packages cream cheese, at room temperature
1 cup sour cream
3 large eggs plus 1 large egg yolk, at room temperature
2 teaspoons vanilla extract
Store-bought caramel sauce, for serving

Steps:

  • For the graham crust: Preheat the oven to 350 degrees F. Lightly spray a 9-inch springform pan with nonstick cooking spray and place on a baking sheet.
  • Add the graham crackers to a food processor and pulse until fine, then add the brown sugar and salt and pulse until well combined. Drizzle in the melted butter and stir until the mixture resembles damp sand. Press the crumbs into the bottom of the prepared springform pan in an even layer. Bake the crust until firm, about 10 minutes, then let cool.
  • For the apple crumb topping: Stir together the flour, brown sugar, cinnamon and salt in a medium bowl. Drizzle in the butter and stir until the mixture resembles wet sand, using your hands to form some clumps. Fold in the diced apple.
  • For the cheesecake filling: Stir together the granulated sugar, cornstarch and salt in a small bowl. Pulse together the cream cheese and sour cream in a food processor until smooth. With the processor running, add the sugar mixture 1/2 cup at a time until the mixture is smooth. Add the eggs and yolk one at a time, pulsing until well combined, then add the vanilla, scraping down the sides of the processor and giving it another pulse to make sure everything is incorporated. Pour the cheesecake filling over the top of the graham cracker crust.
  • Sprinkle the crumb topping over the filling. Bake the cheesecake until it is mostly set but still has a bit of a jiggle in the center, 60 to 70 minutes. Turn off the oven and leave the oven door slightly open for 1 hour. Remove the cheesecake from the oven and allow to cool to room temperature, about another hour, then refrigerate for 1 hour more. Run a paring knife around the outside before unmolding and slicing. Serve drizzled with the caramel sauce.

This is a recipe I got from my cousin's German wife. This is hands down, my favorite dessert. I apologize for the metric measurements, which makes an already somewhat time consuming recipe even more so, but it's oh so worth it! Vanilla sugar is available in most grocery stores. Sometimes it is in the baking aisle. If not,...

Making an apple crumb cheesecake is a delightful way to satisfy your cravings for something sweet and delicious. The combination of apples and cheesecake is a perfect match of flavors and textures, which gives it an irresistible taste. However, making the perfect apple crumb cheesecake can be challenging, especially if you are new to baking. To help you achieve the best results, here are some valuable tips that you should always keep in mind when making apple crumb cheesecake recipes.

Tips for Preparing the Crust

The crust is one of the most important components of any cheesecake, and it's no different with apple crumb cheesecakes. Here are some tips on how to prepare the crust:
Use the Right Ingredients
To make the perfect crust, you will need to use the right ingredients. The best crust is made from graham crackers, sugar, and butter. Be sure to use crushed graham crackers for best results.
Avoid Over-Mixing the Crust
When preparing the crust, be careful not to over-mix it. Over-mixing can make it hard and difficult to cut through. Instead, mix the ingredients just until the mixture begins to hold together. This will help you achieve a perfect crust that is both crispy and crumbly.
Be Careful with the Butter
When adding the butter to the crust, be careful not to melt it completely. You want the butter to be softened, but still in a solid form. The melted butter will make the crust too oily, which will interfere with the final taste and texture of the cheesecake.

Tips for Preparing the Filling

The filling is the heart of any cheesecake recipe, and it is what makes the apple crumb cheesecake so delicious. Here are some tips on how to prepare the filling:
Use the Right Cream Cheese
The cheesecake filling is made from cream cheese, and it is important to use the right kind. It is best to use full-fat cream cheese to achieve a creamy and smooth filling. Avoid using low-fat or non-fat cream cheese as it can make the filling too dry and hard.
Get the Temperature Right
The cream cheese and eggs should be at room temperature before you use them. This will help you achieve a smooth filling that is free from lumps. Leave the cream cheese and eggs on the counter for at least 30 minutes before use.
Don't Forget the Apples
The apples are what make the apple crumb cheesecake unique, so be sure not to forget them! Use tart apples like Granny Smith for best results. Be sure to peel and core the apples before chopping them into small pieces.

Tips for Preparing the Crumb Topping

The crumb topping is the final touch in the apple crumb cheesecake recipe. Here are some tips on how to prepare the crumb topping:
Use the Right Ingredients
The crumb topping is made from flour, sugar, and butter. You can also add some spices like cinnamon and nutmeg to give it a unique flavor. Use cold, cubed butter to achieve a crumbly texture.
Do Not Over-Mix the Crumb Topping
When mixing the crumb topping, be careful not to overdo it. Mix the ingredients just until the mixture begins to hold together in small clumps. Over-mixing can make the crumbs too fine, which will interfere with the final texture of the cheesecake.
Bake the Topping Separately
For best results, it is recommended to bake the crumb topping separately before adding it to the cheesecake. This will help you achieve a crumb topping that is crispy and adds a perfect contrast to the smooth filling.

Tips for Baking the Cheesecake

Baking the apple crumb cheesecake can be tricky, and it is important to get it right for a perfect flavor and texture. Here are some tips on how to bake the cheesecake:
Use a Water Bath
To prevent cracks from forming on the cheesecake, use a water bath while baking. This is where you place the cheesecake pan in a larger baking dish filled with water. The water bath helps to maintain a stable temperature in the oven and prevents the cheesecake from drying out.
Bake at a Low Temperature
Bake the cheesecake at a low temperature of 325°F for best results. This will help you achieve a smooth and creamy texture without over-browning the top.
Cool the Cheesecake Slowly
After baking, let the cheesecake cool down gradually to room temperature before refrigerating. This slow cooling process will help you achieve a cheesecake that is firm and free from cracks.

Conclusion

Making apple crumb cheesecake is a fun and exciting process, and with the right tips, you can achieve a perfect result every time. Remember to use the right ingredients, avoid over-mixing, and bake at a low temperature. With these tips in mind, you can make the perfect apple crumb cheesecake that will satisfy your cravings for something sweet and delicious.
