HOT ZUCCHINI PUFFS image

Yield 50 puffs

Number Of Ingredients 9

2 cups shredded raw unpeeled zucchini
1 tsp salt
1/2 cup grated romano or parm cheese
1 cup mayonnaise
1 clove garlic, mashed
4 scallions, minced
1 tsp worcestershire sauce
1/2 tsp Tabasco sauce
toasted bread rounds

Steps:

  • Preheat oven 375 degrees. Mix Zucchini and salt, let sit 1 hour. Place in linen dish towel and squeeze dry. Mix all other ingredients together and stir in zucchini. Spread mixture thickly on toast round. Bake at 375 for 12 minutes or until lightly browned.
