Time 3h35m

Yield 8

Number Of Ingredients 24

1 ½ cups all-purpose flour
1 tablespoon Sugar In The Raw®
1 tablespoon Stevia In The Raw®
¼ teaspoon fine sea salt
10 tablespoons cold unsalted butter, cut into small cubes
Ice water
3 large Granny Smith apples, cored and sliced 1/2-inch thick
1 ½ cups raw cranberries
⅓ cup Sugar In The Raw®
⅓ cup Stevia In The Raw®
3 tablespoons all-purpose flour
½ teaspoon ground cinnamon
¼ teaspoon sea salt
⅓ cup all-purpose flour
2 tablespoons all-purpose flour
⅓ cup old-fashioned rolled oats
3 tablespoons Sugar In The Raw®
2 tablespoons Stevia In The Raw®
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
¼ teaspoon fine sea salt
5 tablespoons unsalted butter, softened
1 large egg, beaten

Steps:

  • In a large bowl, combine flour, sugar, stevia, and salt. Add butter and rub into flour with your fingers until all pieces are flattened and broken up into pieces ranging from pea-sized to nickel-sized. Add ice water gradually, stirring frequently, until mixture is moistened enough to hold together when pressed in your hand; it should not be sticky or crumbly and dry.
  • Transfer dough to a countertop, knead briefly just to bring it together, then flatten into a disk and wrap tightly in plastic wrap. Refrigerate for at least 2 hours and up to 2 days.
  • On a lightly floured countertop, roll out dough into a 12-inch round. Transfer to a 9-inch pie dish, pressing it gently into bottom of dish. Trim all but a 1-inch overhang of dough, then fold overhang back underneath itself so a thick rim of dough rests on the rim of the pie dish.
  • Crimp the crust rim by pressing on one side with your thumb and on the other side with your thumb and index finger. Refrigerate crust while you prepare filling and streusel.
  • Preheat the oven to 375 degrees F.
  • In a large bowl, toss together apples, cranberries, sugar, stevia, flour, cinnamon, and salt. Scrape mixture into crust and return to refrigerator.
  • In a medium bowl, stir to combine 1/3 cup plus 2 tablespoons flour, oats, sugar, stevia, cinnamon, nutmeg, cloves, and salt. Rub in butter until completely incorporated and mixture is crumbly.
  • Sprinkle streusel over pie. Place pie dish on a large baking sheet and brush crust rim with beaten egg. Bake until browned and bubbling, about 1 hour.
  • Let pie cool completely at room temperature before serving.

Apple cranberry streusel pie is a delicious and flavorful dessert that's perfect for any occasion. Whether you're making it for Thanksgiving, Christmas, or just a sweet treat for your family, this recipe is sure to leave everyone impressed. However, like any recipe, there are some valuable tips that can help ensure your pie turns out perfectly. In this article, we'll be covering some of the most important tips for making the perfect apple cranberry streusel pie.

The Crust

The crust of a pie is arguably one of the most important components. This is what holds everything together and helps create that perfect texture. Here are some valuable tips to ensure your crust is perfect:
Use Cold Butter
When making the crust for your apple cranberry streusel pie, it's important to use cold butter. This helps ensure that the butter doesn't melt too quickly and helps create those flaky layers that we all know and love. So, be sure to keep your butter in the fridge right up until you're ready to use it.
Don't Overwork the Dough
It's important not to overwork the dough when making the pie crust. Overworking it can cause the gluten in the flour to develop too much, resulting in a tough crust. So, mix the dough until it just comes together and then refrigerate it for at least 30 minutes before rolling it out.
Blind Bake the Crust
Blind baking the crust is when you bake the crust on its own before adding the filling. This helps ensure that the crust is fully cooked and prevents it from getting soggy. To do this, simply line the pie crust with parchment paper and fill it with baking beads or dried beans. Then bake it at 375 degrees Fahrenheit for about 15 minutes or until it's just starting to turn golden.

The Filling

The filling is where all the flavor comes from, and it's important to get it just right. Here are some tips to help ensure your filling is perfect:
Use Fresh Ingredients
Using fresh ingredients is always important when making any recipe, but it's especially important when making apple cranberry streusel pie. The apples and cranberries should be fresh and ideally in season for the best flavor. Additionally, be sure to use fresh lemon juice and orange zest to help bring out the flavors in the filling.
Balance the Sweetness
When making any pie, it's important to balance the sweetness. Too much sugar can overpower the other flavors and make the pie overly sweet. To help balance the sweetness, use tart apples and cranberries and reduce the sugar if necessary.
Adjust Spices to Taste
Adding spices like cinnamon and nutmeg can really enhance the flavor of an apple cranberry streusel pie, but it's important to adjust them to taste. If you're not a fan of cinnamon, for example, reduce the amount or substitute it with a different spice. The same goes for any other spice in the recipe.

The Streusel Topping

The streusel topping is what really sets this pie apart from other apple pies. It adds a delicious crunch and a sweet, buttery flavor that's hard to resist. Here are some tips to help ensure your streusel topping is perfect:
Use Cold Butter
Just like with the crust, it's important to use cold butter for the streusel topping. This helps create that perfect crumbly texture that we all love. So, be sure to keep your butter in the fridge right up until you're ready to use it.
Mix in the Sugar Gradually
When mixing the streusel topping, it's important to mix in the sugar gradually. This helps ensure that the mixture stays crumbly and doesn't turn into a paste. Mix the butter and flour first until it resembles coarse crumbs, and then add the sugar a little at a time.
Don't Overwork the Streusel
Just like with the crust, it's important not to overwork the streusel topping. Overworking it can cause the butter to melt too quickly and create a tough topping. So, mix the streusel until it just comes together and then refrigerate it for at least 30 minutes before adding it to the pie.

Conclusion

Apple cranberry streusel pie is a delicious and flavorful dessert that's perfect for any occasion. With these valuable tips, you can ensure that your pie turns out perfectly every time. Remember to use cold butter, balance the sweetness, adjust spices to taste, and mix everything just enough to create the perfect texture. Enjoy!
