- Combine flour, baking soda, salt and cinnamon. In a bowl, beat eggs, and sugar; add oil, vanilla and orange juice. Gradually stir in flour mixture. Stir in apples, nuts and coconut. Turn into a greased 13-in. x 9-in. baking pan. Bake at 325° for 60 minutes or until cake tests done.

In the fall I have alot of apples from my two apple trees. I am always on the look out for different recipes and I was looking for a recipe for apples other than a apple pie or crisp. Happened to find this one. I didn't know if the coconut and the apples would work but they sure do. Give it a taste.

Steps:
- Preheat oven to 350°F.
- Grease a 9 x 13 inch cake pan.
- In a large bowl, combine cake mix and coconut.
- Cut in butter until crumbly. (will be very dry).
- Place apple slices in prepared pan.
- Sprinkle with sugar.
- Sprinkle cake mixture over apples.
- Combine water and lemon juice.
- Pour evenly and slowly over crumble, moistening as much as possible.
- Bake for 55 minutes or until top is light golden brown and apples are tender.
- Serve warm or cold with vanilla ice cream or a dollop of whipped cream.
- Keep apple slices quite chunky to ensure that they do not become mushy in baking.
- OPT. - add 1 cup of fresh or frozen cranberries to the apples (I omit this).

- In a large bowl, combine the flour, sugar, salt and baking powder; cut in shortening until the mixture resembles coarse crumbs. Combine yolks and cold water. Sprinkle over dry ingredients; toss with fork. If needed, add additional water, 1 tablespoon at a time, until mixture can be formed into a ball. , Divide dough in half. On a lightly floured surface, roll half of dough to fit a 15x10 x1-in. baking pan. , Sprinkle apples with lemon juice; arrange half of them over dough. Combine the sugars, cinnamon, nutmeg and salt; sprinkle half over apples. Top with remaining apples; sprinkle with remaining sugar mixture. , Roll remaining dough to fit pan; place on top of filling and seal edges. Brush with milk and sprinkle with sugar. Cut vents in top crust. Bake at 400° until crust is golden brown and filling is bubbly, 50 minutes.

When I was doing the baking for the Autism gala back in October, I also wanted to give something to the coordinator of the event who has asked me each year to donate! I adapted this apple and coconut cake from glutenfreegoddess.blogspot.com/2010/09/coconut-flour-apple-cake.html to use up the GFCF starches and flours I had and the outcome was decadent!

Steps:
- Preheat the oven to 350 F and line the bottom of a 10" spring form pan.
- In a small bowl, whisk together the flaxseed and hot water. Set aside.
- Whisk together flours, starch, guar gum, baking powder, baking soda, salt and spice. Set aside.
- In a large bowl, beat together flax mixture, brown sugar, oil, coconut milk and vanilla until the batter is smooth.
- Fold in the chopped apples and coconut.
- Spread in the prepared pan and lightly press sliced apple pieces in a decorative pattern on top.
- Sprinkle the top of the cake with raw sugar.
- Bake 55 - 60 minutes. Do not open the oven door before 45 minutes.
- Cool in the pan twenty minutes, then loosen the sides of the cake from the pan and remove the ring. Cool completely before slicing (although this is delicious gently reheated).

COCONUT CREAM PIE CAKE
I got this coconut cream pie recipe on Face Book some time ago. It took me awhile to try it and now we are hooked. I would suggest making and frosting this cake a day before as the cake texture is better the second day. So yummy!

- 1. Make the yellow cake according to package directions and bake in a 9 X 13 baking pan or dish.
- 2. While baking the cake, mix one can of coconut cream or milk with a can of sweetened condensed milk. You can use any brand, I personally pick it up at the Dollar Store as it is cheaper.
- 3. When the cake is done and while it's still hot take a skewer or a chopstick and poke holes evenly all the way thru the cake. Be sure to poke holes along the sides of the cake if possible. (Leave the cake in the pan or dish by the way)
- 4. Pour the coconut milk/condensed milk over the cake evenly till it's all used. It will pool along the cake but that's ok. Let the cake cool in the pan or dish then put in the refrigerator.
- 5. When the cake is cold, spread the cool whip over the cake then sprinkle the flaked coconut over the top. If you can, make this one or two days ahead of time the consistency is like a coconut cream pie! The taste is sooo very good and creamy. ENJOY!
