Apple Coconut Cake (Gf, Cf, Vegan) image

When I was doing the baking for the Autism gala back in October, I also wanted to give something to the coordinator of the event who has asked me each year to donate! I adapted this apple and coconut cake from glutenfreegoddess.blogspot.com/2010/09/coconut-flour-apple-cake.html to use up the GFCF starches and flours I had and the outcome was decadent!

COCONUT CREAM PIE CAKE

Coconut Cream Pie Cake image

I got this coconut cream pie recipe on Face Book some time ago. It took me awhile to try it and now we are hooked. I would suggest making and frosting this cake a day before as the cake texture is better the second day. So yummy!

Time 45m

Number Of Ingredients 5

1 box yellow cake mix
1 can(s) coconut milk or cream
1 can(s) sweetened condensed milk
8 oz cool whip
1 small package sweetened flaked coconut

Steps:

  • 1. Make the yellow cake according to package directions and bake in a 9 X 13 baking pan or dish.
  • 2. While baking the cake, mix one can of coconut cream or milk with a can of sweetened condensed milk. You can use any brand, I personally pick it up at the Dollar Store as it is cheaper.
  • 3. When the cake is done and while it's still hot take a skewer or a chopstick and poke holes evenly all the way thru the cake. Be sure to poke holes along the sides of the cake if possible. (Leave the cake in the pan or dish by the way)
  • 4. Pour the coconut milk/condensed milk over the cake evenly till it's all used. It will pool along the cake but that's ok. Let the cake cool in the pan or dish then put in the refrigerator.
  • 5. When the cake is cold, spread the cool whip over the cake then sprinkle the flaked coconut over the top. If you can, make this one or two days ahead of time the consistency is like a coconut cream pie! The taste is sooo very good and creamy. ENJOY!

Apple coconut pie is a delicious dessert that combines the sweetness of apples and the nutty flavor of coconut. Making this dessert in a cake pan is not only easy but also convenient as it allows you to make a larger batch that can be shared with family and friends. Here are some valuable tips to keep in mind when preparing apple coconut pie in a cake pan.

Tip 1: Use a Good Quality Cake Pan

The quality of the cake pan you use can have a significant impact on the final outcome of your apple coconut pie. Using a cake pan made with heavy-duty materials such as aluminum or cast iron is recommended. These materials distribute heat evenly, ensuring that the pie is cooked evenly throughout. Additionally, using a non-stick coating cake pan prevents the pie from sticking to the bottom or sides of the pan, making it easy to remove.

Tip 2: Prepare the Ingredients Ahead of Time

Preparation is key in making an apple coconut pie in a cake pan. Ensure you have all the ingredients needed and have them prepared ahead of time. Peel and chop the apples, measure out the flour, coconut, sugar, and other ingredients as required by the recipe. This saves time and allows for a smooth and stress-free baking process.

Tip 3: Choose the Right Apples

Choosing the right apples for your pie is essential. Opt for tart apples such as Granny Smith for an apple coconut pie as they hold their shape during baking and add a tangy flavor to the pie. Sweet apples like Honeycrisp or Golden Delicious tend to turn mushy during baking, making them unsuitable for this dessert.

Tip 4: Mix the Ingredients Thoroughly

It's crucial to mix the ingredients thoroughly when making the apple coconut filling. The flour, sugar, coconut, and spices should be mixed together before adding to the chopped apples to ensure even distribution of the ingredients. Additionally, tossing the mixture together using your hands allows for even coating of the apple pieces.

Tip 5: Chill the Dough Before Use

If you're using a dough crust for your apple coconut pie, ensure you chill it for at least an hour before use. Chilling the dough makes it easier to work with, preventing it from being too sticky or breaking apart when rolled out. Additionally, it helps in preventing shrinkage during baking.

Tip 6: Use a Crumble Topping

A crumble topping is an excellent alternative to a pastry crust when making an apple coconut pie. It is easy to make and adds a delightful crunch to the finished product. Mix together flour, sugar, and butter until it forms a crumbly texture, then sprinkle over the apples before baking.

Tip 7: Monitor the Temperature

The temperature of the oven is key to ensuring that your apple coconut pie is cooked to perfection. Bake at 375°F for 45-55 minutes or until the top is golden brown, and the filling is bubbling. You can also use a toothpick or fork to check if the pie is cooked by piercing it through the middle to see if the apple pieces are soft.

Tip 8: Allow the Pie to Cool Before Slicing

Allow the pie to cool for at least an hour before slicing. This allows the filling to set and ensures that it doesn't spill out when cut. You can also refrigerate the pie for a few hours before serving to make slicing easier.

Tip 9: Serve with Whipped Cream or Ice Cream

A dollop of whipped cream or a scoop of ice cream makes the perfect accompaniment to a warm slice of apple coconut pie. The creamy texture of the whipped cream or ice cream balances out the sweetness of the pie and adds a delightful touch to the dessert.

Conclusion

Making an apple coconut pie in a cake pan is easy with proper planning and execution. By using the right ingredients, mixing them thoroughly, and baking at the appropriate temperature, you can make a delicious dessert that's perfect for family gatherings or special occasions. Follow these valuable tips to create a mouthwatering apple coconut pie that everyone will love.
