Provided by Food Network Kitchen

Time 2h15m

Yield 10 servings

Number Of Ingredients 23

1/4 cup olive oil
1 cup grated Parmesan
1/2 cup finely chopped fresh parsley
2 teaspoons minced fresh rosemary
2 teaspoons minced fresh thyme
Kosher salt and freshly ground black pepper
1 medium eggplant, sliced into 1/4-inch rounds
2 1/4 pounds ripe tomatoes (about 6 medium), sliced into 1/3-inch rounds
4 ears corn, kernels cut from cobs (about 4 cups)
1 medium yellow squash, sliced on the bias into 1/4-inch ovals
1 small yellow onion, sliced into 1/4-inch rounds
1 red bell pepper, sliced into 1/4-inch rings
1 medium zucchini, sliced on the bias into 1/4-inch ovals
2 1/2 cups all-purpose flour (see Cook's Note)
2 1/2 teaspoons baking powder
2 teaspoons sugar
1/2 teaspoon baking soda
Kosher salt and freshly ground black pepper
6 tablespoons unsalted butter, very cold, plus 2 tablespoons, melted
6 ounces sharp yellow Cheddar, grated (about 1 1/2 cups)
3 scallions, thinly sliced
1 cup sour cream, very cold
3/4 cup milk, very cold

Steps:

  • For the vegetables: Position an oven rack in the lower third of the oven and preheat to 350 degrees F. Grease a 9-by-13-inch baking dish with 2 tablespoons olive oil.
  • Stir together the Parmesan, parsley, rosemary, thyme, 2 teaspoons salt and 1/2 teaspoon pepper in a medium bowl.
  • Spread the eggplant in a single layer on the bottom of the prepared baking dish, cutting rounds in half or overlapping slightly if necessary. Scatter 1/4 cup of the Parmesan mixture over the top of the eggplant. Top with a single layer of tomato slices, then scatter the corn kernels in an even layer over the tomatoes and follow with another 1/4 cup of the Parmesan mixture. Add a single layer of the yellow squash slices, then break the onions into rings and scatter over the top. Layer over the bell pepper, then another 1/4 cup of the Parmesan mixture; top with a layer of zucchini slices and finish with an even sprinkling of the remaining Parmesan mixture. Drizzle the remaining 2 tablespoons olive oil over the top.
  • For the biscuit topping: Whisk together the flour, baking powder, sugar, baking soda, 1 teaspoon salt and 1/4 teaspoon pepper in a large mixing bowl. Grate the cold butter on the large holes of a box grater and stir into the flour mixture so all the butter pieces are coated with flour. Stir the Cheddar and scallions into the flour mixture. Make a well in the center, then add the sour cream and milk to the well and stir with a wooden spoon just until the ingredients are moistened. Using a cookie scoop or large serving spoon, drop scant 1/2-cup mounds evenly spaced over the top of the vegetables.
  • Bake until the biscuits are deep golden brown, the filling is bubbling along the edges and the vegetables give easily when pierced with a knife, about 1 hour. Brush the tops of the biscuits with the melted butter and let rest for 20 minutes before serving.

CHEDDAR APPLE CRISP

Cheddar Apple Crisp image

I never understood the cheese with apple pie thing until I made this recipe. The cheese in the crumble elevates a simple apple dessert to a whole new level, without losing the home/farm comfort. Then I lost my recipe for a couple of decades. Now I just found it again, and I can't wait to make it!

Categories     Fruit Desserts

Time 1h

Number Of Ingredients 9

5 c sliced apples
3/4 tsp cinnamon
1/2 c sugar, divided
4 Tbsp water
2 tsp lemon juice
2/3 c flour
1/8 tsp salt
1/3 c butter
1 c grated cheddar cheese

Steps:

  • 1. Slice the apples. A corer-slicer makes this job a snap.
  • 2. Put the apple slices in a large mixing bowl, toss with the lemon juice and water.
  • 3. Arrange the apple slice mixture in a 9x9" baking dish that has been prepared with food release spray.
  • 4. Combine 1/4 cup of the sugar, cinnamon, and salt, and sprinkle over the apples.
  • 5. Combine remaining sugar with the flour and salt. Work in the butter with a fork until the mixture is crumbly.
  • 6. Stir in the cheese.
  • 7. Sprinkle the crumb mixture over the apples.
  • 8. Bake at 350* about 45 minutes, until the apples are tender and the crumble is golden brown.
  • 9. NOTE: You can use whatever apple you like, but I think Granny Smith is the best, or maybe Pippin. This recipe is easy to multiply. It can easily be made gluten free by substituting gluten free flour. I like Bob's Red Mill Gluten Free All Purpose Baking Flour.

Apple cobbler with cheddar cheese biscuits is a delicious and easy dessert that combines the sweet and tart flavors of apples with the savory taste of cheddar cheese biscuits. Whether you're a seasoned baker or just starting out, there are some valuable tips that can help you make the perfect apple cobbler with cheddar cheese biscuits recipe.

Tip #1: Choose the Right Apples

The first tip to making a great apple cobbler with cheddar cheese biscuits is to choose the right apples. You want to choose apples that will hold their shape and not turn to mush when baked. Some good options include Granny Smith, Honeycrisp, and Jonagold apples. These apples will also provide a nice balance of tart and sweet flavors.
Tip #1.1: Prepare Apples Properly
When preparing the apples, make sure to peel and core them before slicing them into thin, even pieces. You can use a mandoline or a sharp knife to ensure that the slices are uniform in size. If you're using Granny Smith apples, you may want to add a little extra sugar to balance out the tartness.

Tip #2: Make the Cheddar Cheese Biscuits

The next step is to make the cheddar cheese biscuits that will top the apple cobbler. You want to make sure that the biscuits are tender and flaky, yet still have a savory cheese flavor. The key to achieving this is to use cold butter and buttermilk, and to handle the dough as little as possible.
Tip #2.1: Use Cold Ingredients
Using cold ingredients is important because it prevents the butter from melting too quickly and helps create the flaky texture of the biscuits. You can cut the butter into small cubes and then place it in the freezer for a few minutes before using it. You can also chill the buttermilk in the fridge before using it.
Tip #2.2: Don’t Overwork the Dough
When making the dough, you want to mix the dry ingredients together, then cut in the butter using a pastry cutter or your fingertips until it resembles coarse crumbs. Then, you can gradually add the buttermilk, mixing with a fork until the dough comes together. It's important not to overwork the dough or knead it too much, as this can make the biscuits tough. Use a light hand and only mix until just combined.

Tip #3: Layer the Apples and Biscuits

Once you have prepared the apples and biscuits, you can begin assembling the cobbler. You want to layer the apples in the bottom of a baking dish and then place dollops of biscuit dough on top. The biscuits will expand as they bake, so you don't need to worry about covering every inch of the apples.
Tip #3.1: Add Flavorful Seasonings
To add some extra flavor to the apple layer, you can sprinkle some cinnamon and nutmeg over the apples before adding the biscuits. This will give the cobbler a warm and cozy flavor that complements the savory biscuits.
Tip #3.2: Brush with Egg Wash
To give the biscuits a golden brown color and a shiny finish, you can brush them with a beaten egg before baking. This will also help the biscuits to hold their shape and prevent them from spreading too much.

Tip #4: Bake at the Right Temperature

Baking the cobbler at the right temperature is crucial for achieving the perfect texture and flavor. You want to bake the cobbler at a temperature of 375°F (190°C) for about 30-40 minutes, or until the biscuits are golden brown and the apples are tender.
Tip #4.1: Check the Cobbler Regularly
It's important to check the cobbler regularly while it's baking to make sure it's not overcooking or burning. You can use a toothpick or knife to test the doneness of the biscuits and apples. If the biscuits are browning too quickly, you can cover the top of the cobbler with aluminum foil to prevent further browning.
Tip #4.2: Let it Cool
Once the cobbler is done baking, it's important to let it cool for at least 10 minutes before serving. This will allow the filling to set and the biscuits to firm up a bit. You can serve the cobbler warm, with a scoop of vanilla ice cream on top for an extra treat.

Conclusion

With these valuable tips, you'll be able to make a delicious and impressive apple cobbler with cheddar cheese biscuits recipe that will have everyone coming back for seconds. Remember to choose the right apples, use cold ingredients, layer the apples and biscuits, bake at the right temperature, and let the cobbler cool before serving. With these simple steps, you'll be able to create a dessert that is both comforting and sophisticated.
