CINNAMON STREUSEL APPLE CIDER MUFFINS

Cinnamon Streusel Apple Cider Muffins image

The streusel topping is what turns this from a good apple muffin recipe to a great apple muffin. The muffin itself is moist with a very mild flavor from the apples. But that streusel... oh my. Full of cinnamon, it bakes to a nice sugary crunch and really complements the apple flavors in the muffin. Just delicious!

APPLE & CINNAMON MUFFINS WITH A COCONUT WALNUT STREUSEL RECIPE - (4.6/5)

Apple & Cinnamon Muffins with a Coconut Walnut Streusel Recipe - (4.6/5) image

Provided by karenluvslife

Number Of Ingredients 15

STREUSEL:
1 1/3 cups ground sunflower seeds, pepitas and flaxseed or almond meal
1 cup coconut sugar or xylitol
2 apples, peeled and grated
1 1/2 tablespoon coconut flour
1 tablespoon ground cinnamon
1 1/2 teaspooon baking powder
2 free range eggs
2 tablespoon oil
1/2 cup walnuts, rolled oats, pepitas or sunflower seeds
1/3 cup coconut, shredded
2 tablespoon coconut sugar or xylitol
1 large teaspoon ground cinnamon
2 tablespoon maple syrup or rice syrup
1 tablespoon coconut oil or butter

Steps:

  • Note: If you don't want to go to the trouble of making the streusel then add the 1/2 cup walnuts and 1/3 cup coconut to the muffin mix at stage 1. Preheat oven the 350°F. (180°C) Add ground seeds or almond meal, sugar, coconut flour, cinnamon and baking powder to a large mixing bowl and stir to combine. Add the grated apple and stir through making sure that there are no clumps and the dry mix is evenly distributed through the grated apple. This will ensure that the apple doesn't end up in clumps when baked. The mix will be very wet. Make a well in the centre then add the egg and oil. Mix them together quickly to break up the eggs and combine with the oil Quickly fold the egg mixture through the mix then spoon or pour into the muffin pans. Bake for 15 minute then add the streusel and bake for another 5 minutes or until done. It's ok to take them out of the oven, just be quick! If not adding the streusel then bake for 20 minutes or until done. Add the walnuts, coconut and cinnamon to a blender or food processor and light pulse to combine and break up the mixture until it resembles course bread crumbs. Alternately you can chop the walnuts into small pieces then add them to the coconut. Add the syrup and oil/butter the pulse again until they cover the whole mix. If you're not using a blender then distribute evenly with your fingertips until the mixture is moist and sticky. Use the seed mix for the flour and sunflower seeds, pepitas or oats for the streusel.

APPLE CINNAMON MAPLE STREUSEL MUFFINS

APPLE CINNAMON MAPLE STREUSEL MUFFINS image

Yield 18 muffins

Number Of Ingredients 18

2½ cups all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
1¼ tsp. ground cinnamon
¾ cup old-fashioned oats
8 tbsp. unsalted butter, at room temperature
½ cup packed brown sugar
2/3 cup applesauce
2 large eggs
1½ tsp. vanilla extract
1 cup milk
¾ cup butterscotch chips
¾ cup chopped apples
For the streusel topping (optional):
1/4 cup flour
2 tbsp maple syrup
2 tbsp brown sugar

Steps:

  • Preheat the oven to 350˚ F. Line the wells of two muffin pans with paper liners (about 18 liners total). Set aside. In a medium mixing bowl, combine the flour, baking powder, baking soda, salt, and cinnamon. Mix lightly with a fork to blend. Stir in the oats. In the bowl of an electric mixer fitted with the paddle attachment, cream together the butter and sugar until light and smooth, 1-2 minutes. Beat in the applesauce, eggs and vanilla extract until incorporated. With the mixer on low speed, mix in the dry ingredients in three additions alternately with the milk, beginning and ending with the dry ingredients and beating just until incorporated. Fold in the butterscotch chips and apples with a rubber spatula. In a small bowl, stir together the flour, syrup, and brown sugar until combined. It will likely be thick and clumpy but that's what you want. Divide the batter evenly between the prepared muffin cups (a large cookie/ice cream scoop works great for this). If desired, divide the streusel topping between each muffin cup. Bake about 18-20 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely.

Apple cinnamon streusel muffins are a delicious breakfast or snack option that combines the sweet and spicy flavors of apples and cinnamon with a crunchy, buttery streusel topping.

Recipe Variations

While there are numerous variations of apple cinnamon streusel muffin recipes out there, most will include basic ingredients such as flour, sugar, eggs, butter, baking powder, salt, milk, fresh apples, and cinnamon. Some recipes may also call for additional flavors such as vanilla extract, nutmeg, or cardamom to enhance the overall taste profile of the muffins.

Gluten-Free Recipe

For those who are allergic to gluten or just prefer gluten-free options, there is also a gluten-free version of apple cinnamon streusel muffins. This recipe usually substitutes regular flour with a gluten-free alternative such as almond flour or coconut flour.

Muffin Preparation

To make apple cinnamon streusel muffins, the first step is to prepare the batter using standard ingredients. The flour is typically sifted, mixed with sugar and baking powder, and then combined with melted butter, beaten eggs, and milk. Fresh apples are then peeled, cored, and diced into small pieces before being added to the mixture. Finally, cinnamon and other spices are added, creating an aromatic and flavorful batter.

Streusel Topping

The streusel topping is what sets apple cinnamon streusel muffins apart from regular apple cinnamon muffins. To make the topping, flour is mixed with sugar, cinnamon, and melted butter to create a crumbly, buttery texture. The streusel mixture is then sprinkled over the top of each muffin before baking, creating a flavorful, crunchy topping that contrasts the soft and moist texture of the muffin itself.

Baking Instructions

After the muffin batter and streusel topping have been prepared, the muffins are typically baked in the oven for around 20-25 minutes at 350°F. Once they are fully cooked, they should be golden brown on top and a toothpick or cake tester should come out clean when inserted into the center of the muffin.

Serving Ideas

Apple cinnamon streusel muffins can be enjoyed warm or cold and are perfect for breakfast or as a mid-day snack. They can be served alongside a cup of coffee, tea, or hot chocolate, or even as a dessert topped with whipped cream or vanilla ice cream.

Storage Tips

Apple cinnamon streusel muffins can be stored in an airtight container at room temperature for up to 3-4 days, or in the refrigerator for up to a week. They can also be frozen and thawed before consumption, making them a convenient and easy-to-make snack to have on hand.

Conclusion

Overall, apple cinnamon streusel muffins are a delicious and versatile baked good that can be enjoyed by people of all ages. With different recipe variations available, they can be adapted to fit different dietary requirements and preferences. Apple cinnamon streusel muffins are an ideal breakfast treat or snack. They are sweet, moist, and packed with flavor. These muffins are the perfect addition to any tea or coffee break or to start your morning right. Making apple cinnamon streusel muffins can seem like a daunting task at first, but with a few helpful tips, you can create delicious muffins every time. Here are some valuable tips to help you perfect your apple cinnamon streusel muffin recipe.

Tip 1: Choose the Right Apples

The apples you choose for your muffins can make all the difference in the flavor and texture of your finished product. For apple cinnamon streusel muffins, it's best to choose a firm apple, preferably one that is tart and not too sweet. Granny Smith apples are an excellent choice because they are both firm and tart. When choosing apples, make sure to pick ones that are free of bruises, soft spots, and blemishes. Apples that are too ripe or too soft will not hold up well in the muffin batter and may turn to mush during baking.

Tip 2: Prepare the Apples Properly

Before adding the apples to your muffin batter, it's important to prepare them properly. The first step is to peel and core the apples. Then, chop them into small pieces that will be easy to distribute evenly throughout the muffins. After chopping the apples, toss them in a tablespoon of lemon juice to prevent them from browning. This will also add a nice tangy flavor to the muffins.

Tip 3: Combine the Dry and Wet Ingredients Separately

One of the keys to making great muffins is to combine the dry and wet ingredients separately before mixing them together. This will help ensure that the muffins have a consistent texture and will avoid over-mixing the batter. Combine all the dry ingredients in one bowl and whisk them together. In another bowl, mix all the wet ingredients together. Make a well in the center of the dry ingredients and pour in the wet mixture. Be sure not to overmix the batter.

Tip 4: Measure Accurately

Measuring ingredients accurately is crucial to making perfect muffins. Even small variations in measurements can affect the texture, flavor, and overall outcome of the muffins. Use measuring cups and spoons for accuracy, and be sure to level off ingredients such as flour and sugar to prevent inaccurate measurements.

Tip 5: Don't Overmix the Batter

Overmixing the batter can cause the muffins to become tough and dense. To avoid this, use a light hand while mixing the ingredients together. Mix until the ingredients are just combined and there are no more dry pockets of flour visible.

Tip 6: Bake at the Right Temperature

Baking at the right temperature is essential to making perfectly baked muffins. For apple cinnamon streusel muffins, preheat your oven to 375°F (190°C) before baking. Also, make sure to place the muffin pan in the center of the oven and not too close to the top or bottom.

Tip 7: Keep an Eye on the Muffins in the Oven

It's essential to keep an eye on the muffins as they bake. Overbaking them can cause them to become dry and hard. Check the muffins after around 18 minutes and observe the color and texture. Insert a toothpick in the center of the muffins; if it comes out clean, the muffins are baked through.

Tip 8: Let the Muffins Cool before Serving

After removing the muffins from the oven, let them cool in the pan for around 5 minutes before removing them. This will prevent them from crumbling and falling apart. Then, transfer them to a wire rack to cool completely. Letting the muffins cool will also allow the flavors to develop and will make them easier to handle when adding toppings such as the streusel. Once the muffins have cooled entirely, you can store them in an airtight container for up to two days.

Tip 9: Add a Delicious Streusel Topping

Lastly, the perfect apple cinnamon streusel muffin should have a delicious streusel topping! A streusel topping adds extra texture and flavor to the muffins. To create the perfect streusel, combine flour, brown sugar, cinnamon, and melted butter in a bowl until you have a crumbly mixture. Sprinkle a generous amount of streusel on top of the muffins before baking them, and then bake as usual. Once the muffins have cooled, you can add a little more streusel on top for extra flavor and crunch.

Conclusion

Creating the perfect apple cinnamon streusel muffin requires a few essential tips and techniques. By choosing the right apples, measuring ingredients accurately, and following baking times and temperatures closely, you can make a delicious batch of muffins every time. Adding a tasty streusel topping will take your muffins to another level and make them a crowd favorite. So, keep these valuable tips in mind, and enjoy making the perfect apple cinnamon streusel muffin recipe!
