Steps:
- Place a 2 lb. rack of baby back ribs in a foil lined shallow pan.
- Add 1 1/2 cups apple cider and cover lightly with foil.
- Bake at 250° for 3 hours basting every 1/2 hour or so with the cider.
- After 3 hours remove from oven and add rub or sauce to ribs.
- Drain off some liquid if needed.
- Return to oven and bake uncovered for 1 hour at 325°.

HILLBILLY HEAVEN APPLE CIDER RIBS
These ribs are awesome. If you have a smoker then try these. They are on the sweet side but you will not want any BBQ sauce with these and they are fall off the bone. The rub can be used on ham or any type of pork on the smoker. If you dont have apple cider then apple juice will work just as well.

- 1. Start your smoker. We use pecan wood for the best flavor for these ribs. Get your smoker to around 250 degrees to 275 degrees.
- 2. In a bowl mix the first 6 ingredients. Take ribs and remove the silver skin from the back of the ribs or they will be tough and the seasoning will not get all the way through your meat. Rub seasoning all over both sides of ribs and place in fridge for about 1 to 2 hours or while your smoker is getting hot.
- 3. Cook ribs on smoker meat side up for around 2 to 3 hours or until meat starts pulling away from the bones. Maintain your smoker temp. between 250 - 275 degrees.
- 4. Take one rack of ribs and place on enough heavy duty foil to wrap with out the bones going through and fold up the sides since you will be adding liquids to this and you will have lots of juice.
- 5. Be real careful since ribs will be hot. Rub both sides of first rack with butter, then with brown sugar, then pour 1 cup of apple cider and close foil tightly. Place back on smoker and repeat with remaiming racks of ribs. Cook 2 to 3 more hours.

- Make the mop: in a small pan, combine the apple cider, shallots, and jalapeno; bring to a boil.
- Cook over medium-high heat until about 1 cup liquid remains, 15-20 minutes.
- Add in the remaining mop ingredients, bring to a boil, and remove from the heat.
- Let ribs stand at room temperature for 20-30 minutes before grilling.
- Season with salt and pepper.
- Grill, rib side down, over indirect medium heat until the meat is very tender and has pulled back from the ends of the bones, 1 ½ to 2 hours.
- Baste the ribs frequently with the mop throughout grilling time, but stop basting during the last 10 minutes.
- Remove from the grill and let rest for 5-10 minutes before slicing into individual ribs; serve warm.

- TO MAKE THE MOP: In a small saucepan combine the apple cider, shallots, and jalapeno. Bring to a boil and cook over medium-high heat until about 1 cup of the liquid remains, 15 to 20 minutes. Add the remaining mop ingredients, bring to a boil, and remove from the heat. (The mop may be made ahead and refrigerated until ready to use.)Allow the ribs to stand at room temperature for 20 to 30 minutes before grilling. Season with salt and pepper. Grill, rib side down, over Indirect Medium heat until the meat is very tender and has pulled back from the ends of the bones, 1 1/2 to 2 hours. - Remove membrane from the back of rib slabs. In a small bowl, combine dry rub ingredients and mix well. Reserve one tablespoon of the rub for the liquid seasoning mixture.
- Generously apply dry rub onto front and back sides of ribs. Gently pat to ensure that rub will adhere.
- Build a charcoal fire for indirect cooking by situating the coals on only one side of the grill, leaving the other side void. Add a small aluminum pan to the void side of the grill and fill it halfway with water.
- When the charcoal grill reaches 250°F, place ribs meat-side up on grill grate and cook over indirect heat for 2 hours and 15 minutes.
- Remove ribs from grill. Place each slab meat-side down on its own doubled aluminum foil square. The foil should be large enough to completely wrap each slab. Mix liquid seasoning in a small bowl. Pour 1/2 cup of the liquid over each slab.
- Then, tightly wrap and seal each slab with aluminum foil. Place the wrapped ribs back in cooker for 1 hour at 250°F.
- Remove ribs from grill, unwrap, and discard foil. Brush finishing glaze on both sides of ribs.
- Place ribs back on the grill for 15 minutes, or until sauce caramelizes.
