Apple Cider-Glazed Ham image

I wanted to try something different with my ham, and this is really good. Very simple and satisfying. Recipe courtesy of Taste of Home Christmas 2009 and Rebecca LaWare of Hilton, NY. She created this cider glaze.

6 -7 lbs ham (fully cooked bone-in)
2 cups apple cider
1 cup honey
1/2 cup cider vinegar
1/4 cup Dijon mustard
1 tablespoon butter
2 teaspoons chili powder
1/2 teaspoon apple pie spice

Steps:

  • Place ham on a rack in a shallow roasting pan.
  • Score the surface of the ham, making diamond shapes 1/2 inch deep.
  • Cover and bake at 325 for 2 hours.
  • Meanwhile, in a saucepan, combine the cider, honey, vinegar, and mustard and bring to a boil.
  • Reduce heat, simmer uncovered for 15 minutes, stirring frequently.
  • Stir in the butter, chili powder, and apple pie spice.
  • Set aside 1 cup for serving.
  • Cook the remaining sauce until thickened and spoon over ham.
  • Bake, uncovered 30 to 35 minutes longer or until a meat thermometer reads 140.
  • Warm reserved sauce and serve with ham.

1 TBSP GARLIC POWDER
TANGY HONEY GLAZE
1 1/4 CUP BROWN SUGAR PACKED
1/3 CUP CRUSHED PINEAPPLE JUICE ( RAN THROUGH A FOOD PROCESSOR TO BREAK UP CHUNKS )
1 CUP HONEY
2 TBSP DIJON MUSTARD
1 TSP GROUND CLOVES

Steps:

  • PREPARE CURE , POUR ALL INGREDIENTS INTO A LARGE FOOD GRADE PLASTIC CONTAINER EXCEPT PINEAPPLE AND MIX THOROUGHLY,,,LET STAND AND REMOVE FOAM, DISCARD. RUN THE CHUNKS OF PINEAPPLE AND JUICE THROUGH A FOOD PROCESSOR FOR 30 SECONDS, REMOVE FOAM FROM THE TOP OF THE CURE, ADD IN PINEAPPLE AND MIX LET STAND AND PREPARE MEAT REMOVE EXCESSIVE FAT FROM SHOULDER AND RINSE LET DRIP DRY, THEN PLACE INTO A 2 /12 GALLON TUPPERWARE TYPE CONTAINER. REMOVE ANY FOAM THAT MAY HAVE BUILT UP ON CURE.. A THIN LAYER IS OK.. THEN POUR OVER MEAT, PLACE LID ON CONTAINER AND INTO FRIDGE. TURN ONCE A DAY FOR 6 TO 7 DAYS, REMOVE AND RINSE THE MEAT,, LET STAND AND COME UP TO ROOM TEMPERATURE AS YOU PREPARE YOUR SMOKER SMOKE AT 225 F WITH APPLE OR MAPLE WOOD FOR 4 HOURS, CONTINUE TO SMOKE TILL AN I.T OF 140-145 F NOW START PREPARING THE GLAZE IN A SMALL 2 QT SLOW COOKER. Cider-Baked Ham With Brown Sugar & Honey Glaze image

This is super easy, yet so impressive. It is the ONLY way to make a baked ham (or, at least that's what I've decided). I have yet to make this and not be asked for the recipe. Try it for your next holiday!

1 (12 -14 lb) fully cooked bone-in ham
2 cups apple cider or 2 cups apple juice
1 cinnamon stick
1 teaspoon whole cloves
1/2 teaspoon ground allspice
whole cloves (to garnish) (optional)
1/2 cup brown sugar
1/2 cup honey

Steps:

  • Preheat oven to slow (325 degrees). Place ham, fat-side up, in a shallow roasting pan.
  • Combine apple cider, cinnamon, cloves and allspice in a small saucepan. Heat to boiling. Cover and simmer 5 minutes. Pour over ham.
  • Bake ham in preheated slow oven, basting every 30 minutes with cider sauce from pan, for about 3 hours.
  • Remove ham from oven. Increase oven temperature to hot (400 degrees). Score diagonal lines in fat with tip of knife to form diamond shapes, being careful not to cut into meat. Stud each diamond with whole clove, if you wish.
  • Combine brown sugar and honey in a small saucepan. Heat over low heat, stirring, until sugar is melted. Brush over top of ham.
  • Return ham to hot oven. Bake 30 minutes longer, brushing the ham every 10 minutes with the remaining honey mixture, until brown and glistening and an instant-read meat thermometer reads 160 degrees.
  • Remove ham from oven. Let stand 20 minutes before slicing.

This is an outstanding ham recipe and has become a family favorite! The ham can even be fully cooked, covered and refrigerated up to 2 days ahead of time, and you can prepare the glaze a day ahead also. Remember save the bone from the ham and freeze for pea soup! Purchase a butt-portion ham (water-added) that is wrapped in heavy plastic for this, the butt is the best! Cooking time is for the last stage of cooking the ham, prep time includes the first cooking of the ham and making the sauce.

1 (6 lb) bone-in ham (use a butt portion)
3 cups apple cider (use apple cider not 3 cups apple cider vinegar!)
2 cups dried apples, chunks (about 5 ounces)
3/4 cup brown sugar
6 tablespoons cider vinegar
3 tablespoons Dijon mustard

Steps:

  • Set oven to 325 degrees.
  • Place the ham in a roasting pan and bake until a thermometer reads 150F (about 15 minutes per pound).
  • Cool the ham completely (you can cover and refrigerate the cooked ham up to 2 days ahead).
  • In a saucepan bring the apple cider and dried apples to a boil over medium heat.
  • Boil until the liquid is reduced to about 1-1/2 cups (this should take about 8-10 minutes).
  • In a small bowl, whisk together the brown sugar, cider vinegar and mustard until well blended.
  • Add to the cider mixture; simmer sauce until reduced to about 2-1/4 cups, stirring occasionally (this shoud take about 5-6 minutes) the sauce can be prepared a day in advance and refrigerated.
  • Set oven to 375 degrees.
  • Cut 1/2-inch slices from the bone, and place into a glass baking dish.
  • Spoon the sauce over the slices.
  • Bake in the oven until heated through and the sauce bubbles (about 25-30 minutes).
  • Transfer to a platter to serve.
  • DELICIOUS!
