Categories     main-dish

Time 3h30m

Yield 8 servings

Number Of Ingredients 16

3 1/2 cups all-purpose flour, plus more for dusting
1 tablespoon sugar
1 teaspoon fine salt
3 sticks unsalted butter, cubed (keep cold in the freezer)
1 tablespoon white or apple cider vinegar
4 tablespoons extra-virgin olive oil
1 large onion, thinly sliced
Kosher salt
4 large red-skinned potatoes (1 1/2 pounds), unpeeled
2 gala apples, unpeeled
2 sprigs fresh thyme, leaves stripped
Freshly ground black pepper
3 tablespoons breadcrumbs
5 ounces mortadella or ham, thinly sliced
10 ounces white cheddar cheese, shredded
Heavy cream, for brushing

Steps:

  • Make the crust: Pulse the flour, sugar and salt in a food processor. Add 1 stick butter and pulse until combined. Add the remaining 2 sticks butter and pulse three times, or until the mixture resembles coarse meal. Add the vinegar, then gradually add 1/3 cup ice water through the feed tube, pulsing four times, until evenly combined. Squeeze the dough between your fingers. If it doesn't hold its shape, add up to 2 tablespoons ice water and pulse two more times (the dough should still be crumbly). Turn out onto a clean surface and press into a ball; divide in half, wrap in plastic wrap and flatten into two 1-inch-thick rectangles. Refrigerate at least 1 hour or up to 2 days.
  • Make the filling: Heat 2 tablespoons olive oil in a skillet over medium heat. Add the onion and cook until slightly brown, 5 to 7 minutes; season with salt and let cool. Slice the potatoes and apples very thinly; toss in a bowl with the thyme, the remaining 2 tablespoons olive oil, and salt and pepper to taste.
  • Line an 8-inch square baking dish with foil, leaving a 1-inch overhang on all sides. On a floured surface, roll out one piece of dough into a 12-inch square, about 1/8-inch thick. Transfer to the prepared dish, tucking the dough into the edges and corners; do not trim the overhang. Sprinkle the breadcrumbs over the dough and add the onion. Lay the mortadella on top, then sprinkle with about one-third of the cheese. Layer half of the potatoes and apples on top in a single layer; Season with salt and pepper to taste, then sprinkle with another one-third of the cheese. Top with the remaining potatoes, apples; season again and finish with cheese.
  • Roll the remaining dough into a 12-inch square and place on top of the filling. Press the overhang of the two crusts together, then roll the dough under itself and pinch to make a 3/4-inch-high edge. Make slits in the top crust with a knife to allow steam to escape. Refrigerate 30 minutes. Meanwhile, preheat the oven to 425 degrees F.
  • Bake the pie until golden brown, about 30 minutes. Reduce the oven temperature to 400 degrees F, brush the crust with cream and continue baking until crisp, about 35 more minutes. Cool 25 minutes, then lift out of the pan and slice.

Yield 6 servings

Number Of Ingredients 11

Butter, for greasing the pie dish
5 medium Granny Smith apples, peeled, cored and quartered (about 2 1/2 pounds)
1 cup coarsely grated sharp white Cheddar (4 ounces)
2/3 cup dark brown sugar
2 tablespoons unsalted butter, cut into 1/2-inch pieces, at room temperature
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg

Unroll the second crust and place on top of the filling. Pinch the edge of the top crust and the edge of the bottom crust together to seal. Fold the double edge under and crimp, making a decorative edge. Brush the top of the pie with more of the egg white. Cut several slits in the top crust to allow steam to escape.

MILE-HIGH APPLE PIE

Mile-High Apple Pie image

If you've ever prayed for an apple pie recipe with a substantial, luscious, juicy apple filling, but without a flood of juice when you cut it, then this tall, majestic creation is for you. Potato starch keeps the filling inside the pie where it belongs, but without the chalky, pasty texture often caused by using flour. The juices here are thick and clear, without that thick, sticky 'supermarket' feel. They coat the apple slices lightly and beautifully with no soupiness.

APPLE PARMESAN PIE

Apple Parmesan Pie image

Provided by Giada De Laurentiis

Categories     dessert

Time 5h15m

Yield 8 to 10 servings

Number Of Ingredients 13

2 cups all-purpose flour
1 teaspoon kosher salt
14 tablespoons unsalted butter, cubed and chilled
1 cup freshly grated Parmesan cheese
1/2 cup ice water
2 pounds apples, such as Granny Smith, peeled, cored and cut into 1/3-inch wedges
1/4 cup sugar
1 tablespoon freshly squeezed lemon juice
1 tablespoon all-purpose flour
1/2 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1 large egg, beaten
2 tablespoons freshly grated Parmesan cheese

Steps:

  • Chill the bowl and blade of a food processor for 1 hour before starting.
  • For the dough: To the food processor, add the flour and salt and pulse to combine. Add the cold butter and the cheese and pulse 3 or 4 times or until chickpea-sized pieces of butter remain. With the machine running, drizzle in the ice water until the dough just starts to come together. Turn the dough out onto a piece of plastic wrap and form into a flat disk. Wrap tightly and refrigerate for at least an hour and up to 2 days.
  • Position an oven rack on the lower third of the oven. Preheat the oven to 400 degrees F.
  • For the filling: In a medium bowl, combine the apples, sugar, lemon juice, flour, salt and cinnamon. Toss well to coat evenly.
  • Divide the dough in half. Roll out one of the dough pieces to an approximately 11-inch round and line the bottom of a 9-inch pie plate. Fill the pie crust with the apple mixture. Roll out the remaining dough into another 11-inch round and place on top. Trim the edges so there is a 1/2-inch overhang around the plate. Tuck the overhang under itself and press down to seal the edge. Using 2 knuckles and the tip of your finger, crimp the edges to make a decorative edge. Cut an X in the center of the top pie crust and open the corners to make a small hole in the center of the pie. Brush the pie evenly with the egg and sprinkle with the Parmesan cheese.
  • Place on a rimmed baking sheet and bake until the crust is deep golden brown and the mixture inside is bubbling, about 45 minutes. Remove to a wire rack and cool for at least 2 hours before serving.

CHEESY APPLE SKILLET PIE

Cheesy Apple Skillet Pie image

An all-American classic gets upgraded with a fun twist: This unique streusel topping is the perfect balance between sweet and salty!

Provided by Trisha Yearwood

Categories     dessert

Time 2h20m

Yield 8 servings

Number Of Ingredients 18

2 tablespoons unsalted butter
8 Granny Smith apples, peeled, cored and thinly sliced
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup packed light brown sugar
1/2 cup shredded white Cheddar
2 tablespoons cornstarch
1/2 teaspoon kosher salt
One 9-inch prepared pie dough
3 1/2 cups cheese crackers
1/2 cup packed light brown sugar
1/2 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, melted
1 lemon
6 large fresh sage leaves
1 cup heavy whipping cream
2 tablespoons maple syrup
1 teaspoon kosher salt

Steps:

  • For the pie: Place a baking sheet in the oven and preheat the oven to 350 degrees F.
  • Warm a medium saute pan over medium heat and melt the butter. Add the apple slices, cinnamon and nutmeg and cook until slightly softened, about 4 minutes. Pour apples into a large bowl and cool in the fridge, about 5 minutes.
  • For the streusel topping: Meanwhile, fill a gallon resealable plastic bag with the cheese crackers and use a rolling pin to crush into small crumbs, but not a fine powder. Add to a medium bowl with the light brown sugar and salt and stir to combined. Stir melted butter into the mixture, tossing to bind your streusel, and set aside for pie assembly.
  • Back to the pie: Remove the apples from the fridge and stir in the light brown sugar, Cheddar, cornstarch and salt.
  • Fit the pie dough into a 10-inch cast-iron skillet. Gently press the dough against the sides of the skillet to form the bottom crust of the pie. (The crust will not reach the top edge of skillet and this is just fine.) Pour the apples into the skillet. Generously sprinkle the streusel on top of the apples and spread in an even layer.
  • Bake the pie on the preheated baking sheet until golden brown and bubbly, 45 to 50 minutes. Allow the pie to cool about 45 minutes before serving.
  • For the lemon maple sage whipped cream: Meanwhile, zest the entire lemon into a medium bowl. Gather sage leaves together in a tight bundle and grate the bundle into the bowl with the zest (it's okay if a few larger pieces fall in). Add the heavy cream, maple syrup and salt and stir together until combined. Strain mixture through a fine-mesh sieve into the bowl of a stand mixer fitted with the whisk attachment. Use a rubber spatula to press on the lemon and sage mixture in the sieve, to get out all the possible flavor. Beat the cream until it holds medium peaks and serve a dollop on each pie slice.

Valuable Tips for Making Apple Cheese Potato Pie Recipes

Apple cheese potato pie is a delicious dessert that is perfect for fall and winter seasons. The pie is a combination of sweet and savory flavors that melt in your mouth. This pie is easy to make with a little bit of patience, couple of ingredients and few tips that can be followed. Below are some valuable tips for making the perfect apple cheese potato pie.
Tip 1: Choose the Right Apples
The type of apples you use for your apple cheese potato pie is crucial to its success. Apples that are too sweet or too soft will make the pie soggy. Look for a combination of tart and crisp apples such as Honeycrisp, Granny Smith, or Fuji apples. Apples that are too tart could be too overwhelming so balancing the right combination of apples is important.

Tart Apples

  • Honeycrisp
  • Granny Smith
  • Jonathan

Crisp Apples

  • Fuji
  • Stayman
  • Pink Lady
Tip 2: Pre-Cook the Potatoes
Raw potatoes can take longer to cook and could lead to a soggy pie crust. Pre-cooking the potatoes before placing them in the pie will avoid such problems. Boil the potatoes for 8-10 minutes until they are fork-tender, let them cool off, and then dice them into bite-size pieces.
Tip 3: Let the Cheeses Spread Out
Cheese is an essential ingredient to an apple cheese potato pie. To get the best flavor, let the cheese settle out on the bottom of the pie crust. When placed in the oven, the cheese melts and spreads through the pie.
Tip 4: Add Some Spice to the Apples
A pinch of cinnamon, nutmeg, or ginger can add a subtle pop of flavor to your apple cheese potato pie. A hint of spice can help balance out the sweetness of the apples and excites your taste buds. A touch of salt can also emphasize the other flavors.
Tip 5: Avoid Overfilling the Pie
Overfilling the pie can cause the filling to spill out over the sides and cause a mess in your oven. The pie crust may also become soggy if you have too much filling in the pie. To avoid these mishaps, leave some space at the top and sides of the crust.
Tip 6: Brush the Crust with Egg Wash
Brushing the crust of the apple cheese potato pie with an egg wash can give it a beautiful golden brown color. It also helps the crust to crisp up and prevent it from becoming soggy. To make an egg wash, beat an egg yolk with a tablespoon of milk and brush it on top of the crust before placing it in the oven.
Tip 7: Let the Pie Cool Before Serving
The pie needs to cool off and rest for at least 30 minutes before serving. Cutting into the pie too soon can cause it to fall apart and ruin the presentation. Letting the pie cool also allows the filling to set, making it easier to slice and serve.
Tip 8: Store Leftovers Correctly
Leftover apple cheese potato pie can be stored in the fridge for up to 3 days. Cover the pie tightly with plastic wrap or aluminum foil before placing it in the fridge. It is best to reheat the pie in the oven or microwave for a few minutes to make it the filling smooth again. However, make sure not to overheat as it may cause the pie to become chewy and not average in quality.
Conclusion
Making an apple cheese potato pie is a great way to combine sweet and savory flavors. With these valuable tips, you can create a delicious dessert that is perfect for entertaining guests or just for indulging in yourself. Remember to choose the right apples, pre-cook the potatoes, let cheeses spread out, add some spice to the apples, avoid overfilling the pie, brush the crust with egg wash, let the pie cool before serving, and store leftovers correctly. Happy baking!
