GREEN APPLE AND CELERY SALAD WITH WALNUT AND MUSTARD VINAIGRETTE

Green Apple and Celery Salad With Walnut and Mustard Vinaigrette image

This was a very crisp refreshing salad - I found it to be a perfect foil to the traditional heavy Thanksgiving spread. And it was so simple to make! I did all the prep ahead of time, and simply tossed the celery and apple peices into cold water with some lemon juice to prevent browning. I would definately put this on the menu for next year. 2 tablespoons soy sauce
6 limes
Extra-virgin olive oil, for drizzling
Four 6-ounce wild-caught, skinless center-cut salmon fillets
Kosher salt and freshly ground black pepper
2 pounds celery root
4 cups whole milk
4 ounces (1 stick) unsalted butter

CELERY, SUNCHOKE, AND GREEN APPLE SALAD WITH WALNUTS AND MUSTARD VINAIGRETTE

Celery, Sunchoke, and Green Apple Salad with Walnuts and Mustard Vinaigrette image

Peter Berley, author of "The Flexitarian Table," created this healthier version of a traditional family favorite. "The apple is tart; the celery has a saline minerality; and the sunchokes provide earthiness. Treble, alto, and bass. Walnuts add the sweetness and fat, which really ties the salad together."

Provided by Martha Stewart

Categories     Food & Cooking     Salad Recipes

Number Of Ingredients 11

1/2 cup walnuts, roughly chopped
4 large celery stalks, peeled and thinly sliced, and 1/4 cup leaves chopped
1 head fennel, trimmed and thinly sliced lengthwise, fronds reserved

2 tablespoons plus 1 teaspoon Dijon-style mustard
1 garlic clove, grated through a fine grater or minced
2 teaspoons honey
Kosher salt and freshly ground black pepper
6 tablespoons extra-virgin olive oil

Steps:

  • Toast walnuts in a skillet over medium heat until fragrant, 3 to 4 minutes. (Be careful not to burn.) Transfer nuts to a sieve and cool, then rub off and discard bitter skins.
  • Place sliced celery, fennel, sunchoke, and apple in a bowl of cold water. Stir in 1 tablespoon lemon juice and refrigerate.
  • In a small bowl, combine remaining lemon juice, mustard, garlic, honey, and salt. Whisk in oil and season with pepper.
  • Drain chilled celery, fennel, and sunchokes and dry in a salad spinner or blot with a paper towel. Combine celery, fennel, sunchokes, celery leaves, walnuts, and apples. Toss with dressing before serving. Garnish with fennel fronds.

PORK CHOP WITH APPLE AND CELERY ROOT SALAD

Pork Chop with Apple and Celery Root Salad image

For this pork chop recipe, the target temperature for the meat might be lower than what you're used to. That's because we believe that when you invest in delicious, humanely raised pork, you deserve to enjoy it at a juicy, tender medium-rare.

Provided by Claire Saffitz

Categories     Bon Appétit     Pork     Pork Chop     Apple     Fall     Winter     Dinner     Lettuce     Salad     Almond     Wheat/Gluten-Free

Yield 4 servings

Number Of Ingredients 21

Pork chop:
1 double-cut pork chop (1 1/2-2 pounds)
1 tablespoon Diamond Crystal or 1 1/2 teaspoons Morton kosher salt
1 teaspoon freshly ground black pepper
1/2 teaspoon sugar
2 tablespoons olive oil
Salad and assembly:
1 large egg yolk
1 garlic clove, finely grated
1/4 cup red wine vinegar
1 tablespoon Dijon or horseradish mustard
1 teaspoon honey
1/2 cup olive oil, plus more for drizzling
Kosher salt, freshly ground pepper
8 cups torn red leaf lettuce (from about 1 head)
4 cups torn frisée (from about 1 head)
1/2 small celery root (celeriac), peeled, cut into matchsticks (about 2 cups)
1 apple, cut into matchsticks
2 ounces Pecorino, shaved
1/2 cup chopped smoked almonds
Flaky sea salt

Steps:

  • Pork chop:
  • Pat pork chop dry with paper towels. Mix salt, pepper, and sugar in a small bowl; sprinkle all over pork. Place pork on a wire rack set inside a rimmed baking sheet so it's resting on its side with bone sticking upright and chill, uncovered, at least 8 hours and up to 1 day.
  • Let pork chop sit at room temperature at least 1 hour for even roasting.
  • Preheat oven to 300°F. Heat a large skillet, preferably cast iron, over medium-high. Rub chop all over with oil and carefully place in skillet; reserve rack and baking sheet. Cook chop, turning every minute or so, until deeply browned on both sides, 5-8 minutes. Turn on its side and sear edges and fat cap until browned, about 3 minutes total. Transfer back to rack, place in oven, and roast until a thermometer inserted into the center of chop about 1" from bone registers 130°F, 25-35 minutes (use a probe thermometer if you've got one, or use an instant-read thermometer and check every few minutes after pork has been roasting 20 minutes). Transfer pork to a cutting board; let rest 15-20 minutes.
  • Salad and assembly:
  • While the pork is resting, whisk egg yolk, garlic, vinegar, mustard, and honey in a medium bowl. Gradually add 1/2 cup oil, whisking until dressing is emulsified (it should be the consistency of heavy cream). Season with kosher salt and pepper.
  • Toss lettuce, frisée, celery root, apple, Pecorino, and almonds in a large bowl; season with kosher salt and pepper. Add about three-quarters of dressing and toss to coat; add more dressing to taste and season with more kosher salt and pepper.
  • Use a thin-bladed knife to cut pork chop away from rib bone, then cut between bones to separate into 2 ribs (or don't, and greedily eat both bones in the kitchen before serving others, because you're the cook and you deserve it). Slice chop 1/2" thick, drizzle with oil, and sprinkle with sea salt. Serve with salad.

Apple celery salad is a refreshing and healthy dish that can be served as a side or enjoyed as a main course. This salad features a combination of crisp apples and crunchy celery, which are both packed with essential nutrients and vitamins. In this article, we will explore the many benefits of apple celery salad and share some delicious recipe ideas to inspire your next kitchen creation.

The Health Benefits of Apple Celery Salad

Apple celery salad offers numerous health benefits thanks to its nutritious ingredients. Apples are a low-calorie fruit that contains fiber, vitamin C, and antioxidants that can help lower the risk of chronic diseases. Meanwhile, celery is rich in vitamin K, potassium, and folate, which can support healthy digestion, lower blood pressure, and reduce inflammation. Together, these ingredients form a powerhouse salad that can promote overall wellness.
Low-Calorie Option
One of the key benefits of apple celery salad is that it is a low-calorie dish that can help you manage your weight. Apples and celery are both high in water and fiber, which can help you feel full and satisfied while reducing your overall caloric intake. This makes apple celery salad an excellent addition to any weight loss or maintenance plan.
Heart-Healthy Ingredients
Another benefit of apple celery salad is that it contains heart-healthy ingredients. Apples contain pectin, a soluble fiber that can help lower cholesterol levels and reduce inflammation, while celery has been shown to help lower blood pressure due to its high potassium content. Eating more fruits and vegetables like apples and celery may also help reduce the risk of heart disease.
Good for Digestion
Apple celery salad can also support digestive health due to its high fiber and water content. Fiber helps to promote bowel regularity and prevent constipation, while water helps to flush out toxins and waste products from the body. Additionally, some research suggests that celery may have anti-inflammatory properties that can help reduce symptoms of digestive disorders like irritable bowel syndrome (IBS) and Crohn's disease.

Ingredients

The ingredients you choose for your apple celery salad recipe can make or break the dish. Choosing fresh and high-quality ingredients is essential for a delicious salad. Here are some ingredients you should consider using in your apple celery salad recipe:
Apples
Apples are the star ingredient of apple celery salad recipes. Choose apples that are firm, juicy, and sweet. Red apples like Gala, Honeycrisp, and Braeburn are great options as they add both sweetness and color to the salad. You can also use green apples like Granny Smith, which are tart and add a contrasting flavor to the salad.
Celery
Celery adds a crunch to the salad and complements the sweetness of the apples. Look for celery that is fresh and crisp. The leaves of the celery are also edible and can be added to the salad to enhance the flavor.
Nuts
Nuts like walnuts, almonds, and pecans add a crunchy texture to the salad and are a great source of healthy fats. Toast these nuts to bring out their natural oils and flavors.
Cheese
Cheese like feta, blue cheese, and goat cheese add creaminess and tanginess to the salad. Use cheese in moderation as it can be high in calories and fat.
Dressing
A good dressing is essential to bring all the flavors of the salad together. A simple vinaigrette made with olive oil, lemon juice, and honey is a great option as it complements the sweetness of the apples and adds a tangy flavor to the salad.

Preparation

Once you have selected the ingredients for your apple celery salad recipe, it's time to prepare them. Here are some tips to keep in mind when preparing your salad:
Cut the Apples and Celery into Small Pieces
Cutting the apples and celery into small, bite-sized pieces makes it easier to eat and provides a consistent texture throughout the salad.
Toasting Nuts
Toasting nuts before adding them to the salad brings out their natural flavor and oils. Place the nuts on a baking sheet and toast them in the oven for a few minutes, or until they are golden brown and fragrant.
Adding the Dressing
Add the dressing to the salad just before serving to prevent the salad from becoming soggy. Start with a small amount of dressing and add more as needed. Toss the salad gently to distribute the dressing evenly.

Presentation

The presentation of your salad is just as important as the taste. Here are some tips to keep in mind when presenting your apple celery salad:
Use a Large Bowl
Use a large bowl to toss the salad and to present it. This allows for easy mixing of the ingredients and prevents the salad from spilling over the edges.
Garnish
Garnish the salad with additional ingredients like cheese, nuts, or herbs to add a pop of color and flavor. This also makes the salad look more appetizing and enticing.
Chill the Salad
Chilling the salad for 10-15 minutes before serving allows the flavors to meld together and creates a refreshing dish.
