APPLE BURRITOS
This is very easy and surprisingly delicious. Serve warm, as is or add a scoop of vanilla ice cream on top. Yummy!!

Steps:
- Preheat oven to 350 degrees.
- Using a 9X13 inch cake pan, lightly grease or spray with nonstick cooking spray.
- Spread approximately 1/4 cup of pie filling on each tortilla and roll up the same as enchiladas.
- Lay each side by side in pan.
- In medium saucepan, combine water, sugar, margarine, nutmeg, cinnamon and vanilla.
- Heat over med to high heat until margarine is melted and sugar is dissolved.
- Pour this sauce over the burritos.
- Bake 30 minutes; remove from oven and push burritos down into sauce; cover with foil and bake 15 more minutes.

This is a great, easy recipe that can be served for breakfast or for dessert with a scoop of ice cream.

Steps:
- 1. Mix apples and sugar in a saucepan. Add water to cover. Simmer until tender.
- 2. Blend corn starch, 2 Tbsp water, and spices in a small bowl.
- 3. Stir into apples. Cook until thickened, stirring constantly. If using apple pie filling, just heat in pot on top of stove until warm.
- 4. Soften tortillas 1 at a time in butter in skillet for several seconds on each side.
- 5. Spoon 1/4 cup apples on each.
- 6. Roll to enclose filling.
- 7. Place seam side down on ovenproof serving plate or baking pan. Sprinkle with cinnamon sugar.
- 8. Broil until light brown. Serve with sour cream, yogurt, or a scoop of ice cream when serving for dessert.
CARAMEL APPLE BURRITOS

- Place apple slices in a saucepan; cover and cook over medium heat for 3-4 minutes or until tender. Reduce heat. Add caramels; cook and stir until caramels are melted. Spoon apple mixture off center on each tortilla; fold sides and ends over filling and roll up.

I got this recipe from my son-in-laws mother. She is Hispanic and makes all kinds of wonderful meals. This is so good, I've actually have had it for breakfast!! Now, if I could just make her rice and beans the way she does, I'd be golden,lol.

Steps:
- Heat oven to 350. Spray a baking dish lightly w/ cooking spray. Spoon 1/3 cup pie filling onto each tortilla and rool up. Place, seam-side down in baking dish.
- In saucepan, combine apple cider, sugar and butter. Bring to a boil, stirring often. reserve 1/2 cup sauce. Pour remaining sauce over tortillas.
- Bake tortillas, covered, for 30 mins. Uncover and bake for 20 mins, or until tortillas are lightly browne. Serve w/ reserved sauce. I also serve w/ a little dollop of whipped cream.
CINNAMON APPLE BURRITOS
Steps:
- 1) Peel, core, and quarter the apples. Cut quarters crosswise into thin slices and combine with orange and lemon juices in a medium saucepan. With pan partially covered, bring to a boil. Reduce heat slightly and cook at a gentle boil 5 minutes. 2) Stir in brown sugar, cinnamon, and cloves and continue cooking uncovered, stirring occasionally, for 2 to 3 minutes. 3) Blend cornstarch and water in small bowl and pour into apple mixture. Bring mixture back to a boil, stirring continuously. Let filling cook for 1 minute then remove from heat and stir in nuts. Transfer to a bowl to cool. 4) Heat oven to 375. Line a medium sized baking sheet with parchment paper or lightly greased foil. 5) Working with 1 tortilla at a time, spoon a quarter of the apple filling down the center, leaving a generous 1" border at each end. Fold the ends over the filling, then fold over one of the sides to enclose the filling. Moisten the other edge of the tortilla with a pastry brush dipped in water, then continue to fold the tortilla so it rests on the moistened section. Place on baking sheet, seam down. 6) Brush each tortilla generously with melted butter, then sprinke with sugar. Bake 20-25 minutes until a rich golden brown. Transfer to a wire rack to cool for at least 20 minutes before serving. Cut diagonally in halves to serve.
