APPLE BREAD PUDDING (PAMPERED CHEF)

Apple Bread Pudding (Pampered Chef) image

Years ago my little sis was a consultant for Pampered Chef and she made this for a party. I copied this down on a recipe card (very faded now) and long ago gave away the booklet this came from. This is incredibly easy and oh so very good. I like to serve this warm with a vanilla custard sauce or Poor Man's Sauce.

Cinnamon Apple Bread Pudding image

This recipe comes from the Honolulu Advertiser & is about 15 years old. The apple cinnamon mixture is very rich & yummy. Sweet bread is readily available in Hawaii, but I bet the pudding would come out fine with regular white bread too.

Bread pudding is a classic dessert that is always a crowd-pleaser, and when you add apples into the mix, it becomes even more delicious. Apple bread pudding is a perfect dessert for any occasion, and it's easy to make with the right ingredients and techniques. Whether you're a beginner or an experienced cook, there are some valuable tips that can help you make an excellent apple bread pudding recipe from Pampered Chef. Here are some of the best tips to ensure your apple bread pudding turns out just right.

Tip #1: Choose the Right Bread

The bread you use for your apple bread pudding recipe will make a significant difference in the final outcome. For a classic bread pudding texture, use a day-old French, Italian, or sourdough bread. These types of bread have a good texture and will absorb the custard mixture perfectly without turning into mush. Avoid using bread that's too soft or has a lot of sugar, like brioche or challah, or you'll end up with a soggy, sweet mess.
Tip #1.1: Cut the Bread into Cubes
To make sure the bread absorbs the custard mixture evenly, cut it into cubes that are about an inch in size. This will also give your bread pudding a more manageable texture that won't fall apart when you serve it.
Tip #1.2: Toast the Bread
If you're using fresh bread instead of day-old bread, you can still use it for your apple bread pudding recipe. However, to ensure that the bread doesn't turn into a mushy mess, you'll need to toast it lightly before using it. Spread out the bread cubes on a baking sheet and bake them at 350°F for about 10-15 minutes, or until they're lightly golden and crisp.

Tip #2: Choose the Right Apples

The type of apples you use for your apple bread pudding will affect its flavor and moisture level. Generally, you'll want to choose apples that are tart and firm, rather than sweet and mushy. Granny Smith, Honeycrisp, or Braeburn apples are good choices because they have a good balance of sweetness and tartness, and they hold their shape well when cooked. Avoid using Red Delicious or Gala apples, which are too sweet and will break down quickly during cooking.
Tip #2.1: Peel and Cut the Apples Evenly
To ensure that your apple bread pudding cooks evenly, peel the apples and cut them into small pieces that are approximately the same size. If the pieces are too big, they may not cook properly and will be hard to eat. If they're too small, they may turn to mush and spoil the pudding's texture.
Tip #2.2: Add Spices to the Apples
To enhance the flavor of your apple bread pudding, consider adding some spices to the apples. Cinnamon, nutmeg, and allspice are excellent choices because they complement the flavor of the apples and add warmth and depth to the dish. You can also add a pinch of ginger, cloves, or cardamom for a more complex flavor profile.

Tip #3: Make the Custard Mixture Properly

The custard mixture is the heart of any bread pudding recipe. To make sure your apple bread pudding turns out perfect, you'll need to create a custard mixture that's rich, creamy, and flavorful. Here's what you need to do:
Tip #3.1: Use the Right Ratios
The custard mixture should have the right ratios of eggs, milk, cream, sugar, and spices. Most bread pudding recipes call for 2-3 eggs, 2 cups of milk, 1 cup of cream, 3/4-1 cup of sugar, and 1-2 teaspoons of spices. However, depending on the size of your pan, you may need to adjust the ratios accordingly.
Tip #3.2: Whisk the Eggs and Sugar First
Before you add the milk, cream, and spices, whisk the eggs and sugar together until they're well combined. This will create a smooth, homogeneous mixture that will distribute evenly throughout the pudding.
Tip #3.3: Add the Milk and Cream Gradually
Once the eggs and sugar are combined, add the milk and cream gradually, whisking the mixture constantly as you go. This will prevent the eggs from clumping and ensure that the custard is smooth and creamy.
Tip #3.4: Add Vanilla and Spices to the Mixture
Finally, add vanilla extract, cinnamon, nutmeg, allspice or any other spices you are using to the mixture, and whisk everything together until fully combined. The spiciness level is a matter of personal preference, so add as much or as little as you wish.

Tip #4: Soak the Bread in the Custard Mixture

To make sure the custard mixture is fully absorbed by the bread, you'll need to soak the bread cubes in the mixture for at least 30 minutes before baking. The longer you soak the bread, the softer and creamier your bread pudding will be. Once the bread has soaked, you can add the apples and mix everything together before baking.
Tip #4.1: Use a Mixer to Combine the Bread and Custard
To ensure that the bread and custard are combined evenly, use a mixer or a spoon to gently stir everything together. This will prevent the bread from clumping or sticking together and will also make sure that the custard is distributed evenly throughout the pudding.
Tip #4.2: Allow the Pudding to Rest After Baking
Once your apple bread pudding is baked, allow it to rest for 10-15 minutes before serving. This will let the pudding set up properly and become more manageable to serve.

Tip #5: Serve the Pudding with Whipped Cream or Ice Cream

To enhance the flavor of your apple bread pudding, consider serving it with whipped cream or a scoop of vanilla ice cream. Those toppings will complement the sweetness and spices of the pudding and make it more pleasing to the palate. Drizzle caramel or chocolate sauce on top to delight your guests even further.
Tip #5.1: Add a Dollop of Cinnamon Whipped Cream
To make your whipped cream more festive and flavorful, add a dash of cinnamon to the mixture before you whip it. This will give the cream a hint of spice that will work well with the apple bread pudding's flavor.
Tip #5.2: Use High-Quality Ice Cream
If you're serving your apple bread pudding with ice cream, make sure it's high quality and compliments the pudding's flavor. Vanilla, cinnamon, or caramel ice cream would all work well with this recipe. Make sure the ice cream is firm enough to stay on top of the pudding but soft enough to scoop easily.
