- Preheat oven to 350F degrees. Grease a 1/3-cup muffin pan or line with paper cups .
- In a bowl combine bananas, milk, oil, sugar, vanilla and egg. In another bowl whisk together dry ingredients - flours, oats, cinnamon and baking powder. Add dry mixture to wet mixture, mix well. Dust apples, raisins, and walnuts (if using) lightly to cover with flour, then fold inches.
- Spoon the mixture evenly into muffin cups. Bake for 20-25 minutes or until tester comes out clean.
- Make sure you remove muffins immediately after they are done. Let them cool on a wire rack.

Just trying something different. Hope it turns out well. After making this, I believe it would be better to just make one loaf as two were not very big. I changed the directions to accommodate this. If you think you have too much batter for one loaf, make a couple of muffins with the excess.

- 1. Preheat oven to 350 degrees. Grease and flour and 9 x 13 pan. Set aside. Pour boiling water over oats in a bowl. Leave sit for 20 minutes.
- 2. In a large bowl, beat butter with sugar and brown sugar until light and fluffy. Add oats, buttermilk and smashed banana. Blend well. Add eggs and vanilla. Beat to incorporate.
- 3. Sift flour with baking soda, salt, nutmeg and cinnamon. Add to the batter and stir just until dry ingredients are no longer visible. Stir in apples.
- 4. Spread batter into prepared pan. Bake for 35 to 45 minutes, or until a pick comes out clean.
- 5. Remove cake from oven. Cool completely in pan.
- 6. While cake cools, make frosting. Beat cream cheese with butter until smooth and creamy. Add milk, vanilla and powdered sugar. Beat until frosting is smooth and spreadable. Frost cake and enjoy! I frost as I serve.
