I haven't tried these yet, but they look delicious and healthy! The recipe comes from the Keystone Inn in Gettysburg, Pennsylvania.

- Beat egg; stir in remaining ingredients, mixing just to moisten.
- Pour into 12 greased or paper-lined muffin cups until 3/4 full.
- Bake at 400° for 15 to 20 minutes.
- Serve cool or piping hot with butter.
APPLE RAISIN MUFFINS
This is another recipe I got from my girl Paula Deen. My son LOVES these muffins and they freeze great so I can always have them available to pull out for a mid afternoon snack for him. I am completely anti-raisin, but he loves them so that's all that matters. Next time I will make half a batch for me and leave out the raisins, b/c they smell heavenly.

- Preheat the oven to 350 degrees F.
- Combine the water, sugar, apples, raisins, butter, cinnamon, nutmeg, and cloves in a saucepan; bring to a boil. Remove the pan from the heat and cool completely.
- In a large bowl, stir the nuts and baking soda into the flour. Add the cooled mixture to the bowl, and stir until blended. Fill greased miniature muffin tins with batter to the top. Bake for 15 minutes.

- In a bowl, combine the flour, sugar, baking powder, cinnamon and salt. Combine the egg, milk and oil; stir into dry ingredients just until moistened. Fold in the apple and raisins. , Coat muffin cups with cooking spray or use paper liners; fill two-thirds full with batter. For topping, in a bowl, combine the flour, oats, brown sugar and cinnamon; cut in butter until crumbly. Sprinkle over batter. Bake at 375° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

- Preheat oven 200°C and line muffin pan with paper cases or grease them.
- Combine apples, sugar, oil, eggs, vanilla and orange peel, mix well.
- Add raisins and nuts.
- Combine flours, baking powder, baking soda and spice.
- Add dry ingredients to the apple batter and mix just until combined, do not overmix.

- In a large mixing bowl, combine the dry ingredients: flour, baking powder, baking soda, salt, and sugar. Mix well and set aside.
- In another bowl, whisk the wet ingredients: melted butter, eggs, and buttermilk until thoroughly combined.
- Add the wet ingredients to the dry mixture and stir until just combined. Don't overmix the batter.
- Add the diced apples, apricots, and golden raisins to the batter and gently fold them in.
- Using an ice cream scoop or spoon, scoop the batter into each muffin cup until it is 3/4 full.
- Bake for 20-25 minutes or until a toothpick comes out clean when inserted in the center.
- Remove from the oven and cool the muffins in the pan for 5 minutes before transferring them to a wire rack to cool completely.
