ENDIVE, APPLE AND WALNUT SALAD

Endive, Apple and Walnut Salad image

This classic French combination makes a great autumn and winter salad. Walnuts and apples are always a good mix, and their flavors contrast nicely with the bitter endive. Gruyère cheese has a nutty flavor and adds a bit of protein, as well.

This was a very crisp refreshing salad - I found it to be a perfect foil to the traditional heavy Thanksgiving spread. And it was so simple to make! I did all the prep ahead of time, and simply tossed the celery and apple peices into cold water with some lemon juice to prevent browning. I would definately put this on the menu for next year. Yield 6 servings

Number Of Ingredients 24

15 medium beets, trimmed; greens reserved
10 cups beef broth (see recipe)
1 1/2 teaspoons kosher salt, plus more to taste
Freshly ground pepper to taste
1 1/2 teaspoons fresh lemon juice
1 tablespoon olive oil
Beet greens (see above), stemmed and coarsely chopped
1/2 teaspoon kosher salt
Freshly ground pepper to taste
1 teaspoon fresh lemon juice
1 tablespoon olive oil
2 medium onions, peeled, halved and thinly sliced
1 large Granny Smith apple, peeled, cored and grated
1 1/2 teaspoons walnut oil
1 tablespoon fresh lemon juice
1/4 cup coarsely chopped Italian parsley
1/2 teaspoon kosher salt
Freshly ground pepper to taste
3 cups cilantro leaves
3/4 cup walnuts, toasted
1/2 cup olive oil
3/4 teaspoon kosher salt
1 1/2 teaspoons fresh lemon juice
Sour cream

Steps:

  • To make the soup, place beets and broth in a large pot. Bring to a boil. Reduce heat, cover and simmer until tender, about 1 hour. Drain, reserving broth. When cool enough to handle, slip skins off beets. Set aside 2 beets. Place half of the remaining beets in a food processor. Measure broth and add enough water, if necessary, to make 9 cups. Add half of broth to beets and puree until smooth. Repeat with remaining beets and broth. Combine batches and stir in salt and pepper. Reheat before serving and stir in lemon juice and more salt, if needed.
  • To make the beet greens, heat 1 1/2 teaspoons of olive oil in a large skillet over medium heat. Add the beet greens and saute for 10 minutes. Add 1/3 cup of water, cover and cook until tender, about 10 minutes more. Coarsely grate the reserved beets and stir into the greens with 1 1/2 teaspoons of oil, 1/2 teaspoon of salt, pepper and 1 teaspoon of lemon juice. Set aside.
  • Heat 1 tablespoon of oil in a medium nonstick skillet over medium heat. Add the onions and cook, stirring often, until caramelized, about 15 minutes. Stir in the apple, walnut oil, 1 tablespoon of lemon juice, parsley, 1/2 teaspoon of salt and pepper. Set aside.
  • Place the cilantro, walnuts and 1/2 cup of olive oil in a food processor and process until smooth. Add3/4 teaspoon of salt and 1 1/2 teaspoons of lemon juice.
  • Place the beet green mixture, the apple mixture, the pesto and the sour cream in separate bowls. Ladle the soup into bowls. Serve, passing the condiments separately.

Apple and walnut salad recipes are a type of salad that incorporates fresh apples and walnuts into a bed of greens. This type of salad is often served as a side dish or as a light meal on its own. The combination of sweet and tangy flavors with crunchy textures makes it a popular choice for many people who want a healthy and delicious option for their meals.

Ingredients

The ingredients for apple and walnut salad recipes vary, but here are some common ones:
Greens:
Most apple and walnut salad recipes start with a bed of greens. Some popular options include lettuce, spinach, arugula, and kale.
Apples:
Apples are a staple ingredient in these salads. They add sweetness and fiber to the dish. Most recipes call for diced or sliced apples, but some also use grated apples.
Walnuts:
Walnuts are used to add crunch and healthy fats to the salad. They are usually toasted to enhance their flavor.
Other ingredients:
Other ingredients that may be added to the salad include cheese, such as crumbled blue cheese or goat cheese, dried cranberries or raisins, sliced onions or shallots, and a variety of dressings like vinaigrette, honey mustard, or balsamic.

Preparation

Making apple and walnut salad recipes is fairly simple. Here are some general steps that most recipes follow:
Prepare the greens:
Wash and dry the greens thoroughly. Tear them into bite-sized pieces if desired and place them in a large bowl.
Prepare the apples and walnuts:
Wash the apples and slice or dice them into bite-sized pieces. Toast the walnuts in a dry pan or in the oven to bring out their flavor. Let them cool and then roughly chop them.
Add the other ingredients:
Add the apples, walnuts, and any other ingredients you are using. Toss the ingredients well to distribute them evenly.
Dress the salad:
Drizzle your preferred dressing over the salad and mix well. If desired, you can leave the dressing on the side and let people add it themselves.

Tips for Success

Here are some tips for making the perfect apple and walnut salad:
Use fresh ingredients:
Use fresh greens, ripe apples, and fresh walnuts. The freshness of the ingredients will make the salad more flavorful.
Don't overdress the salad:
Adding too much dressing can make the salad soggy and overpower the other flavors. Use just enough to lightly coat the greens and other ingredients.
Experiment with flavors:
Try different types of apples, nuts, and cheeses to see which combination you like best. You can also add different herbs and spices to the dressing to change the flavor profile.
Use a sturdy lettuce:
If you're using lettuce, choose a sturdy variety like romaine or butter lettuce so it holds up well to the weight of the other ingredients.
Chop ingredients evenly:
Chop the apples and walnuts into pieces that are similar in size to ensure an even distribution of flavors and textures.

When it comes to preparing salads, there are countless recipes available that offer a variety of flavors, textures, and nutritional values. Apple and walnut salad recipes are among the most popular, as they combine sweet and savory flavors with a crunchy texture that is both satisfying and nutrient-dense. Whether you are looking to add more fruits and vegetables to your diet, or simply need a refreshing and healthy dish for your next meal, apple and walnut salads are a great option. In this article, we will explore some valuable tips that can help you prepare the perfect apple and walnut salad.

Tip #1: Choose the Right Apples

Choosing the right apples is crucial for achieving the perfect balance of sweetness and tartness in your salad. There are numerous varieties of apples available in the market, each with its unique flavor and texture. Some of the most popular apple varieties for salads include Granny Smith, Honeycrisp, Pink Lady, and Gala. Granny Smith apples are known for their tartness, which makes them an excellent choice for balancing the sweetness of the other ingredients in the salad. Honeycrisp and Pink Lady apples are sweeter, with a crisp texture that adds a refreshing crunch to the salad. Gala apples are also a great option, providing a mild sweetness and softer texture.

Tip #2: Toast the Walnuts

Toasting the walnuts is an excellent way to enhance their flavor and texture. Toasted walnuts have a deeper and nuttier flavor, which pairs well with the sweetness of the apples and the tanginess of the dressing. To toast the walnuts, simply heat a dry skillet over medium heat, add the walnuts, and stir constantly for about 3-5 minutes, or until they are golden brown and fragrant. Be careful not to burn the walnuts, as this can give them a bitter taste.

Tip #3: Dressing Matters

The dressing is one of the most critical components of any salad, and apple and walnut salads are no exception. The right dressing can make or break the salad, so it's essential to choose one that complements the flavors and textures of the other ingredients. There are numerous dressing options available for apple and walnut salads, from vinaigrettes to creamy dressings. A simple vinaigrette made with olive oil, apple cider vinegar, Dijon mustard, honey, and salt and pepper is an excellent choice for apple and walnut salads. Alternatively, you can use a creamy dressing made with Greek yogurt, mayonnaise, honey, and lemon juice, which adds a tangy and slightly sweet flavor to the salad.

Tip #4: Mix Up the Greens

While most apple and walnut salads are made with a base of leafy greens like spinach or arugula, you can mix things up by using different types of greens. Kale, for example, is a nutrient-dense green that adds a slightly bitter taste to the salad, which complements the sweetness of the apples and the nuttiness of the walnuts. Other greens like Swiss chard, watercress, or beet greens can also be used to add more flavor and nutrition to the salad.

Tip #5: Add Some Protein

Adding protein to your apple and walnut salad can make it a more satisfying and complete meal. Grilled chicken, shrimp, or tofu are all excellent sources of protein that add flavor and texture to the salad. You can also add diced bacon, hard-boiled eggs, or sliced turkey for a more filling and flavorful salad.

Tip #6: Experiment with Additional Ingredients

While apples and walnuts are the stars of the show in an apple and walnut salad, there are numerous other ingredients that you can add to provide additional flavor and nutrition. Some excellent options include dried cranberries, feta cheese, blue cheese, goat cheese, sliced red onions, and shaved carrots. These ingredients add color, texture, and flavor to the salad, making it more interesting and appetizing.

Conclusion

In conclusion, preparing an apple and walnut salad is an excellent way to enjoy a healthy and delicious meal. Selecting the right ingredients, toasting the walnuts, choosing the right dressing, mixing up the greens, adding protein, and experimenting with additional ingredients are all valuable tips that can help you create the perfect apple and walnut salad. By following these tips and getting creative with your salads, you can enjoy a healthy and flavorful meal that is both satisfying and nutritious.
