APPLE AND PEAR CRUMBLE

Apple and Pear Crumble image

This great dessert is from The New Vegetarian Epicure. I've used it with several combinations of fruit - basically whatever I have on hand - and it's always been good. While the apple and pear combination is excellent, I've also had great results with mixed berries (strawberry, raspberry, blueberry, cherries). An easy dessert with ingredients you probably have on hand.

Categories     Dessert

Time 1h5m

Yield 8-10 serving(s)

Number Of Ingredients 15

4 -5 tart apples
4 -5 pears (if using other mixed fruits instead, just be sure to have about 4 lbs total)
3 tablespoons lemon juice
1/2 cup sugar
1/2 cup raisins
1 dash nutmeg
1 dash cinnamon (or any other spice you love!)
2/3 cup flour
3/4 cup brown sugar
1 pinch salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
5 tablespoons butter
2 tablespoons ice water
1 cup rolled oats

Steps:

  • Prepare fruit (peel, pit, whatever it takes). If large, cut into 1/4 thick slices.
  • Toss in a bowl with lemon juice, sugar and raisins and a bit of nutmeg and cinnamon (I usually add allspice because I love it).
  • Combine the flour, sugar, salt and spices.
  • Cut in the butter and mix till mixture resembles coarse cornmeal. There should be no big chunks of butter left. (I usually do this with my hands - don't have a food processor).
  • Sprinkle in the ice water, mix till the crumble mixture holds together and forms little clumps.
  • Add the rolled oats and mix. If the mixture seems sticky, add more oats.
  • Spread fruit evenly in a large glass or ceramic baking dish.
  • Scatter topping evenly over the fruit, leaving some of it in larger chunks and some in fine crumbles.
  • Bake the Crumble at 375 for about 40-45 minutes or until the top is crisp and brown and the juice is bubbling up around the edges.
  • Serve it hot or warm, with ice cream, whipped cream, or all by itself.

GLUTEN-FREE APPLE, PEAR AND CRANBERRY PECAN CRUMBLE

Gluten-Free Apple, Pear and Cranberry Pecan Crumble image

This has moved to the top of my favorite crumbles list. I have made apple crumbles before, but I hadn't cooked the apples first in my other recipes. It makes a huge difference in the sweetness and comfort level of the dish. The pear also contributes to the overall sweetness of the dessert and I love the tangy flavor of the dried cranberries. I have used a gluten-free mix of certified oats (produced in a gluten-free facility) and millet flour, which makes a crumble topping that is truly crumbly. Both tender apples like McIntosh, Gala, Macoun and Cortland, as well as firmer apples like Braeburns and Fujis work well in this dish

Time 1h

Yield 8 servings

Number Of Ingredients 17

1 1/4 cups / 125 grams rolled oats
1/2 cup / 70 grams quinoa flour or millet flour (grind quinoa or millet in a spice mill to make the flour)
1/3 cup / 63 grams raw brown (turbinado) sugar
1/2 teaspoon freshly grated nutmeg
1/8 to 1/4 teaspoon salt (to taste)
3 ounces (6 tablespoons) cold unsalted butter, cut into 1/2-inch pieces
1/4 cup / 30 grams pecans
1 teaspoon lemon zest
2 pounds / 900 grams / 4 large apples, peeled and cut in approximately 1/2-inch dice (see note)
2 tablespoons / 60 grams unsalted butter
2 tablespoons / 30 grams raw brown (turbinado) sugar
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 large ripe but firm pear, peeled, cored and diced
1 cup / 60 grams dried cranberries

Steps:

  • Make crumble topping first. Preheat oven to 350 degrees. Cover a baking sheet with parchment. Place oats, quinoa flour, sugar, salt and nutmeg in a food processor fitted with steel blade and pulse several times to combine. Add the butter and pulse until the butter is evenly distributed throughout the grain mix. The mixture should have a crumbly consistency. You can also combine ingredients in a standing mixer fitted with the paddle and mix at low speed until mixture has a crumbly consistency.
  • Spread topping over parchment-covered baking sheet in an even layer. Place in oven and bake 10 minutes. Rotate pan, stir mixture, and bake another 10 minutes, until nicely browned. Remove from heat and allow to cool. Stir in pecans and lemon zest.
  • Turn oven up to 375 degrees. Butter a 2-quart baking dish. Cook apples in 2 batches. Heat half the butter over medium-high heat in a large heavy skillet until it foams and foam subsides. Add apples and wait until they begin to sizzle, then add half the sugar and cook, stirring and tossing in the pan, until apples just begin to caramelize, about 10 minutes. Transfer to a bowl and repeat with remaining butter, apples and sugar. When second batch has caramelized, add first batch back into pan, then add lemon juice, vanilla extract, cinnamon and nutmeg and stir together for another minute. Stir in diced pear and dried cranberries and stir everything together. Remove from heat and scrape into buttered baking dish.
  • Spread crumble topping over apple mixture in an even layer. Place in oven and bake 30 minutes, until bubbling and top is nicely browned. Allow to cool for at least 10 minutes before serving.

Apple and pear crumble is a delicious dessert that is easy to make and perfect for any occasion. It is a traditional British dessert that is made with apples and pears baked with a crispy crumble topping. The sweet and tangy taste of the fruit filling combined with the crunchy crumble topping makes it a crowd-pleaser, and it can be served with custard or ice cream.

The Fruit Filling

The first step to making an apple and pear crumble is to prepare the fruit filling. Apples and pears are the star ingredients of this dish, and it is important to choose the right variety. Apples that work well in apple and pear crumble recipes include Granny Smith, Pink Lady, Honeycrisp, and Braeburn, while the best pears to use are Bartlett, Anjou, Bosc, or Comice. Peel and core the apples and pears and cut them into small chunks. You can either use a sharp knife or a mandolin slicer for this step. Once the fruit is chopped, toss it in a bowl with sugar, lemon juice, and spices. Cinnamon, nutmeg, and ginger are all popular spices to use in an apple and pear crumble recipe.

The Crumble Topping

The crumble topping is what sets an apple and pear crumble apart from other fruit desserts. It is a combination of flour, butter, sugar, and oats that is mixed together until it resembles fine breadcrumbs. Some recipes call for nuts or coconut in the crumble topping, while others suggest adding a pinch of salt for balance. Once the crumble topping is mixed, sprinkle it evenly over the fruit filling. Don't press the topping down too firmly, as it should remain light and crumbly.

Baking the Crumble

Apple and pear crumble is baked in the oven until the fruit filling is bubbling and the crumble topping is golden brown. The baking time will vary depending on the recipe, but most apple and pear crumble recipes call for a baking time of around 30-40 minutes. It is important to let the apple and pear crumble cool for a few minutes before serving. This allows the fruit filling to set and makes it easier to cut into portions. Some recipes suggest serving the crumble with custard or ice cream, while others recommend whipped cream or a dollop of Greek yogurt.

Variations

There are countless variations of apple and pear crumble recipes, and you can experiment with different fruits, spices, and toppings to make it your own. For example, you could add raspberries or blueberries to the fruit filling for a burst of color and flavor. Alternatively, you could swap out the crumble topping for a more indulgent streusel topping made with butter, flour, and brown sugar.
Conclusion
Apple and pear crumble is a comforting and classic dessert that is perfect for autumn and winter. It is a simple yet satisfying recipe that can be adapted to suit your tastes and preferences. Whether you serve it at a dinner party or enjoy it with your family on a lazy Sunday afternoon, apple and pear crumble is sure to become a staple in your baking repertoire.
Apple and pear crumble is a classic dessert that is loved by many people around the world. This delicious dessert has a sweet and crunchy topping and a warm, juicy filling. Making an apple and pear crumble recipe is relatively easy, but there are certain tips and tricks that one can follow to make a perfect crumble that will impress everyone.

Tip #1: Choose the right type of apple and pear

When making an apple and pear crumble recipe, it is essential to choose the right type of fruit. The apples and pears that are used should be firm and not too soft. The best types of apples to use for a crumble are Granny Smith, Jonathan, and Honeycrisp. These apples hold their shape when cooked and have a tangy flavor that complements the sweetness of the crumble topping. The best types of pears to use are Bartlett, Bosc, and Anjou. These pears have a soft texture and a sweet taste that goes well with the crunchy topping of the crumble.

Tip #2: Cut fruits into equal-sized pieces

When making an apple and pear crumble recipe, it is important to cut the fruits into equal-sized pieces. If the pieces are too big or too small, the crumble will not cook evenly, and some parts may be overcooked while others remain undercooked. To ensure that the fruits are cut into equal-sized pieces, use a sharp knife and a cutting board.

Tip #3: Use a mixture of spices

A good apple and pear crumble recipe should have a blend of spices that enhance the flavor of the fruits. The most common spices that are used in a crumble are cinnamon, nutmeg, and ginger. Cinnamon adds a warm and sweet flavor to the crumble, nutmeg adds a nutty and pungent flavor, and ginger adds a spicy and zesty flavor. To get the best flavor, use a mixture of these spices and adjust the proportions according to your preference.

Tip #4: Choose the right type of flour for the crumble topping

The crumble topping is an essential part of the apple and pear crumble recipe, and it is important to choose the right type of flour for the topping. The best type of flour to use is all-purpose flour, which has a medium protein content and produces a crumbly texture. If you want a healthier alternative, you can also use whole wheat flour or almond flour.

Tip #5: Use cold butter for the crumble topping

Cold butter is an essential ingredient for the crumble topping as it helps to create a crumbly texture. When cold butter is added to the flour mixture, it creates small pockets of air that expand during baking, resulting in a crisp and crunchy topping. To ensure that the butter is cold, cut it into small pieces and chill it in the refrigerator for at least 30 minutes before using it.

Tip #6: Use brown sugar in the crumble topping

Brown sugar is a popular ingredient in the crumble topping as it adds a rich and caramelized flavor to the dessert. Unlike white sugar, brown sugar contains molasses, which gives it a distinct flavor and color. To get the best result, use light brown sugar instead of dark brown sugar as it has a milder flavor and will not overpower the fruits.

Tip #7: Preheat the oven

Preheating the oven is an important step in making an apple and pear crumble recipe. When the oven is preheated, it creates a consistent temperature that helps to cook the crumble evenly. The ideal temperature for baking an apple and pear crumble is 375°F.

Tip #8: Bake the crumble until golden brown

To get the best result, bake the apple and pear crumble until the topping is golden brown and the fruit filling is bubbling. This usually takes about 30-40 minutes, depending on the recipe and the size of the baking dish. If the crumble is not baked enough, the topping will be soggy, and the filling will be undercooked.

Tip #9: Serve with ice cream or whipped cream

Apple and pear crumble is best served warm and topped with a scoop of vanilla ice cream or a dollop of whipped cream. The cold ice cream or cream complements the warm and crunchy crumble, creating a perfect balance of flavors and textures.

Conclusion

Making an apple and pear crumble recipe is easy, but following these tips and tricks can help you create a perfect crumble that will impress everyone. Remember to choose the right type of fruit, cut them into equal-sized pieces, use a mixture of spices, choose the right type of flour and sugar for the crumble topping, preheat the oven, and bake the crumble until golden brown. Lastly, don't forget to serve the crumble with ice cream or whipped cream to add another layer of flavor to this classic dessert.
