2 cups rolled oats (or about 1 1/2 c oat flour) (regular or gluten free)
1 egg (or flax egg)
1 c milk of choice
1 apple (I used Gala)
1/2 T cinnamon
1 tsp vanilla extract
1 tsp baking powder
1 tsp apple cider vinegar
1 T pure maple syrup
1 T oil (canola or melted coconut oil)
1/8 tsp sea salt

Steps:

  • In a food processor or high powered blender, process the oats until a flour consistency.
  • Transfer flour to a mixing bowl.
  • In a blender, add all other ingredients and blend until smooth and combined.
  • Add the flour to the mixture and pulse or mix to combine. (You don't have to use the blender for this, you could also pour the mixture into the bowl with the flour and stir to combine!) If the batter seems too thick, add more milk one tablespoon at a time until desired consistency.
  • Pour desired amount for each pancake over a griddle or pan at about medium to medium high heat.
  • Heat until bubbles form all around the edges of the pancakes and then flip.
  • Cook to desired golden brown.
  • Add your favorite toppings and enjoy!

1 large apple, cored and sliced
½ cup white sugar, divided
2 teaspoons ground cinnamon
4 eggs
⅓ cup milk
⅓ cup all-purpose flour
1 teaspoon baking powder
1 teaspoon vanilla extract
1 pinch salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Melt butter in an oven-safe skillet over medium heat; cook and stir apple slices, about 1/4 cup sugar, and cinnamon in butter until apples are tender, about 5 minutes.

1/3 cup coarsely ground flax seed
3 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon cinnamon
1 dash nutmeg
2 eggs (separated, with whites beaten stiffly)
1 1/4 cups 2% low-fat milk
3 tablespoons butter, melted
1 cup pared & shredded apple (shredded just prior to adding to batter)

Steps:

  • In a large bowl, combine flour, ground flax, sugar, baking powder, salt, cinnamon and nutmeg.
  • In a medium bowl, lightly beat together the egg yolks, milk and melted butter.
