APPETIZER ROLL-UPS
Cream cheese and a variety of herbs and vegetables make even deli cold cuts a fancy and filling appetizer. Bite-size pieces look so pretty set on a platter in a circle. But the arrangement never stays complete for very long once this snack is served. -Marcella Funk, Salem, Oregon

Steps:
- 1. Set out cream cheeses out in room temperatures in a small bowl. The idea is to be able to work with in when you mix the other ingredients in it.
- 2. Start adding your seasonings and onions if you want whether is dried or fresh herbs you want to put in the cream cheese and mix it thoroughly and taste it to your desired taste then...
- 3. Get your deli meats slices out and take the cheese spread and spread it thin onto your lunchmeat.
- 4. Then start rolling up your meat wrap into skinny log style. You can keep it long or cut it in half. Put on your plate as your appetizer plate and cover to refridgerate.
- 5. put in fridge till you're ready to serve them. I use toothpicks and insert in meat rollups so they can easily pick it up. Hopefully you'll enjoy them serving with crackers or by themselves.
ITALIAN BEEF ROLL UPS
Meet the Cook: When I serve Italian Beef Roll-Ups, my family and friends tell me that I should open a restaurant. And this dish tastes even more delicious rewarmed! I do a lot of cooking, especially now that we're retired. As a special treat, I like to bring dinner to our daughters (we have three) and their husbands. -Lucia Johnson, Massena, New York

MEAT ROLL-UPS
These roll-ups remind me of my childhood as my mother used to make these for us when I was a kid. Consequently, these are one of my quintessential comfort foods! Great for a party or to snack on anytime or as part of a tapas-type meal. They freeze very well and can easily be pulled out of the freezer even for just a small personal snack (I included reheating directions below.) Enjoy!

Steps:
- Begin to brown ground beef in a large skillet. Once a little moisture has come out of the beef, stir in the onion soup mix and continue until all the meat is browned, over medium-high heat. Make sure ground beef is crumbled to small pieces well.
- Remove from heat. Drain off any excess fat. Stir in cheese until melted and well combined. Set aside to cool.
- Preheat oven to 375-degree F.
- Loosely roll out the crescent dough as directed on package. Cut each crescent in half (into 2 triangles), creating 16 triangles from each package.
- Place a heaping teaspoonful of the beef mixture onto each triangle's center. (The beef mixture only needs to be cooled enough so that you can handle it with your fingers.).
- Roll each triangle to enclose. Tuck dough points under, pinch to close any openings, and place that doughier side down onto ungreased cookie sheets.
- Bake about 11 minutes, flipping over about 5 minutes into bake time, careful not to burn bottoms. Serve warm or let cool and freeze.
- To serve after freezing: No need to thaw - Warm in preheated 325-degree F oven for 10-13 minutes.
