Categories     Lunch

Yield 4 servings

Number Of Ingredients 17

3 medium yukon potatoes, peeled and cubed
olive oil, to taste
½ teaspoon smoked paprika
½ teaspoon dried oregano
3 teaspoons garlic powder, divided
kosher salt, to taste
pepper, to taste
14 oz extra firm tofu, 1 block
3 tablespoons low sodium soy sauce
3 tablespoons nutritional yeast
1 teaspoon onion powder
½ teaspoon ground turmeric
1 cup grape tomatoes, halved
3 cups fresh spinach
4 large flour tortillas
1 avocado, for serving, diced
hot sauce, for serving

Steps:

  • Preheat the oven to 400°F (200°C).
  • Add the potatoes to a baking sheet with a drizzle of olive oil, the paprika, oregano, ½ teaspoon of garlic powder, salt, and pepper and toss until well coated.
  • Bake for 20 minutes, flipping halfway through, until the potatoes are tender.
  • Heat a drizzle of olive oil in a large saucepan over medium heat. Once the oil begins to shimmer, crumble the block of tofu into the pan until it resembles the consistency of scrambled eggs, being careful not to over-crumble because it will continue to break apart as you cook. Cook for 4-5 minutes, until the tofu is slightly golden.
  • Add the soy sauce, nutritional yeast, the remaining 2½ teaspoons garlic powder, the onion powder, turmeric, salt, and pepper and stir until well combined. Add the tomatoes and cook for 4-5 minutes, until the tomatoes become slightly wrinkled. Add the spinach and cook until wilted, 3-4 minutes.
  • To assemble a burrito, add ¼ of the tofu scramble, ¼ of the potatoes, some avocado, and hot sauce to the center of a tortilla. Fold in the sides and roll up, keeping the filling tucked in place. Repeat with the remaining ingredients. Cut in half and serve.
  • Enjoy!

Yield 6 servings

Number Of Ingredients 6

One 16-ounce tub soft or firm (but not extra-firm) tofu
1 tablespoon nonhydrogenated margarine
1 cup salsa (your favorite variety-try black bean and corn, cilantro-garlic, chipotle, etc.)
1/4 to 1/2 teaspoon curry powder
Six 8- to 10-inch soft flour tortillas
About 1 1/2 cups grated vegan Cheddar or nacho cheese

Steps:

  • Drain the tofu and cut into 1/2-inch slices. Blot well between layers of paper towels.
  • Heat the margarine in a medium skillet. Add the tofu and mash with a potato masher or large fork.
  • Stir in the salsa and curry powder to taste, then cook over medium heat for 3 to 4 minutes, until heated through. Turn up the heat and cook a little longer if there is excess liquid that needs to evaporate.
  • Divide the scrambled tofu mixture among the tortillas, placing it in the center of each in a kind of oblong shape, and leaving room at each end. Sprinkle some cheese over the tofu (3 to 4 tablespoons for each tortilla).
  • Microwave each burrito for 30 to 40 seconds, or until the cheese is melted. Fold two ends over the tofu mixture, then roll up the rest. Repeat with each burrito, then serve at once.

Whether you want it for breakfast, lunch, or dinner, you can quickly whip up a batch of scrambled tofu burritos in no time. In this article, we'll explore some valuable tips to help you create the perfect scrambled tofu burritos.

Tip 1: Preparing the Tofu

The key to making delicious tofu burritos is to ensure that the tofu is properly prepared. Tofu is tasteless and bland on its own, and it can take on the flavors of the ingredients used during cooking. For scrambled tofu, you should always press the tofu for at least 15 minutes to remove any excess water. Once pressed, crumble the tofu and set it aside.
Tip 1.1: Marinating the Tofu
If you'd like to add some flavor to your tofu before cooking, try marinating it beforehand. Some popular marinade options include soy sauce, oil, herbs, and spices. Allow the tofu to marinate for at least an hour before adding it to the pan.

Tip 2: Choosing the Right Vegetables

The beauty of scrambled tofu burritos is that you can use any vegetables you have on hand. However, some vegetables work better than others for this recipe. Vegetables that cook quickly and have a soft texture, such as onions, bell peppers, mushrooms, and spinach, are great additions to scrambled tofu.
Tip 2.1: Preparing the Vegetables
To ensure that the vegetables cook evenly, you should chop them into small, bite-sized pieces. Vegetables such as onions and mushrooms should be sauteed before adding the tofu to the pan. For greens like spinach or kale, add them to the pan in the last few minutes of cooking.

Tip 3: Spicing it Up

Spices are what make the scrambled tofu burritos flavorful, so don't be afraid to experiment with different spices. Some popular spices for this recipe include cumin, paprika, chili powder, turmeric, and garlic powder. You can also use fresh herbs like parsley or cilantro for added flavor.
Tip 3.1: Seasoning the Tofu
Once you've crumbled the tofu, add your desired spices to it and mix until the tofu is evenly coated. Allow the tofu to marinate for a few minutes to allow the flavors to blend together.

Tip 4: Adding Creaminess

If you like your scrambled tofu burritos to be creamy, you can add some vegan cheese or avocado to the recipe. Vegan cheese adds a cheesy texture and flavor to the burrito, while avocado adds a creamy texture and healthy fats.
Tip 4.1: Choosing the Right Cheese
Vegan cheese comes in many different varieties, including shredded, sliced, or crumbled. You can choose whichever type of cheese you prefer, but make sure it melts well in the pan. Some popular vegan cheese brands include Daiya, Follow Your Heart, and Violife.

Tip 5: Wrapping the Burrito

The final step in making scrambled tofu burritos is wrapping them. You can use any type of tortilla, but flour tortillas work best for this recipe. To ensure that the burrito stays together, fold the edges of the tortilla inward before rolling it up.
Tip 5.1: Toasting the Tortilla
If you'd like to add some extra texture to the burrito, you can toast the tortilla before wrapping it. Heat a dry skillet over medium-high heat and place the tortilla in the pan. Cook for about 30 seconds on each side until the tortilla is slightly crispy.

Conclusion

Scrambled tofu burritos are a delicious and versatile vegan meal that you can enjoy at any time of the day. By using these valuable tips, you can create the perfect scrambled tofu burritos that are packed with flavor and nutrition. Remember to experiment with different ingredients and spices to make the recipe your own.
