Time 25m

Number Of Ingredients 10

4 (12 inch) flour tortillas
3 oz shredded white cheddar cheese
3 oz shredded monterey jack cheese
3 oz shredded cheddar cheese
1 tomato, diced
1 chopped red bell pepper
1/8 c chopped green onions
1/3 c black beans, rinsed and drained
2 Tbsp hot salsa
1/8 tsp chili powder

Steps:

  • 1. Preheat oven to 425 degrees F (220 degrees C). Lightly grease or spray two 12 cup muffin pans. **May want to heat the tortills in the micro for a few seconds to make more pliable and so they don't crack before cutting in circles and placing in the muffin tins. **Can bake the tortillas in the muffin tins ahead of time for 5 minutes before adding the rest of ingredients for a crispier shell. The extra 5 mins won't hurt even after adding the ingredients and baking another 5 mins.
  • 2. Cut each tortilla into 6 smaller round pieces. (can use canning lid or cookie cutter or coffee cup.) Insert the pieces into the muffin tin cups. Arrange the white Cheddar cheese, Monterey Jack cheese, Cheddar cheese, tomato, red bell pepper, green onions, black beans, hot salsa and chili powder in the cups as desired. Or mix all together and drop in cups by spoon.
  • 3. Bake in the preheated oven 5 minutes, or until the cheeses are lightly browned and bubbly.

ANTOJITOS (INCREDIBLY SIMPLE)

Antojitos (Incredibly Simple) image

I love quick snacks that I can make on the go that still look elegant and as if they took a bit of effort to make. I also love Mexican food that isn't followed by a lengthy, uncomfortable visit to the washroom. So here is a really simple, scrumptious recipe combining the aforementioned clauses. This is also a nice thing to serve as an appetizer at any dinner party. Can substitute cayenne pepper for diced/minced jalapeno peppers.

Time 9m

Yield 1 serving(s)

Number Of Ingredients 3

1 spinach tortilla
1/2 cup cream cheese
1 teaspoon cayenne pepper

Steps:

  • Preheat oven to 375°F (Note, you can set the oven to a higher temperature but 375 usually allows all the ingredients to blend better for a more tasty result).
  • Spread cream cheese on the spinach tortilla(s) until entirely covered. To cut down on spill while eating, leave at least 1cm of the outer edge clean of cream cheese. You can adjust how much cream cheese you use based on how you like it but a good guide is to spread just enough that you can no longer see the tortilla under the cream cheese and not over 3mm in thickness.
  • Sprinkle a pinch of cayenne pepper over all of the cream cheese. ** Use cayenne pepper wisely. The longer it is cooked, the spicier it gets so do not sprinkle too much unless you like it that way.
  • Roll up the tortilla and put in the oven. Cook time is about 7-10 minutes or until tortilla starts to brown.
  • Cut tortilla roll into slices with thickness of about 3cm or so.
  • Serve immediately with salsa, sour cream, and/or guacamole as desired.

History of Antojitos Recipes

Antojitos recipes have a rich history in Mexican cuisine, dating back to the pre-Hispanic era. The Aztecs and the Mayans, who were the native people of Mexico, had a diverse and flavorful diet based on corn, beans, and chilies. Antojitos, which translates to 'little cravings,' were small, affordable, and quick-to-make snacks sold by street vendors in Mexico. These vendors would prepare the antojitos fresh throughout the day, offering an abundance of options to the locals. Over time, these street snacks became wildly popular and started to make their way into Mexican restaurants, where they are still commonly found on the menu today.

Tamales
A tamale is a traditional Mexican dish consisting of masa (a dough made from corn) that has been filled with various ingredients such as meat, cheese, or vegetables, and then wrapped in a corn husk and steamed. Tamales are usually served with salsa or hot sauce.
Quesadillas
A quesadilla is a tortilla filled with cheese and other ingredients, such as beans, vegetables, or meat, folded in half, and then grilled or toasted until the cheese melts. Quesadillas are usually served with sour cream or guacamole.
Sopes
Sopes are small, round-shaped thick tortillas that are topped with refried beans, meat, cheese, salsa, and any other topping of your choice. Sopes are usually served as a light meal or as an appetizer.
Churros
Churros are a sweet antojitos recipe. They are made from a pastry dough that is piped into long, thin tubes, and then fried until they are golden brown. Once fried, they are then coated in a cinnamon-sugar mixture and served with a variety of dipping sauces.

Valuable Tips to Keep in Mind While Making Antojitos Recipes

Mexican cuisine is popularly known for its vast array of antojitos, which typically include a variety of street foods including tacos, quesadillas, empanadas, tamales, and more. Making antojitos is an art of balancing flavors, textures, and ingredients. It requires a level of skill as well as knowledge. If you are planning to make antojitos at home, here are some valuable tips that you should keep in mind.
Use freshly made ingredients
One of the essential aspects of making delicious antojitos is using fresh and high-quality ingredients. Fresh ingredients are always preferred over processed or canned ingredients, as they offer better flavor and texture. For example, when making guacamole, always use fresh avocados instead of pre-packaged avocados. Similarly, when making salsa, use only fresh tomatoes, onions, and cilantro.
Preparation is Key
Preparation is essential when making antojitos. Before starting, make sure that you have all the essential ingredients as well as the cooking equipment. Cut vegetables, grate cheese or perform any other tasks that might take time, so that the cooking process is smooth and efficient.
Be mindful of the heat
Mexican cuisine is known for its flavorful and spicy dishes. However, the level of spiciness varies from region to region, and from dish to dish. When cooking antojitos, be mindful of the heat as it can significantly impact the overall flavor of the dish. Always taste the mixture before adding any additional spices or chilies.
Balance the flavors
When making antojitos recipes, it is essential to balance the flavors. Mexican cuisine typically involves a mix of sweet, sour, spicy, and savory flavors. Try to balance these flavors for a well-rounded and flavorful dish.
Experiment with ingredients
Mexican cuisine encourages experimentation with ingredients. While traditional recipes are always a great option, try to add a modern twist to them by experimenting with different ingredients. You may add different vegetables, herbs, or spices to traditional recipes.
Use the right cooking techniques
In Mexican cuisine, different dishes require different cooking techniques. For instance, tacos and quesadillas are typically cooked on a griddle or frying pan. Tamales are steamed in corn husks. Empanadas are fried or baked. Follow the cooking instructions carefully to ensure that the dish is cooked to perfection.
Don't overfill antojitos
One of the most common mistakes people make while making antojitos is overfilling them. Overfilling antojitos will make them difficult to eat and will compromise their flavor. Always leave enough room for the filling, so that the ingredients are evenly distributed and the flavors are balanced.
Present the dish with care
Presentation is essential when it comes to Mexican cuisine. Antojitos are typically presented in a colorful and vibrant manner, encouraging people to eat them. If you are hosting a party or having guests over, take some extra time to present the dish with care.
Practice makes perfect
Making antojitos requires a level of skill and knowledge. Don't be afraid to experiment and make mistakes as practice makes perfect. Keep trying until you get the perfect balance of flavors and textures. In conclusion, antojitos are an integral part of Mexican cuisine, and they offer a diverse range of flavors and textures. By keeping these valuable tips in mind when making antojitos recipes, you can ensure that your dishes are flavorful, beautiful, and authentic. Happy cooking!
