Selecting the Ingredients

The key to making a delicious dish is to use high-quality ingredients. When selecting feta cheese, opt for the one made from sheep's milk for a more authentic flavor. Use sun-dried tomatoes that are packed in oil for added richness and flavor. For the best texture, use fresh angel hair pasta instead of dried pasta.

Preparation

Before starting to cook, ensure all ingredients are prepped and ready to use. Sun-dried tomatoes should be chopped into small pieces, and feta cheese should be crumbled. Use a garlic press to crush or finely chop the garlic for better flavor.
Tip: For a smoother texture, use a food processor to blend the feta, garlic, and olive oil into a creamy sauce.

Cooking the Pasta

To cook the angel hair pasta, bring a large pot of salted water to boil. Add the pasta and stir to prevent it from sticking together. Cook for 2-3 minutes or until the pasta is cooked but still firm to the bite. Immediately drain the pasta and rinse with cold water to stop the cooking process.
Tip: Reserve a cup of pasta water to use in the sauce later on.

Making the Sauce

In a large skillet or saucepan, heat olive oil over medium heat. Add garlic until fragrant, then add sun-dried tomatoes and cook for 1-2 minutes. Add the feta cheese to the pan, along with a splash of pasta water for smoother consistency. Stir until the cheese is melted and the sauce is heated through.
Tip: For added flavor, add chopped fresh herbs like basil, parsley, or oregano to the sauce.

Serving

Once the pasta is cooked and the sauce is ready, add the pasta to the skillet and toss until the pasta is well-coated with the sauce. Garnish with more crumbled feta cheese and chopped fresh herbs. Serve warm or at room temperature.
Tip: For a heartier meal, add cooked chicken or shrimp to the dish.
