DELICIOUS ANGEL HAIR IN TOMATO, TUNA AND OLIVE SAUCE

Delicious Angel Hair in Tomato, Tuna and Olive Sauce image

You'll love this blend of tomatoes, tuna and black olives in a homemade tomato sauce. My mom would make this during Lent for the family, but you'll want to make it all year round. My husband (who hates tuna), raves about this dish. It's different and very delicious. Tastes even better heated the next day. Serve with some garlic bread and a salad and you have a complete dinner.

PASTA WITH TUNA, CAPERS AND SCALLIONS

Pasta With Tuna, Capers and Scallions image

There are about a gazillion ways to cook pasta using other pantry staples - things like garlic, bread crumbs, pecorino, capers, olives and especially, canned fish. This recipe, pasta with tuna, anchovies and capers, showered with lots of green herbs and scallions, is one of my family's household favorites. I like it with a long, thin, twirlable pasta - spaghetti, linguine or bucatini - but you can use whatever pasta you have on hand. Even macaroni works just fine and might even persuade your finicky kid to eat this dish (though, so far, mine abstains).

Time 30m

Yield 3 to 4 servings

Number Of Ingredients 11

Salt
12 ounces long, thin pasta, such as bucatini, spaghetti or linguine
3 tablespoons extra-virgin olive oil
3 garlic cloves, thinly sliced
3 scallions, thinly sliced, white and green parts separated
6 to 10 anchovies, chopped
3 tablespoons drained capers
1 cup torn fresh herbs, such as parsley and dill, or celery leaves, plus more for serving (optional)
1 (5- or 6-ounce) can tuna, drained
Red-pepper flakes, for serving
Lemon wedges, for serving

Steps:

  • In a well-salted pot of boiling water, cook pasta according to package directions until al dente. Drain, saving 1 cup pasta water.
  • In a large skillet, heat the oil over medium. Add garlic and scallion whites, and cook until fragrant, about 1 minute. Add anchovies and capers and cook until anchovies melt and capers and garlic turn golden, 2 to 3 minutes longer. Add 1/2 cup pasta water, let it reduce until there is just a little left in the pan, then add pasta and herbs and toss well to coat. Add tuna and toss well.
  • Serve with red-pepper flakes on top, more herbs, scallion greens, and a drizzle of olive oil. Serve with lemon wedges on the side for squeezing.

Tips for Making Delicious Angel Hair Pasta with Tuna Recipes

When it comes to making angel hair pasta with tuna recipes, there are several tips you should keep in mind to ensure that your dish is both tasty and nutritious. Here are some valuable tips that you should follow:
1. Choose Fresh Ingredients
The first step to making a delicious angel hair pasta with tuna recipe is to select the freshest and highest quality ingredients possible. Fresh tuna, for instance, can make all the difference in terms of flavor and nutritional value. When buying tuna, look for firm, bright, and moist flesh. Make sure that the tuna is not discolored or has any unpleasant odor. It's also advisable to buy tuna that has been sustainably sourced to promote the longevity of marine ecosystems. Similarly, choose fresh vegetables such as garlic, shallots, cherry tomatoes, or bell peppers. Fresh vegetables will add flavor, texture, and color to your dish. If possible, buy organic vegetables as they are free from harmful pesticides.
2. Cook the Pasta Al Dente
One of the most crucial aspects of making angel hair pasta with tuna recipe is to cook the pasta al dente. Al dente means "to the tooth" in Italian, and it refers to pasta that is cooked until it is firm yet tender. Undercooking or overcooking the pasta will result in a dish that is either too hard or too mushy. To cook pasta al dente, follow the instructions on the package and taste the pasta frequently towards the end of the cooking time to ensure that it's not overcooked. Once the pasta is cooked, drain it and rinse it with cold water to stop the cooking process.
3. Use High-Quality Olive Oil
Olive oil is an essential ingredient in most Italian recipes, including angel hair pasta with tuna. However, not all olive oils are the same. Use high-quality extra-virgin olive oil with a fruity aroma and a rich taste. Good olive oil will elevate the flavor of your dish and provide a healthy source of monounsaturated fats.
4. Season Liberally
Seasoning is a crucial aspect of cooking. Season your angel hair pasta with tuna recipe liberally with salt, black pepper, red pepper flakes, and dried herbs such as oregano, basil, or thyme. Seasoning enhances the flavor, aroma, and color of your dish. However, avoid over-seasoning as this will overpower the other ingredients.
5. Don't Overcook the Tuna
Overcooking tuna can ruin its flavor, texture, and nutritional value. Tuna is best when cooked rare or medium-rare, and it should be seared quickly over high heat. Cook the tuna for 1-2 minutes on each side or until it's browned on the outside but still pink on the inside. Avoid cooking the tuna for too long as it will become dry and tough.
6. Don't Overcrowd the Pan
When cooking the tuna, make sure not to overcrowd the pan. Overcrowding will lower the temperature of the pan, and the tuna will steam rather than sear. Cook the tuna in batches if necessary and keep it warm on a plate covered with aluminum foil while preparing the rest of the ingredients.
7. Add Some Zest
Adding zest to your angel hair pasta with tuna recipe will add an extra layer of flavor and acidity. You can use lemon, lime, or orange zest to bring out the flavors of the other ingredients. Zesting is easy, and it only requires a microplane grater or a citrus zester.
8. Garnish with Fresh Herbs
Garnishing your angel hair pasta with tuna recipe with fresh herbs is both visually appealing and flavorful. Chop some fresh parsley, cilantro, or basil and sprinkle it on top of your dish before serving. Fresh herbs will make your dish look and taste more vibrant and fresh.
9. Add Some Heat
If you like spicy food, you can add some heat to your angel hair pasta with tuna recipe by using red pepper flakes or hot sauce. Spiciness will add an extra kick to your dish and boost your metabolism. However, use caution when adding heat as it can be overpowering.
10. Experiment with Flavor Combinations
Lastly, don't be afraid to experiment with different flavor combinations when making angel hair pasta with tuna recipe. You can add different vegetables, such as zucchini, eggplant, or spinach, or use different types of pasta, such as linguine or spaghetti. You can also add different sauces, such as tomato-based or cream-based, or different proteins, such as shrimp, chicken, or scallops. Cooking is an art, and experimenting with new flavor combinations will help you develop your skills and creativity. Conclusion In conclusion, making angel hair pasta with tuna recipe is an easy and delicious way to enjoy a healthy and flavorful meal. By following these tips, you can ensure that your dish is both tasty and nutritious. Choose fresh ingredients, cook the pasta al dente, use high-quality olive oil, season liberally, don't overcook the tuna, don't overcrowd the pan, add some zest and heat, garnish with fresh herbs, and experiment with flavor combinations to create a unique and satisfying dish. Bon appétit!
