A yummy pasta dish that is started on the cooktop and finished in the oven. The house will smell divine! The chorizo I use is a dry sausage available here tinged with lots of paprika. It is already cured and can, in fact, be eaten out of hand, much like salami.

2 tablespoons olive oil
6 green onions, chopped
2 garlic cloves, minced
1/2 lb button mushroom, quartered
2 teaspoons paprika
1/2 teaspoon salt
1 pinch cayenne
3 medium tomatoes, peeled, seeded and chopped
1 large green bell pepper, diced
3 cups canned chicken broth
1/2 cup dry white wine
1/2 cup cream or 1/2 cup half-and-half
3/4 lb spicy chorizo sausage, cut into 1/2 inch thick rounds
1 lb angel hair pasta
minced fresh parsley

Steps:

  • Preheat oven to 400 degrees F.
  • Heat oil in deep skillet over medium-high heat.
  • Add onions and garlic and cook until tender, about 8 minutes.
  • Add mushrooms and saute 4 minutes.
  • Add paprika, salt and cayenne and stir until just fragrant, about 30 seconds.
  • Add tomatoes and green pepper and saute 2 minutes.
  • Add broth, wine, cream and chorizo.
  • Bring to simmer.
  • Break pasta in half and add to pan.
  • Cook until pasta is tender, stirring occasionally, about 8 minutes.
  • Set pan in oven.

8 ounces angel hair pasta
3 cups fresh white button mushrooms, sliced (can use more or less mushrooms)
1 medium onion, finely chopped
1 tablespoon fresh minced garlic (optional or to taste)
3 -4 tablespoons butter (more if needed)
2 (3 ounce) packages cream cheese (cut into small cubes)
salt and black pepper
2/3 cup half-and-half cream or 2/3 cup full-fat milk
3 -4 tablespoons chives, snipped
grated parmesan cheese

Steps:

  • For the sauce; in a medium saucepan cook the mushrooms in butter until the mushrooms loose there moister (you can remove the mushrooms or leave them in the saucepan).
  • Add in onions and garlic; saute for about 3 minutes, or until the onions are soft (adding in more butter if needed).
  • Stir in the cream cheese; cook over low heat, stirring constantly until the cheese has melted.
  • Gradually add in half and half cream or milk and chives; stir to heat through.
  • Season with salt and pepper to taste.

5 (4 ounce) links chorizo sausage (such as Johnsonville®)
1 (16 ounce) box penne pasta
1 cup butter
4 cloves garlic, minced
1 cup heavy whipping cream
¼ teaspoon crushed red pepper flakes
1 cup grated Parmesan cheese
1 tablespoon butter
1 onion, sliced
1 red bell pepper, sliced
1 (8 ounce) package button mushrooms, stems trimmed
salt and pepper to taste

Steps:

  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Cook the sausages on the preheated grill, turning occasionally, until no longer pink in the center, about 10 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Cut into bite sized pieces; set aside.
