TURKEY MEATLOAF WITH KETCHUP-BROWN SUGAR GLAZE RECIPE - (4.5/5)

Turkey Meatloaf with Ketchup-Brown Sugar Glaze Recipe - (4.5/5) image

Provided by Dr_Mom

Number Of Ingredients 20

Meatloaf
3 tablespoons unsalted butter
Pinch baking soda
1/2 onion, chopped fine
Salt and pepper
1 garlic clove, minced
1 teaspoon minced fresh thyme
2 tablespoons Worcestershire sauce
3 tablespoons quick oats
2 teaspoons cornstarch
2 large egg yolks
2 tablespoons Dijon mustard
2 pounds 85 or 93 percent lean ground turkey
1 ounce Parmesan cheese, grated (1/2 cup)
1/3 cup chopped fresh parsley
Glaze
1 cup ketchup
1/4 cup packed brown sugar
2 1/2 teaspoons cider vinegar
1/2 teaspoon hot sauce

Steps:

  • Do not use 99 percent lean ground turkey in this recipe; it will make a dry meatloaf. Three tablespoons of rolled oats, chopped fine, can be substituted for the quick oats; do not use steel-cut oats. 1. FOR THE MEATLOAF: Adjust oven rack to upper-middle position and heat oven to 350 degrees. Line wire rack with aluminum foil and set in rimmed baking sheet. Melt butter in 10-inch skillet over low heat. Stir baking soda into melted butter. Add onion and 1/4 teaspoon salt, increase heat to medium, and cook, stirring frequently, until onion is softened and beginning to brown, 3 to 4 minutes. Add garlic and thyme and cook until fragrant, about 1 minute. Stir in Worcestershire and continue to cook until slightly reduced, about 1 minute longer. Transfer onion mixture to large bowl and set aside. Combine oats, cornstarch, 3/4 teaspoon salt, and 1/2 teaspoon pepper in second bowl. 2. FOR THE GLAZE: Whisk all ingredients in saucepan until sugar dissolves. Bring mixture to simmer over medium heat and cook until slightly thickened, about 5 minutes; set aside. 3. Stir egg yolks and mustard into cooled onion mixture until well combined. Add turkey, Parmesan, parsley, and oat mixture; using your hands, mix until well combined. Transfer turkey mixture to center of prepared rack. Using your wet hands, shape into 9 by 5-inch loaf. Using pastry brush, spread half of glaze evenly over top and sides of meatloaf. Bake meatloaf for 40 minutes. 4. Brush remaining glaze onto top and sides of meatloaf and continue to bake until meatloaf registers 160 degrees, 35 to 40 minutes longer. Let meatloaf cool for 20 minutes before slicing and serving.

TURKEY MEATLOAF WITH BROWN SUGAR-KETCHUP GLAZE RECIPE - (4.5/5)

Turkey Meatloaf with Brown Sugar-Ketchup Glaze Recipe - (4.5/5) image

Provided by Susan52

Number Of Ingredients 16

1 tsp olive oil
1/2 sweet yellow onion, diced
2 cloves of garlic, minced
1/4 cup of 2% milk
1 large egg
1 tsp thyme
1 tsp Dijon mustard
1 tsp Worcestershire sauce
One eighth tsp hot pepper sauce
Sea salt and freshly cracked pepper, to taste
1 1/4 lbs 93% lean ground turkey (not all turkey breast)
1/2 cup + 2 1/2 tbsp fresh bread crumbs
2 tbsp fresh parsley, chopped
1/2 cup of ketchup
2 tbsp packed light brown sugar
2 tbsp cider vinegar

Steps:

  • Preheat the oven to 350 degrees. Line a baking sheet with tin foil then place a wire rack on top. Fold a piece of tin foil into a 10 x 6 inch rectangle and place on top of the wire rack; set aside. Chop some leftover rustic bread into cubes (I used roasted garlic bread) making sure to slice the bottom of the loaf off first (it's too hard for breadcrumbs). Once the bread is in cubes, place into a food processor, and pulse until you have fine bread crumbs. Heat the olive oil in a skillet over medium heat. Add the onion; cover and cook, stirring occasionally, until the onion has softened; about 5-7 minutes. Add the minced garlic and cook, stirring constantly, for 1 minute. Remove from the heat and set aside to cool. Whisk together the milk, egg, thyme, mustard, Worcestershire sauce, hot sauce, sea salt, and freshly cracked pepper, to taste in a small bowl. In another large bowl, mix the turkey, bread crumbs, parsley, cooked onion mixture, and egg mixture together with your hands until uniformly combined. Press the mixture together into a compact mass, then turn it out onto the foil rectangle on top of the wire rack. Using your hands, press the meat into an evenly thick loaf about 2 inches tall and 1 inch smaller than the foil on all sides. Stir the ketchup, sugar, and vinegar together, then brush half of the mixture evenly over the meatloaf. Bake the meatloaf for 45 minutes. Brush the meatloaf with a bit more glaze, and continue to bake until the center of the loaf registers 160 degrees with a meat thermometer, about 15-20 minutes longer. Cool at least 10-15 minutes before slicing.

THE BEST KETCHUP-GLAZED MEATLOAF

The Best Ketchup-Glazed Meatloaf image

I have been making this meatloaf for years now and we all love it. You'll find quite a bit of grease in the bottom of your loaf pan, even when using lean ground beef. When I first started making this meatloaf, I would end up pouring off most of the sauce (the best part!) when draining the fat, so now I bake the meatloaf first without the sauce, then drain off the fat, then spread the sauce on top and return it to the oven for about 5-10 more minutes. I also usually double the ingredients for the sauce so that I have some sauce to serve with the leftovers (if you manage to have any!). Hope you enjoy this recipe as much as we do!

Valuable Tips for Making Amy's ATK Turkey Meatloaf with Ketchup Brown Sugar Glaze Recipe: Amy's ATK Turkey Meatloaf with Ketchup Brown Sugar Glaze Recipe is an exquisite delicacy that is perfect for any dinner occasion. It entails some essential techniques that you should know when preparing the recipe to ensure the meatloaf is moist, flavorful, and packed with flavorsome aromas. Here are some valuable tips that can help you to make the perfect Amy's ATK Turkey Meatloaf with Ketchup Brown Sugar Glaze Recipe. 1. Use fresh ground turkey: The quality of the ground turkey meat is critical in ensuring that the meatloaf comes out moist and flavorful. Always use fresh ground turkey to prepare your meatloaf. It is preferable to use freshly ground turkey that has not been frozen, as frozen ground turkey can lose its moisture and texture. 2. Don't overwork the meatloaf mixture: Overworking the meatloaf mixture can result in a dry, tough, and unappetizing loaf. Therefore, it is essential to mix the ingredients just enough to ensure that they are well combined. 3. Be careful when adding the wet ingredients: The wet ingredients in the recipe include Worcestershire sauce, ketchup, and milk. It is crucial to add them gradually, stirring well after each addition to ensure that the mixture is not too wet or soggy. 4. Use fresh herbs and spices: Fresh herbs and spices add more flavor to the meatloaf than dried herbs and spices. Thus, it is crucial to use fresh herbs such as thyme, rosemary, and parsley to enhance the meatloaf's taste. 5. Let the meatloaf rest after baking: Once you have baked the meatloaf, let it rest for about fifteen minutes before slicing it. Doing so allows the juices to redistribute throughout the meatloaf, resulting in a more moist and tender loaf. 6. Bake in a loaf pan: For an evenly cooked meatloaf, it is recommended to use a loaf pan instead of baking it on a sheet pan. A loaf pan will help in retaining the meatloaf's shape and ensure even cooking all through. 7. Prepare the Glaze before the Meatloaf: It is advisable to prepare the glaze before the meatloaf. The glaze takes a few minutes, while the meatloaf's preparation takes about 10-15 minutes, so having the glaze ready prevents keeping the meatloaf in the oven for an extended period, which can dry it out. 8. Use High-Quality Ketchup: When preparing the ketchup brown sugar glaze, it is essential to use high-quality ketchup since it will provide more flavor than regular ketchup. A high-quality ketchup has more depth and sweetness, which will give the glaze a more delicious taste. 9. Adjust the baking time: The baking time can vary depending on various factors such as the oven's size and the size of the meatloaf. It may be necessary to adjust the baking time to ensure that the meatloaf is cooked all through. 10. Experiment with additional spices: If you want to add additional flavors to the meatloaf, you can experiment with different spices such as cumin, paprika, or thyme. Adding additional spices will make your meatloaf recipe more unique and flavorful. Conclusion: Amy's ATK Turkey Meatloaf with Ketchup Brown Sugar Glaze Recipe is a healthy and delicious meal that can be served on any occasion. These valuable tips can help you make a perfect meatloaf that is moist, flavorful, and appetizing. Always use fresh ground turkey, be careful when adding the wet ingredients, mix briefly, prepare the glaze before the meatloaf and use high-quality ingredients, adjust the baking time and experiment with additional spices. Above all, follow the recipe instructions, and you are sure to have a delicious and satisfying meal that your family and friends will love.
