Definitely NOT Tex Mex! :-) My grandmother always added broken spaghetti noodles to her chili, but she used ground beef instead of sausage.

1 1/2 lbs bulk sausage
2 medium onions, sliced
3 cups tomato juice
1 (15 ounce) can kidney beans
1 tablespoon chili powder
1/4 cup brown sugar (1/4 to 1/2 cup)
salt and pepper, to taste
1/2 cup broken pieces of dried spaghetti noodles (1/2 to 1 cup)

Steps:

  • Brown the sausage and onion in a deep pot and then drain off the fat, returning the meat and onions back to the pan.
  • Add the remaining ingredients, except the spaghetti, stir well, and bring to a boil.
  • Add the spaghetti to the soup and cook until spaghetti is done, about 5 to 10 minutes over medium-high heat.

This is a wonderful warm soup to warm the heart in these last cold days of winter. Being in Wisconsin, warm soup is always a welcome thing. This is a very simple amish soup, so it has very simple ingredients. It's perfect for a beginner cook or someone like me who just wants something easy.

2 cups dried navy beans
2 1/2 quarts water
1 (1 1/2 lb) ham bone (thick and meaty)
1 garlic clove, minced
1 small bay leaf
1 cup potato, cubed
1 cup celery, thinly sliced
1 cup onion, finely chopped
1 cup carrot, cubed
salt and pepper, to taste

Steps:

  • Boil the beans in the water for 2 minutes before removing them from the heat to let stand for 1 hour.
  • Add the ham bone, garlic and bay leaf to the beans, and cover and simmer them for 2 hours or until the ingredients are almost tender.
  • Add the vegetables and salt and pepper to taste, and simmer them for 1 hour longer. Remove the ham bone, cut off the meat and dice it to add to the beans. Reheat the soup almost to boiling, then remove the bay leaf.

1 large carrot, chopped
2 c water
2 large onions, chopped
1 qt diced potatoes
2 Tbsp rice
1/3 c macaroni, elbow
1 tsp salt
1/2 tsp pepper
2 c milk
2 Tbsp butter

Steps:

  • 1. Place carrot and water in large pot over med heat.
  • 2. When carrot is partly cooked, add next 6 ingredients; add enough water to cover & cook until tender.
  • 3. Add milk & butter; heat thoroughly. Serve with crusty rolls and salad for a tasty meal.
  • 4. VARIATIONS: #1: Add 2 cups chicken stock in place of milk & butter. #2: Add 1 cup cooked diced meat when milk is added.
