AMISH BROWN SUGAR HAM STEAK AND SCALLOPED POTATO SKILLET, VINTAG
This is quite different from the usual cubed ham/potato casserole. The little bit of brown sugar flavors the potatoes and ham as well the sauce. An attractive presentation and a family favorite for years. Even the kids liked it. You can sub half&half or milk for the evaporated milk, in which case just use 1 cup of milk and forget the water. But then again, the evaporated milk adds a little something to the flavor.

I fix this saucy skillet dish often, especially when I'm running late, because it's easy and it takes so little time to prepare. The recipe won first prize in our local paper some years back. —Emma Magielda, Amsterdam, New York

Steps:
- Prepare a medium-hot grill fire. Meanwhile, combine the soy sauce, bourbon, sugar, mustard, and hot sauce in a large zip-top bag. Seal and shake to combine the ingredients and dissolve the sugar. Add the steak to the bag, seal, massage to cover the steaks with marinade, and set aside for 15 to 20 minute at room temperature.
- When the grill is ready, remove the steak from the marinade and shake off any excess, but don't pat it dry. Reserve the marinade. Grill the steak until good sear marks appear, 3 to 4 minute With tongs, rotate the steak 90 degrees (to get a crosshatch of grill marks) and continue grilling until grill marks form and the edges are a little crisp, another 3 to 4 minute Flip the steak and grill the other side in the same way until the exterior is nicely seared and the steak is cooked to your liking, 10 to 12 minute total cooking time for medium rare. Let the steaks rest for about 5 minute.
- Meanwhile, pour the marinade into a small saucepan and boil over medium-high heat until syrupy, about 3 minute (watch carefully to prevent burning). For flank steak, slice the meat thinly across the grain. For strip steaks, slice thickly or serve in chunks. Serve with a drizzle of the sauce.

DICED HAM DINNER STARTER (OAMC)
Not really a recipe but having this on hand in the freezer gets dinner on the table in no time flat! Check out my Public Cookbook for recipes to use this in. In addition, you will also need a good knife (electric works best) and 10 medium ziploc freezer bags. **NOTE**I do not add the salt and pepper but I could not submit a recipe with only 1 ingredient so I improvised**

Amish Brown Sugar Ham Steak and Scalloped Potato Skillet Vintage Recipes
The Amish are well-known for their traditional cooking, and this skillet recipe is no exception. This dish combines the savory flavors of ham, potatoes, and brown sugar for a hearty and delicious meal that is perfect for any occasion.
The Ham Steak
The centerpiece of this dish is the ham steak. The Amish believe in using simple, high-quality ingredients, and their ham is no exception. The ham steak is typically cut from the center of the ham, giving it a rich flavor and tender texture. The ham is then seasoned with a blend of spices before being pan-seared to perfection.
The Scalloped Potatoes
The scalloped potatoes are the perfect complement to the ham steak. The Amish believe in using fresh, locally-sourced ingredients whenever possible, and their potatoes are no exception. The potatoes are thinly sliced and layered in a skillet with a creamy white sauce made from butter, flour, and milk. The scalloped potatoes are then baked in the oven until golden brown and bubbly.
The Brown Sugar Glaze
To finish off the dish, a sweet and savory brown sugar glaze is drizzled over the ham steak. The Amish believe in using natural sweeteners, and brown sugar is a favorite in their cuisine. The glaze is made by combining brown sugar, Dijon mustard, and apple cider vinegar in a saucepan, then simmering until thick and syrupy.
