Lest we forget, a baked sweet pudding made with corn flakes. Another special recipe from my mom's Whispering Pines Grandmother's Club Cookbook.

1 quart corn flakes
1 quart milk
1/4 cup sugar
1 teaspoon ginger
2 eggs
1/4 cup molasses
1 teaspoon salt
1 teaspoon cinnamon

Steps:

  • Spread corn flakes in a greased, deep pudding dish.
  • Mix remaining ingredients and pour over the corn flakes.
  • Set pudding dish in a pan of hot water.
  • Bake at 350°F for 30 minutes.
  • When times are better, add 1/2 cup of raisins sprinkled over corn flakes before adding remaining ingredients.

Adopted recipe! A traditional French-Canadian recipe that is very common in Quebec. A syrupy "pudding" with a cakey topping. Very sweet.

1 1/2 cups brown sugar
1 1/2 cups water
3 tablespoons butter or 3 tablespoons margarine
1/2 teaspoon vanilla
3/4 cup sugar
3 tablespoons butter or 3 tablespoons margarine
3/4 cup milk
1 pinch salt
1 1/2 cups flour
2 teaspoons baking powder

Steps:

  • In a saucepan melt butter or margarine; stir in brown sugar.
  • Add water and vanilla.
  • Bring to a boil.
  • Meanwhile, make the dough.
  • Cream butter or margarine; add sugar.
  • In a separate bowl, combine flour, baking powder and salt.
  • Add to butter mixture alternately with milk.
  • Pour syrup into a 9 X 13 baking dish.
  • Drop dough by teaspoons over syrup.
  • Bake at 350 F for 30 minutes.

There is nothing poor-tasting about Chuck Hughes' pudding, a rich and tasty traditional French-Canadian dessert.

Number Of Ingredients 12

2 cups/500ml pure maple syrup
1 cup/250ml 35-percent cream
1/2 cup/125ml brown sugar
1/4 cup/60ml butter
1 cup/250ml butter, at room temperature
1 cup/250ml sugar
1 tablespoon/15ml pure vanilla extract
2 cups/500ml all-purpose flour
2 teaspoons/10ml baking powder
Pinch salt
1 cup/250ml milk
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C).
  • For the maple sauce: Bring the maple syrup, cream, brown sugar and butter to a boil in a saucepan. Reduce the heat and simmer for 5 minutes.
  • For the batter: Cream the butter, sugar and vanilla in a bowl with a mixer. In another bowl, combine the flour, baking powder and salt. Add the flour mixture to the butter mixture, alternating with the milk, and beating until just combined.
  • Divide the batter among 8 ramekins. Pour the syrup over the batter. Bake until golden brown and a toothpick inserted into the center of the pudding comes out clean, about 35 minutes.
  • Serve warm with vanilla ice cream.
