AMERICAN CHOP SUEY (JUST LIKE MAMA USED TO MAKE)

American Chop Suey (Just Like Mama Used to Make) image

I've found that the only place in the world that this recipe is called "American Chop Suey" is in and around the Boston area. Everywhere else it is known as goulash. Go into most any diner north of Boston, and "American Chop Suey" is on the lunch menu. This is a one pot meal that is terrific during these budget-conscious times. It is a comfort food that brings back wonderful childhood memories of simpler times. I've told friends that have asked for the recipe that if I give it to them, they have to call it "American Chop Suey", not goulash:).

Time 45m

Yield 8 serving(s)

Number Of Ingredients 13

1 (16 ounce) box elbow macaroni, cooked al dente according to directions on box
2 tablespoons olive oil
1 cup chopped celery
2 large green bell peppers, cut into bite-sized pieces (don't cut too small)
2 medium sweet onions, sliced into bite-sized pieces
1 -2 garlic clove, minced (depending on your taste for garlic)
1 1/2 lbs ground beef (you could use just a pound, but I like it meaty)
2 tablespoons sugar
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried parsley
salt and pepper, to taste
3 (14 1/2 ounce) cans stewed tomatoes, with juices (use 4 cans, if you like a lot of tomatoes)

Steps:

  • In a very large skillet, heat the olive oil. Add the chopped celery and cook a few minutes. Add the cut-up green bell pepper, and cook a few more minutes. Add the onion and continue to cook until celery, peppers, and onions are tender, about 5 minutes. Add the minced garlic and mix into the vegetables. Then add the ground beef, breaking up with a wooden spoon. Continue to cook until the ground beef is browned, about another 5 minutes, mixing the beef up with the vegetables. Sprinkle the mixture with the sugar, basil, oregano, and parsley and mix. Add the stewed tomatoes, juices and all. Add salt and pepper, to taste. Let simmer, covered, stirring occasionally.
  • Meanwhile, cook the elbow macaroni, according to the directions on box, in a very large saucepan. But, don't overcook. The macaroni should be al dente, because it will continue to cook a little when added to the beef/vegetable mixture. Drain pasta and put back into the large saucepan in which it was cooked.
  • Very carefully, add the beef and vegetable mixture, juices and all, to the drained pasta in the large saucepan. Mix well and keep heated, covered, stirring occasionally, on a very low heat.
  • When ready to serve, just put the pot of "American Chop Suey" along with bowls in the middle of the table, so everyone can help themselves. Serve with a basket of good Italian bread and butter.

My grandmother always made this for big family gatherings. When I was a kid I always picked out the hamburger, but it's the best part now! This is a pretty quick and easy recipe with no frills, but tastes great.

MOM'S AMERICAN CHOP SUEY (1950'S BASIC)

Mom's American Chop Suey (1950's Basic) image

A school lunchtime classic. Quick and easy to make. Very bland but has remarkable taste. My sister has tried it and say it's just as she remembers Mom's. All you need to finish this recipe is some Kraft shaker cheese to complete the memory. Mom probably got the recipe from a 1950 vintage Betty Crocker cookbook. Quantities are approximate. Mom seldom measured anything. We usually make a double batch. Enjoy. If you add a bit of garlic powder, chili powder and a can of kidney beans you would create Mom's Chili Mac Recipe.

MIMI'S AMERICAN CHOP SUEY

Mimi's American Chop Suey image

When I was little my mom made this recipe a lot. It was during World War II and it was very inexpensive to prepare. I loved it. I guess you would call it a comfort food for me as I was always so happy when I asked, "What's for supper" and Ma answered, "Chop Suey". She never called it "American Chop Suey" except on her recipe card. It was always "Chop Suey". I can't believe that I haven't posted this as I still make it often. I guess I figured it wasn't fancy enough and everyone knew about it, but because I don't want to lose it, I am posting it now. You will have most the ingredients in your pantry and freezer--there are only five plus salt and pepper.

CREAMY AMERICAN CHOP SUEY

Creamy American Chop Suey image

I grew up eating the never ending pot of American Chop Suey. My mother would just add more tomatoes and pasta to it until I thought I would gag at the thought of one more dinner of it. Thing is, I wanted to have it when I got older after trying other people's versions, so I found some recipes and glued together this. It is creamy because of the cheese, but if you don't like it, you can have it "regular". Without the kids being little, I now add hot sauce to it to spice it up, but that is not a part of my original recipe.

PLAIN 'OL AMERICAN CHOP SUEY

Plain 'ol American Chop Suey image

My mom makes this...so simple, yet mine never tastes like hers?? How can that be...hahha!! I love this, it's easy and tasty. You can get the diced tomatoes and chilies in MILD as well. (But I think that brand is Del Monte.) I typically use elbows, but I also use whatever I have in the cupboard, in this instance:...

Provided by Ashley Dawkins

Categories     Beef

Time 40m

Number Of Ingredients 4

1 can(s) stewed tomatoes
1 can(s) diced tomatoes w/ green chilies
1 lb hamburg
1 box pasta, preferrably anything that is short

Steps:

  • 1. Brown the hamburg in a medium size sauce pan until it's about 3/4 of the way done (mostly brown with some pink) and drain the grease. Return beef back to the pan.
  • 2. Take the stewed tomatoes and mash them over the pan with your hand. Give them a really good squeeze and really separate the tomatoes into pieces and let the juice fall in. Do this with all of the stewed tomatoes. Pour the remaining juice from the can into the mix.
  • 3. Put the entire contents of the can of diced tomatoes and green chilies into the beef mixture.
  • 4. Let this sit on the stove on low. Meanwhile, boil your pasta until it is halfway cooked.
  • 5. Once the pasta is half-cooked, add it to the meat and cook on low until tender. The extra juices from the tomatoes will really help soften the pasta. **Depending on the type of pasta, I don't always use the entire box. The amount can be added per your individuality.**
  • 6. EARLIER PREP OPTION: Once the meat is browned, I put it in a crockpot (while it's off), with the cover on and let it sit until I'm ready to use it. The pasta, I toss it with cold water and olive oil and refrigerate until I'm ready for that. Then a 1/2 hour before we are going to eat, I put the crockpot on low and add the half-cooked pasta and let it all heat up together.

VEGETARIAN AMERICAN CHOP SUEY (CROCK-POT)

Vegetarian American Chop Suey (Crock-Pot) image

This reminded me of American Chop Suey (an old '60s comfort food recipe which I used to make in a skillet on the stove) but healthier and made in a crockpot. I thought a chopped green pepper or sliced mushrooms may be great additions to this recipe. Adapted from Fresh From the Vegetarian Slow Cooker

Time 4h15m

Yield 4-6 serving(s)

1 (12 ounce) package frozen vegetarian veggie crumbles
1 -2 cup hot water
1/2 cup red wine
1 teaspoon italian seasoning
salt
pepper
8 ounces pasta (I used bow ties, but any macaroni-type of pasta will work)
1 tablespoon basil, chopped
1/2 cup parmesan cheese, grated

Steps:

  • In a skillet over medium heat heat oil and then add onion, cooking until softened. Stir in garlic and cook another minute or so. Although I didn't use them I thought a green pepper and/or mushrooms would be great to add to the skillet.

  • Stir in next 7 ingredients (tomatoes - pepper) and cook on low for 3 1/2 hours.
  • Stir in pasta, cover and cook on low for another 30 minutes.

Tip 1: Use Quality Ingredients

When making American Chop Suey, it is important to use high-quality ingredients to get the best flavor possible. The ingredients you use can make a big difference in the overall taste of the dish. Use fresh vegetables, quality ground beef, and spices to make the dish more flavorful.

Vegetables

Start by selecting fresh and quality vegetables for your American Chop Suey. Peppers, onions, and garlic are some of the key vegetables that bring out the flavors in this dish. Make sure you chop them finely and cook them until they are tender.

Ground beef

Ground beef is the main ingredient in American Chop Suey, and the quality of the beef you use can make or break the dish. It is recommended to use lean ground beef or even turkey for a healthier version. Make sure to brown the meat properly and drain off the excess fat to enhance the flavors of the sauce.

Spices

Spices are an important part of American Chop Suey, and they can elevate the dish to the next level. Common spices used in American Chop Suey include garlic powder, paprika, chili powder, and black pepper. You can also add other spices that you prefer to give the dish a unique flavor.

Tip 2: Cook the Pasta Correctly

The pasta used in American Chop Suey is typically macaroni, and it is important to cook the pasta correctly to avoid it becoming too mushy or stuck together. Follow the instructions on the package to ensure that the pasta is cooked al dente, which means that it is firm but not too hard. Overcooked pasta can ruin the dish, so it is important to keep an eye on it while it is cooking.

Tip 3: Experiment with Different Sauces

Traditional American Chop Suey is made with a tomato-based sauce, but you can experiment with different sauces to give the dish a unique flavor. You can use different types of canned tomatoes, such as diced or crushed, to give the sauce more texture. You can also add tomato paste, beef broth, or Worcestershire sauce to enhance the flavor.

Tip 4: Add Cheese and Other Toppings

Cheese and other toppings are a great way to add flavor and texture to American Chop Suey. Cheddar cheese is the most common cheese used in this dish, but you can experiment with other types of cheese to give the dish a different flavor. Other toppings you can add include chopped scallions, jalapenos, or even a dollop of sour cream.

Tip 5: Serve Properly

Serving American Chop Suey properly is important to ensure that the dish looks as good as it tastes. Once the dish is cooked, serve it immediately, using a spoon or spatula to transfer it from the pan to the plate. You can also sprinkle some cheese and other toppings on top to make it look more appetizing.

Conclusion

American Chop Suey is a classic American dish that is easy to make and can be customized to suit your taste preferences. By using high-quality ingredients, cooking the pasta correctly, experimenting with different sauces, adding cheese and other toppings, and serving the dish properly, you can create a delicious American Chop Suey that your family and friends will love.
