Time 10m

Number Of Ingredients 10

1kg watermelon, seedless and cut into chunks (35oz.)
250g feta cheese, cut into cubes or crumbled (9 oz.)
a bunch of mint, leaves only, chopped
1 small red onion, finely sliced
100g Kalamata olives, pitted (4 oz.)
1 small cucumber, peeled and diced (optional)
1/4 of a cup extra virgin olive oil
2 tbsps lemon juice
1 tsp brown sugar
salt and pepper to taste

Steps:

  • To prepare this watermelon feta salad recipe start by removing the rind and seeds from the watermelon, and cut into triangular chunks. Cut the feta cheese into small cubes, or bigger if you prefer, and place both into a large bowl. Slice the onions into paper-thin slices and place in the bowl with the rest of the ingredients, add the chopped mint leaves and the kalamata olives and set aside. (If you choose to prepare this watermelon feta salad recipe using cucumber too, then peel and slice the cucumber into half-moons and place in the bowl with rest of the ingredients).
  • Prepare the dressing for the watermelon feta salad. In a small bowl add the olive oil, lemon juice and brown sugar and season. Whisk the ingredients to combine, taste and adjust the seasoning.
  • Pour the dressing over the watermelon feta salad and toss to coat.
  • Divide the watermelon feta salad among individual serving plates and serve immediately. Enjoy!

WATERMELON AND FETA SALAD

Watermelon and Feta Salad image

A take on the Mediterranean combination of watermelon and feta, this refreshing zinger of a salad couldn't be more perfect. Unassumingly simple, the sweet melon, salty cheese and fragrant basil reach their peak when doused with white balsamic vinegar and dribbled with fruity olive oil. Rather than building tall, this salad builds wide - so use a large platter for the most dramatic presentation. Vinegared watermelon does not keep its crisp, juicy texture well, so be sure to dress it (and eat it) the moment the last basil leaf falls.

AMAZING WATERMELON GREEK SALAD WITH FETA

Amazing Watermelon Greek Salad With Feta image

This refreshing salad will surprise you and your guests with how well the flavours work together. At first, it might seem strange, but one taste and you will be hooked. The cool, crunchy watermelon is the perfect base for the pungent, greek flavours - it's a perfect balance of savoury and sweet. A similar salad was served to me at a cafe a few years back. I had always remembered it and finally decided to try to recreate it. This is about as close to the original I could get. :) ***note*** Feel free to experiment with flavours. Try adding in some fresh basil OR fresh mint in place of the balsamic vinegar. Or leave out the vinegar altogether.

Time 10m

Yield 6 serving(s)

Number Of Ingredients 8

3/4 cup red onion, thinly sliced
1 tablespoon fresh lime juice
6 cups seedless watermelon, cubed
3/4 cup feta cheese, cubed (or crumbled)
1/2 cup black olives, pitted and halved (or use sliced ripe olives)
2 tablespoons extra virgin olive oil
balsamic vinegar, to taste
fresh parsley, chopped, to garnish

Steps:

  • In a small bowl, cover the onion slices with the lime juice. The acid in the lime juice will help to mellow the onion a bit.
  • In a large salad bowl, combine the watermelon, feta, olives, and onions (without the lime juice, but save the juice for the vinegrette) Set aside.
  • Wisk together the reserved lime juice, olive oil and as much balsamic vinegar to suit your taste and preferences. Keep in mind there is quite a bit of flavour in the salad from the feta and olives so just 1 or 2 tbsp usually does the trick.
  • Pour vinegrette over melon mixture and toss. Garnish with freshly chopped parsley.
