CHOCOLATE AMARETTO ICE CREAM CAKE

Chocolate Amaretto Ice Cream Cake image

I saw a version of this cake made by Rachel Ray on her 30 minute meals show and decided to try playing around with it at home. I loved how easy this was to put together and it doesn't look bad either! It sure does taste wonderful! I bet you could do all sorts of liqueur and ice cream combos in this or even add just syrups and fruits in it or nuts. Very versatile! Cook time includes freeze time!

Categories     Frozen Desserts

Time 1h5m

Yield 4-6 serving(s)

Number Of Ingredients 4

4 scoops chocolate ice cream (slightly softened)
1 angel food cake (rectangular store bought)
amaretto liqueur
cocoa powder

Steps:

  • NOTE: I just wanted to mention that the angel food cake I bought was in the bakery section of my grocery store and came in a rectangular size about the size of a loaf pan. You may have to fiddle around with the cuts if you can't find it that way. I also used NO SUGAR ADDED triple chocolate ice cream.
  • Line a loaf pan with plastic wrap leaving a good size overhang on both sides. This will allow you to pull it out later with ease, as well as to wrap it up.
  • Cut your rectangular cake lengthwise into 4 even slices. Cut 1 of the slices again lengthwise in half. Cut a second slice in half the other direction. These are your building blocks for the cake.
  • Lay one of the full slices on the bottom on the loaf pan. Place the 2 smaller pieces on the ends, and the 2 longer half slices on the sides. You should have a sort of cake shell now.
  • Drizzle amaretto liqueur all over the cake pieces, holding your fingers over the bottle so it doesn't come out to fast. Soak it as little or as much as you'd like!
  • Scoop 4 heaping scoops of ice cream into the center of the cake shell.
  • Drizzle more amaretto liqueur onto the last slice of cake and place it on the top shutting the ice cream inches Then fold the plastic wrap over it and press to really close it all together.
  • Place in freezer for at least an hour to let the ice cream freeze back up and serve in slices with cocoa powder sprinkled over each piece!

Categories     Dessert     Freeze/Chill     Kahlúa     Marsala     Bon Appétit     Kidney Friendly     Peanut Free     Tree Nut Free     Soy Free

Yield Makes 14 to 16 servings

Number Of Ingredients 12

2 teaspoons unflavored gelatin
1/2 cup Marsala
6 large egg yolks
3/4 cup sugar
2 8-ounce containers mascarpone cheese
3/4 cup whipping cream
1 cup hot water
1/4 cup Kahlúa or other coffee liqueur
4 teaspoons instant espresso powder
26 (about) Champagne biscuits (4-inch-long ladyfinger-like biscuits) from two 3.5-ounce packages
2 tablespoons unsweetened cocoa powder
Amaretto Ice Cream

Steps:

  • Sprinkle gelatin over Marsala in medium metal bowl. Let stand 5 minutes to soften. Whisk in egg yolks and 1/2 cup sugar. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water). Whisk constantly until candy thermometer registers 165°F, about 5 minutes. Remove bowl from over water. Gradually add mascarpone, whisking vigorously until well blended. Beat whipping cream with remaining 1/4 cup sugar in large bowl to peaks. Fold into mascarpone mixture.
  • Whisk 1 cup hot water, Kahlúa, and espresso powder in another medium bowl to blend. Dip half of Champagne biscuits, 1 at a time, into coffee mixture. Place enough dipped biscuits over bottom of 9-inch-diameter springform pan to cover, cutting biscuits to fit if necessary. Pour half of mascarpone mousse over ladyfingers. Dip remaining biscuits into coffee mixture, 1 at a time, and arrange atop mousse. Spoon remaining mascarpone mixture over. Sift 2 tablespoons cocoa powder over. Cover with plastic wrap and refrigerate overnight. Release pan sides. Cut into wedges and serve with Amaretto Ice Cream.

LIGHT CHERRY AMARETTO CHEESECAKE ICE CREAM

Light Cherry Amaretto Cheesecake Ice Cream image

This is a lightly sweet mild cheesecake-flavored ice cream with all the richness, but with less fat. Cook time includes the time it takes for the ice cream machine to freeze the mixture, but does not include chill time. Thank you to 2Bleu for putting this in her best of 2009 cookbook!

Provided by Maito

Categories     Frozen Desserts

Time 55m

Yield 4-6 serving(s)

Number Of Ingredients 13

2 egg yolks, beaten
6 tablespoons sugar
2 cups nonfat milk (or low-fat)
4 ounces light cream cheese spread
2 ounces mascarpone cheese
1 tablespoon raspberry jam (or cherry or strawberry)
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/4 teaspoon almond extract
2 tablespoons Amaretto
6 low-fat graham crackers, broken into small pieces (3 full sheets)
2 cups fresh cherries, stemmed, pitted, and quartered
1/4 cup toasted sliced almonds

Steps:

  • In a small bowl, add 2 tablespoons sugar to beaten egg yolks. Whisk well.
  • In a medium pot, combine remaining 4 tablespoons sugar with milk, and bring almost to a simmer over high to medium-high heat.
  • Scoop out a small amount of hot milk to temper the egg yolks (about ¼ cup); slowly whisk into egg yolks. Repeat this one more time.
  • Add egg mixture to pot of hot milk and whisk thoroughly. Cook, stirring constantly, over medium to medium low heat until thickens and coats the back of a spoon, about 3-5 minutes. Do not let mixture boil. Remove from heat.
  • In a large mixing bowl (an electric mixer works best), beat cream cheese and mascarpone until well whipped. Add jam, lemon juice, extracts, and Amaretto, and beat to combine. On low speed, gradually beat in hot milk mixture. Cream cheese will not be completely dissolved/smooth - that is OK.
  • Let mixture cool before chilling in the refrigerator. This takes about 10 minutes if you place the container in a bowl filled with ice and cold water. Chill in the refrigerator for at least 3 hours.
  • Stir mixture to re-combine and freeze in an ice cream machine, according to manufacturer's directions. In the last minute or two of freezing, add the graham cracker pieces.
  • Serve immediately or freeze for 1-4 hours, if a firmer consistency is desired. Top with cherries (and almonds, if using) and enjoy! This is best eaten the same day you make it.

Amaretto ice cream is a classic and delicious dessert that is perfect for any occasion. It is smooth, creamy, and has a rich almond flavor that is both refreshing and satisfying. Different authentic amaretto ice cream recipes use different ingredients that create unique tastes and textures. Some recipes are simple and may require only a few ingredients, while others are elaborate and need more preparation. Regardless of the recipe, making amaretto ice cream takes patience and attention to detail.

Ingredients

The base ingredients of amaretto ice cream are usually eggs, heavy cream, milk, and sugar. The amaretto flavor comes from adding almond extract or amaretto liqueur to the mixture. Some recipes may include additional ingredients such as chopped almonds, vanilla extract, or cinnamon. When making amaretto ice cream, it is recommended to use high-quality ingredients to ensure the best taste and texture.

Preparation

Making amaretto ice cream requires a few simple steps. First, whisk the eggs and sugar together in a bowl until the mixture becomes light and fluffy. Next, heat the heavy cream and milk over medium heat in a saucepan until it becomes warm, but not boiling. Gradually pour the warm milk mixture into the egg mixture while whisking continuously. Once the mixture is combined, transfer it back into the saucepan and cook over low heat for about 8-10 minutes until it thickens. Be careful not to boil the mixture.
Flavoring
Once the mixture thickens, remove it from the heat and add the almond extract or amaretto liqueur. Mix well to ensure that the flavor is evenly distributed. At this stage, some recipes may require the addition of other flavors such as vanilla extract or cinnamon. Stir in the additional flavors until the mixture is well combined.
Churning
Once the mixture is complete, transfer it to the refrigerator and chill for a few hours, or overnight. Next, pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions. This process can take anywhere from 20-40 minutes, depending on the ice cream maker. The goal is to achieve a smooth and creamy consistency. Once the churning is complete, transfer the ice cream to a freezer-safe container and freeze for at least 4 hours, or until the ice cream is completely firm.

Variations

There are many different variations of amaretto ice cream that can be made. Some recipes may use chopped almonds or other nuts to give the ice cream a crunchy texture. Other recipes may include chocolate chips, caramel sauce, or fresh fruit to add a burst of flavor. Additionally, some recipes may call for the use of whipped cream or condensed milk to make the ice cream even richer.

Serving Suggestions

Amaretto ice cream can be enjoyed in many different ways. It can be served on its own, with a drizzle of caramel or chocolate sauce, or as a topping for pie or cake. It can also be used to create delicious floats or milkshakes. When serving amaretto ice cream, it is recommended to let it sit at room temperature for a few minutes before scooping to allow it to soften and become easier to serve.

Conclusion

Amaretto ice cream is a classic dessert that is loved by many for its rich, smooth texture and almond flavor. Making amaretto ice cream requires a few simple steps, but patience and attention to detail are key to achieving the perfect consistency and flavor. With the use of high-quality ingredients and some creativity, it is possible to create a variety of delicious and unique variations of this classic dessert.

If you're looking to make your own Amaretto ice cream, you've come to the right place. In this article, we'll be sharing valuable tips to help you make the perfect Amaretto ice cream, from selecting the right ingredients to the cooking and freezing process.

Choosing the right ingredients

The first step in making great Amaretto ice cream is choosing the right ingredients. Here are a few tips to help you choose the best ingredients:
1. Use high-quality cream
For the best results, you should use high-quality heavy cream when making Amaretto ice cream. The cream should have a fat content of at least 36%. This will ensure that your ice cream has a smooth and creamy texture.
2. Select fresh milk
Fresh milk is another key ingredient in making Amaretto ice cream. It's best to use whole milk, as it will give your ice cream a richer flavor.
3. Choose the right Amaretto liqueur
The type of Amaretto liqueur you use will greatly affect the flavor of your ice cream. It's best to choose a high-quality Amaretto with a smooth and sweet flavor. Some popular brands of Amaretto include Disaronno and Lazzaroni.
4. Use high-quality vanilla extract
Vanilla extract is another key ingredient in making Amaretto ice cream. Use high-quality vanilla extract to enhance the flavor of your ice cream. Avoid using imitation vanilla extract, as it may give your ice cream an artificial taste.

Preparing the ingredients

After selecting the right ingredients, the next step is to prepare them. Here are a few tips to help you prepare your ingredients for Amaretto ice cream:
1. Chill your ingredients before use
It's important to chill your cream and milk before using them in your ice cream recipe. This will help to prevent the mixture from curdling and will ensure that your ice cream has a smooth texture.
2. Mix your Amaretto and vanilla extract together
Before adding your Amaretto liqueur and vanilla extract to the mixture, you should mix them together in a separate bowl. This will help to distribute the flavors evenly throughout the ice cream.
3. Use a fine-mesh strainer
When adding your ingredients to the mixture, it's best to use a fine-mesh strainer to remove any lumps or debris. This will ensure that your ice cream is smooth and creamy.

The cooking process

Now that you have your ingredients prepared, it's time to start cooking. Here are a few tips to help you during the cooking process:
1. Heat your milk and cream gently
When heating your milk and cream, it's important to do so gently. Overheating your mixture can cause it to curdle and ruin the texture of your ice cream.
2. Use a low heat setting
It's best to use a low heat setting when cooking your mixture. This will help to prevent it from overheating and curdling.
3. Stir constantly
Stirring your mixture constantly will help to ensure that it cooks evenly and doesn't burn at the bottom of the pan. Use a whisk or a spatula to stir your mixture as it cooks.

The freezing process

The last step in making Amaretto ice cream is the freezing process. Here are a few tips to help you achieve the perfect texture:
1. Chill the mixture before freezing
Before freezing your mixture, it's important to chill it in the refrigerator for at least 2 hours. This will help to ensure that it freezes evenly and doesn't form ice crystals.
2. Use an ice cream maker
Using an ice cream maker will give your Amaretto ice cream a smooth and creamy texture. Follow the instructions that come with your ice cream maker for the best results.
3. Freeze your ice cream container before use
It's best to freeze your ice cream container before adding your Amaretto ice cream mixture. This will help to keep your ice cream frozen and prevent it from melting too quickly.

Conclusion

Amaretto ice cream is a delicious and unique treat that you can easily make at home. By following the tips in this article, you'll be able to make the perfect Amaretto ice cream that will have your friends and family asking for seconds. Remember to choose high-quality ingredients, prepare them carefully, cook your mixture gently, and freeze it properly for the best results. Enjoy!
