3 tablespoons flour (all-purpose)
2 teaspoons Hungarian sweet paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon rubbed sage
1-1/2 teaspoons kosher salt
1/2 teaspoon black
Pepper (freshly ground)
6 boneless breast halves
1 tablespoon olive oil
1 tablespoon butter
1 can/6 1/4 ounces frozen orange juice concentrate mixed with 3 ounces water (half of the emptied orange juice can)
1 cup amaretto liqueur
1 1/2 tablespoons Dijon mustard
Chopped parsley for garnish (optional)

Steps:

  • Preheat oven to 350 F. Line a 9 x 13-inch baking pan with nonstick foil.
  • Whisk together flour, paprika, onion powder, garlic powder, sage, salt, and pepper.
  • Sprinkle mixture evenly over both sides of chicken breasts.
  • Heat a large, heavy skillet over medium-high heat.
  • Add olive oil and butter, swirling to combine and coat the bottom of the pan.
  • Sear the chicken breasts on both sides until golden, turning only once. (Do this in two batches if need be.)

4 boneless and skinless chicken breasts
Dish of water
1 1/2 tablespoons curry powder
1 1/2 cups all-purpose flour
Peanut oil, for frying
2 1/2 cups chicken broth or use 1 tablespoon of chicken paste with 2 1/2 cups water
2 tablespoons all-purpose flour
4 tablespoons almond-flavored liqueur (recommended: Amaretto)
Olive oil, for sautéing
4 portobello caps, sliced thin
1 garlic clove, sliced

Steps:

  • In a large heavy-bottomed pot, add 1/2-inch of oil and heat to 325 degrees F. Dip chicken in water, sprinkle curry on both sides, roll in flour and repeat for remaining chicken breast. Fry chicken in oil for 3 to 5 minutes on each side or until juices run clear when pierced. Remove to a paper towel-lined plate.
  • In a separate pot bring the broth to a boil. Sift the flour directly into the stock, and immediately start whisking. Continue to boil on medium heat until sauce starts to thicken. Stir in the liqueur.
  • In a separate skillet, heat 1 tablespoon of olive oil. Add the portobello slices and the garlic. Saute until mushrooms are tender.
  • Place chicken breast on plate, top with mushrooms, and then cover with the sauce.

3 chicken breasts
1/2 cup seasoned flour
2 tablespoons clarified butter
1 cup Amaretto, divided
2 cups chicken stock
3 cups milk
1 red pepper, diced
1 tablespoon brown sugar
1 tablespoon olive oil
1 onion, diced
1/2 carrot, diced
1 stalk celery, diced
salt and pepper, to taste
1/4 cup toasted almond (optional)
3 tablespoons chopped parsley (optional)

Steps:

  • Cut chicken in half-inch cubes; dredge in seasoned flour; saute in clarified butter on high heat; deglaze with 1/2 cup Amaretto and put to the side.
  • Make mirepoix: Saute onion in olive oil until translucent; add carrot and celery; saute until soft and season to taste with salt and pepper.
  • Heat chicken stock and add the mirepoix; add the milk or cream. Cook until is has reduced by 25% and then add sugar, 1/2 cup amaretto and the chicken cubes.
  • Simmer 20 minutes, then add red pepper and serve, garnished with toasted almonds and chopped parsley if desired.

I can't believe how great this was! It came from allrecipes.com. I'm not an onion fan so I used 1/2 boiling onion instead of green onions and I didn't have any tarragon so I used parsley for color mainly. I also used a jar of Green Giant sliced mushrooms. I love garlic bu t3 cloves sounded like a lot so I used 1 large clove crushed.

1/2 cup butter (divided in half)
3 -4 boneless chicken breast halves
3 green onions, diced
1 lb fresh mushrooms, sliced
1/2 teaspoon fresh tarragon
3 garlic cloves, crushed
1 cup heavy cream
1 cup shredded gruyere, cheese
1/2 cup amaretto liqueur
1/4 cup capers

Steps:

  • Melt 1/4 cup of the butter in large skillet over med high heat.
