LEMONY TAPIOCA PUDDING

Lemony Tapioca Pudding image

I was watching one of my favorite Food TV shows, "Good Eats", one night. Alton Brown was making tapioca pudding. Well, I knew that my wife LOVES tapioca pudding so I decided to whip up a batch. She thought it was GREAT. There were a couple of things that I wanted to change about it. First, while the fat content was about right, the sugar was low. Also there was no vanilla. I fixed that part of it, yet one problem remained. The problem is not in the recipe but the scarcity of one ingredient. That ingredient was pearl tapioca. We have some great grocery stores here, but finding pearl tapioca was difficult. I then took it upon myself to come up with the new version of my recipe.

LOW-CAL TAPIOCA PUDDING

Low-Cal Tapioca Pudding image

Based on Alton Brown's recipe, using non-fat milk and sugar substitute. Works best with Splenda brand, but NutraSweet or SweetOne can be used easily. (The cooking time after adding the sweetener is not really long enough to break down the aspartame; if it's not sweet enough for you, you might add an extra packet.)

Provided by DrGaellon

Categories     Dessert

Time 10h25m

Yield 2 cups, 4 serving(s)

Number Of Ingredients 8

3 1/2 ounces large pearl tapioca (approximately 1/2 cup)
2 cups cold water
2 1/2 cups nonfat milk
1/2 cup heavy cream
1 egg yolk
6 (1 g) packets sugar substitute (up to 9 packets, to taste)
1 lemon, zest of
1 pinch salt

Steps:

  • Soak tapioca, covered, in cold water overnight. Drain well and place into slow cooker.
  • Add milk, cream and salt. Cook on high 2 hours, stirring occasionally.
  • In a small bowl, whisk sugar substitute into egg yolk. Temper small amounts of pudding base (1-2 tbsp at a time) into egg yolk to bring the temperature up slowly. When you've added about 1 cup of pudding base, transfer back into slow cooker. Add lemon zest, stir to combine and cook an additional 15 minutes.
  • Transfer to a medium bowl. Place a layer of plastic wrap down so it touches the surface of the pudding (to prevent a skin from forming), cool at room temperature for about 1 hour, then refrigerate. Serve cold.
  • Substitutions: You can use 3 cups whole milk in place of the skim milk and heavy cream; the fat content will be about the same. Do not use all skim milk - it will be flat and the flavors will be very muted.
  • Substitutions: You can leave out the lemon zest and use 1 1/2 tsp good, pure vanilla extract. You could also add 1 tbsp Dutched cocoa powder to the egg yolk and add 2 ounces melted bittersweet chocolate when you add the tempered egg yolk to the pot. Other potential flavorants: maple syrup, Irish Cream liqueur, instant espresso powder, fruit purées -- use your imagination.

Valuable Tips When Making Alton Brown's Tapioca Pudding Recipes

Tapioca pudding is a creamy and delicious dessert that is commonly made with small tapioca pearls. Alton Brown, the renowned American television personality, chef, and author, has his own recipe for tapioca pudding that is widely popular among food enthusiasts. While this dessert may seem easy to make, there are a few tips that can help you perfect it. Here are some valuable tips to consider when making Alton Brown's tapioca pudding recipes:
Use the Right Ingredients
The first step in making great tapioca pudding is to use the right ingredients. While this may sound obvious, there are a few things to keep in mind. If possible, always use fresh, high-quality ingredients. This includes sweeteners like sugar or honey, milk, cream and tapioca pearls. Make sure that the tapioca pearls you use are the small pearls or the quick-cook variety. This will ensure that you get the right consistency and that the pearls cook evenly.
Pre-soak the Tapioca Pearls
Pre-soaking the tapioca pearls is an important step when making tapioca pudding. This helps soften the pearls and makes them more plump and tender. You should soak the pearls in water for at least half an hour to an hour before cooking them. Soaking the pearls in milk will add some extra creaminess to the pudding.
Stir Consistently
Stirring is the key to success when making Alton Brown's tapioca pudding recipes. You should begin by stirring the pudding constantly while cooking it on the stovetop. This will help prevent the tapioca pearls from sticking to the bottom of the pot and ensure that they cook evenly. Be patient and make sure you're stirring at regular intervals until the pudding has thickened and the pearls are tender.
Choose Your Toppings Wisely
While tapioca pudding is delicious on its own, adding toppings can elevate the flavor even more. Fresh fruits like berries, peaches, or mango can add some sweetness and a refreshing taste to the pudding. You can also add some chopped nuts, like almonds or pistachios, or even some coconut flakes for added crunch. Be creative and experiment with different toppings to find the perfect combination for your taste buds.
Cool the Pudding Thoroughly
Once the pudding is finished cooking, it is important to cool it completely before serving. This will allow the pudding to set properly and thicken even more as it cools. Always cover the pudding with plastic wrap or a lid before placing it in the fridge to cool. This will prevent a skin from forming on top of the pudding.
Experiment with Flavors
Alton Brown's tapioca pudding recipe is a great base to experiment with different flavors. You can add different extracts, like vanilla or almond, to give the pudding a unique taste. You can also infuse different spices like cinnamon or nutmeg to add a hint of warmth to the pudding. Be creative and experiment with different ingredients to find the perfect flavor for you.
Use a Double Boiler
Using a double boiler can help prevent the pudding from overcooking or becoming too thick. If you don't have a double boiler, you can use a heat-proof glass bowl set over a pot of simmering water. This will ensure that the pudding cooks evenly and at a controlled temperature, resulting in a silky, smooth texture.
Adjust the Sweetening
The amount of sweetener you use in your tapioca pudding will depend on your personal taste. Alton Brown's recipe calls for 3/4 cup of sugar, but you can adjust this based on how sweet you like your desserts. You can use honey or maple syrup instead of sugar, or reduce the amount of sugar altogether. Just make sure you taste the pudding as you go to make sure you're happy with the level of sweetness.
Plan for Leftovers
Alton Brown's tapioca pudding recipe makes enough for a crowd, but if you're making it for a smaller group, you may end up with leftovers. To make sure the pudding stays fresh, store it in an airtight container in the fridge. It will keep for up to 3-4 days, but it's best to consume it within two days of making it.
Conclusion
When it comes to making tapioca pudding, following Alton Brown's recipe can result in a delicious dessert. However, by following these valuable tips, you can ensure that your tapioca pudding turns out perfectly every time. Remember to use high-quality ingredients, pre-soak the tapioca pearls, stir consistently, and adjust the sweetening to your taste. Be creative with your toppings and experiment with different flavors. And most importantly, enjoy the deliciousness of your homemade tapioca pudding!
