HOT SPINACH AND ARTICHOKE DIP

Hot Spinach and Artichoke Dip image

As much as we Americans love to dip things, it's sheer madness not to make our own. This easy, cheesy, and warm spinach and artichoke variety is probably my favorite dip of all time. And I hate to admit that when it's cold and stiff, I sometimes make sandwiches out of it. Don't judge me! You can also use jarred or canned artichokes for this, but if you do, you'll want to cut the water by half. This recipe first appeared in Season 6 of Good Eats.

THE BEST SPINACH ARTICHOKE DIP

The Best Spinach Artichoke Dip image

This is our best version of the classic party dip. It's savory and creamy with a slight tang from sour cream and Parmesan -- so hard to resist. We like to use frozen whole leaf spinach and chop it ourselves for more control over the finished texture of the dish.

Time 40m

Yield 6 to 10 servings

Number Of Ingredients 11

Nonstick cooking spray
8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/4 cup mayonnaise
1 clove garlic, grated
One 10-ounce box frozen leaf spinach, thawed, drained, squeezed dry and coarsely chopped (see Cook's Note)
One 14-ounce can artichoke hearts, drained well and coarsely chopped
1/2 cup shredded whole-milk mozzarella
3/4 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper
Crackers, chips or toasted bread, for serving

Steps:

  • Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.
  • Put the cream cheese, sour cream, mayonnaise and garlic in a large bowl. Mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and 1/2 cup of the Parmesan, mixing to combine. Season with salt and pepper. Transfer the mixture to the prepared baking dish and top with the remaining 1/4 cup Parmesan.
  • Bake until the dip begins to bubble, 20 to 25 minutes. Turn the oven to broil and continue to cook, keeping an eye on it so it doesn't burn, until the top is golden brown, about 5 minutes. Serve warm with crackers, chips or toasted bread.

This dip is amazing -- so cheesy and fragrant. If you don't like artichokes, don't worry -- you'll never know they're in there! My only question is: Is it okay to just eat it with a spoon right out of the dish?

Alton Brown's Hot Spinach-Artichoke Dip Recipes: Tips for Making a Delicious and Crowd-Pleasing Dish

Spinach-artichoke dip is a classic party dish that's popular for a reason. It's creamy, savory, and can be served with a variety of dippers, making it the perfect appetizer for any occasion. However, not all spinach-artichoke dips are created equal. To make sure your dip stands out from the rest, follow these valuable tips for making Alton Brown's hot spinach-artichoke dip recipe.
Tip #1: Use Fresh Ingredients
Fresh ingredients are key when making any dish, but they're especially important when it comes to dips. For Alton Brown's hot spinach-artichoke dip recipe, make sure you're using fresh spinach, canned or frozen artichoke hearts, and freshly grated Parmesan cheese. Using fresh ingredients will make your dip taste brighter and more flavorful.
Tip #2: Squeeze the Excess Water Out of the Spinach
One of the biggest challenges when making spinach-artichoke dip is avoiding a watery end result. To prevent this, it's important to squeeze out as much excess water as you can from the spinach. After thawing frozen spinach or wilting fresh spinach, squeeze it between your hands or wrap it in a clean kitchen towel and press down firmly to remove any excess liquid.
Tip #3: Add Garlic and Onion for Flavor
Garlic and onion add depth of flavor to Alton Brown's hot spinach-artichoke dip recipe. To incorporate them into the dish, start by sautéing minced garlic and chopped onion in butter until they're soft and fragrant. Then, add the rest of the ingredients to the pan, stirring until everything is heated through and combined.
Tip #4: Use a Blend of Cheeses
A blend of cheeses adds richness and complexity to Alton Brown's hot spinach-artichoke dip recipe. Parmesan cheese is a must-have, but you can also use shredded mozzarella or Gruyere for extra creaminess and depth of flavor. Just make sure to use freshly grated cheese rather than pre-shredded, as pre-shredded cheese contains anti-caking agents that can affect the texture of your dip.
Tip #5: Serve with Various Dippers
The beauty of spinach-artichoke dip is that it can be served with a variety of dippers, from toasted baguette slices to pita chips to celery sticks. When preparing your dip, consider the preferences and dietary restrictions of your guests and offer a selection of dippers that work for everyone.
Tip #6: Keep Your Dip Warm and Fresh
Alton Brown's hot spinach-artichoke dip is best served warm, so you'll need to take steps to keep it at the right temperature throughout your party. One option is to serve the dip in a small slow cooker or fondue pot, which will keep it warm and prevent it from drying out. You can also place it in a heat-proof dish and keep it warm in the oven at a low temperature.
Tip #7: Make Your Dip Ahead of Time
To reduce stress and save time on the day of your event, consider making your spinach-artichoke dip ahead of time. You can prepare the dip up to two days in advance and refrigerate it until you're ready to serve. When the time comes, simply reheat the dip in the oven or in a slow cooker and serve with your favorite dippers.

Conclusion

Alton Brown's hot spinach-artichoke dip recipe is a surefire crowd-pleaser, but with a few simple tips, you can take it to the next level. Use fresh ingredients, squeeze out excess water from the spinach, add garlic and onion for flavor, blend your cheeses, offer various dippers, and keep your dip warm and fresh. By following these suggestions, you'll create a delicious and memorable dish that your guests will rave about for years to come.
