1/2 cup red wine
4 tablespoons sugar
2 tablespoons chocolate chips
1/4 cup olive oil
4 tablespoons almonds, chopped
1/4 teaspoon allspice
2 pears, peeled and finely chopped
1 baguette

Steps:

  • Preparation:.
  • Combine wine and sugar in saucepan and reduce over medium heat for 10 minutes.
  • Remove from heat and stir in the chocolate chips.
  • Cut baguette into 40 thin slices. Brush both sides with olive oil and broil until golden on both sides. Cool.

1/4 cup olive oil
1 (13 1/4 ounce) package alouette baby brie cheese, Original
4 tablespoons almonds, finely chopped
1/4 teaspoon allspice
2 ripe pears, peeled and finely diced

Steps:

  • Preheat oven to 350º F.
  • Combine wine and sugar in a non-reactive saucepan and reduce over medium heat for 10 minutes.

1/3 lb bittersweet chocolate, chopped (about 3 oz.)

Steps:

  • Put a small plate in the freezer for later use.
  • Peel and core pears. Dice them or use a food processor.
  • Mix the pears and lemon juice in a large sauce pan.
  • Add sugar and bring to boil. Lower heat and simmer for 20-30 minutes. Stir occasionally.
  • Chop chocolate and put aside.
  • Once you hit 20 minutes, take the plate out of the freezer and put a small amount of jam on it to test for gelling. Wait for a few seconds and then see if jam runs. If it does and you want a thick jam, cook for a few more minutes and repeat process.
