Yield 4 cups dry pancake mix (about 6 pancakes per 1 cup dry mix)

Number Of Ingredients 14

1 cup old-fashioned oats
3 cups all-purpose flour
1/4 cup sugar
2 tablespoons baking powder
2 teaspoons baking soda
3/4 teaspoon kosher salt
1/2 teaspoon finely grated lemon zest
3/4 cup vegetable oil
1 tablespoon fresh lemon juice
1 cup pancake mix
1/3 cup milk
1 large egg
Butter or nonstick cooking spray, for coating the skillet
Suggested toppings: maple syrup, butter, sliced banana, blueberries, honey.

Steps:

  • For the pancake mix: Put the oats in the bowl of a food processor and pulse a few times until chopped. Add the flour, sugar, baking powder, baking soda, salt and lemon zest and pulse a few more times to combine. Add the oil and lemon juice and pulse to moisten the dry ingredients. Store in a resealable plastic container in the refrigerator for up to 2 weeks.
  • For the pancakes: Whisk together the pancake mix, milk and egg in a medium bowl until combined.
  • Heat a large nonstick skillet over medium heat. Lightly coat the skillet with a bit of butter or cooking spray. Drop 1/4 cup batter per pancake into the skillet; you will be able to make about 3 pancakes at a time. Cook until the edges are set and the tops are bubbly, about 2 minutes. Flip and cook until the bottoms are browned, another 1 to 2 minutes. Repeat with the remaining batter. Serve warm with your favorite toppings.

However, not everyone has the time or the ingredients to make pancakes from scratch each time they want to enjoy them. That is where almost instant pancake mix recipes come in handy. In this article, we will provide tips on how to make the best almost instant pancake mix recipes, without compromising on taste or texture.

Choose the Right Mix

The first tip is to choose the right pancake mix. There are many pancake mixes available in the market, and not all of them are created equal. Look for a high-quality mix that is made with natural ingredients and has no artificial flavors or preservatives. You can also look for mixes that are specifically designed for the type of pancakes you want to make, such as buttermilk pancakes, gluten-free pancakes, or protein pancakes.

Use Fresh Ingredients

Whether you are making pancakes from scratch or using a mix, the quality of the ingredients plays a big role in the final product. Always use fresh ingredients, such as eggs, milk, and butter. If possible, use organic ingredients as they are free from pesticides and other harmful chemicals.

Measure Ingredients Precisely

When making pancake mix, it is important to measure the ingredients precisely. Too much or too little of any ingredient can affect the texture and taste of the pancakes. Use a kitchen scale or measuring cups and spoons to get accurate measurements.

Choose the Right Liquid

The type of liquid you use in your pancake mix can make a big difference in the final product. You can use water, milk, or a combination of both. Milk will make your pancakes richer and creamier, while water will result in lighter and fluffier pancakes. You can also experiment with different types of milk, such as almond milk or coconut milk, for a different flavor.

Don't Overmix the Batter

When making pancake mix, it is important not to overmix the batter. Overmixing can make the pancakes tough and rubbery. Mix the batter until the ingredients are just combined, and there are no lumps remaining.

Add Flavorings

Almost instant pancake mix recipes can be a bit plain, so it's a good idea to add some flavorings to the mix. You can add vanilla extract, cinnamon, or grated nutmeg to the dry mix. You can also add fresh fruit, chocolate chips, or chopped nuts to the batter for extra flavor and texture.

Let the Batter Rest

After mixing the batter, it's a good idea to let it rest for a few minutes before cooking. This will allow the gluten in the flour to relax, resulting in softer and fluffier pancakes. Letting the batter rest for 10 to 15 minutes is recommended.

Preheat the Pan

To get perfectly cooked pancakes, it's important to preheat the pan. Use a non-stick skillet or griddle, and heat it over medium-high heat. You can test if the pan is ready by sprinkling a few drops of water on it. If the water sizzles and evaporates immediately, the pan is ready.

Use the Right Amount of Batter

Using the right amount of batter is crucial for getting perfectly shaped pancakes. Use a ΒΌ cup measuring cup to scoop the batter and pour it on the hot pan. You can adjust the amount of batter depending on the size of the pancakes you want to make.

Cook the Pancakes

When cooking the pancakes, it's important not to overcrowd the pan. Leave some space between the pancakes to allow them to cook evenly. Cook the pancakes for 2 to 3 minutes on one side, or until bubbles start to form on the surface. Then flip the pancakes and cook for an additional 1 to 2 minutes, or until golden brown.

Keep the Pancakes Warm

To keep the pancakes warm while you cook the remaining batter, you can place them on a plate and cover them with a clean kitchen towel or aluminum foil. This will prevent them from getting cold and keep them soft and fluffy.

Conclusion

Making almost instant pancake mix recipes is a great way to enjoy delicious pancakes without spending too much time in the kitchen. By following these tips, you can make the best pancakes using pancake mix, and customize them with your favorite flavors and toppings. Whether you prefer buttermilk pancakes, gluten-free pancakes, or protein pancakes, there is a pancake mix recipe out there that will suit your taste and dietary needs.
