OLD-FASHIONED PEANUT BUTTER COOKIES

Old-Fashioned Peanut Butter Cookies image

My mother insisted that my grandmother write down one recipe for her when Mom got married in 1942: the how to make peanut butter cookies from scratch recipe. That was a real effort because Grandma was a traditional pioneer-type cook who used a little of this or that until it felt right. This treasured recipe is the only one she ever wrote down! -Janet Hall, Clinton, Wisconsin

PEANUT BUTTER HEAVEN COOKIES

Peanut Butter Heaven Cookies image

I don't remember where I got this recipe from, but it has been my go-to recipe for peanut butter cookies for the past several years. After making these I can't see myself using any other peanut butter recipe! The picture isn't from my batch of cookies, if any survive long enough the next time I make them I'll post a picture.

Categories     Cookies

Time 2h30m

Number Of Ingredients 12

1 c butter
1 c granulated white sugar
1 c firmly packed brown sugar
2 eggs
1 egg yolk
2 tsp vanilla
1 jar(s) peanut butter (18 ounces)
2 c all-purpose flour
1/2 tsp salt
1 tsp baking soda
1 c chopped (non salted) peanuts *optional*
few tsp sugar, for dusting

Steps:

  • 1. In a large mixing bowl using an electric mixer, beat butter for about 30 seconds. Add sugars and mix until smooth. Add eggs and vanilla and mix until it starts to get fluffy. Stir in peanut butter. In a separate bowl, mix flour, baking soda and salt. Stir into combined wet ingredients in portions. If you choose, stir in the finely chopped peanuts. Cover and chill for about 2 hours. I usually make my cookie dough the day before and let it chill overnight, but 2 hours is sufficient for these.
  • 2. Preheat oven to 350 degrees. Lightly grease your cookie sheets. Roll dough into about 1-inch round balls and place on cookie sheet, at least 2 inches apart. Using a fork that has been dipped in water, flatten the slightly. Sprinkle lightly with granulated or coarse sugar. Bake 12-15 minutes. I usually start checking at 10 minutes, they should look dry on top. Be very careful not to overcook!
  • 3. Allow cookies to cool a few minutes before moving them to cooling racks. Makes about 3 dozen cookies

Valuable Tips When Making Almost Heaven Peanut Butter Cookies Recipes

Peanut butter cookies are undoubtedly one of the most delicious treats you can make for yourself or your loved ones. With its rich, creamy, and nutty flavor, it brings a sense of nostalgia to anyone who tries them. However, making the perfect peanut butter cookie can be challenging, and if you don't get it right, you could end up with a dry, crumbly, or hard texture that ruins your whole baking experience. To ensure that your Almost Heaven peanut butter cookies come out perfect, here are some valuable tips to keep in mind when making the recipe.
1. Use High-Quality Ingredients
The quality of your ingredients plays a crucial role in the final outcome of your peanut butter cookies. For instance, opting for high-quality peanut butter, like organic or natural peanut butter, will give your cookies a richer and more robust flavor. Similarly, using fresh, unsalted butter rather than margarine or shortening will give your cookies the right texture and taste.
2. Don't Overmix Your Dough
When mixing your peanut butter cookie dough, it's essential not to overdo it. Overmixing the dough can lead to a dense or tough cookie that doesn't spread correctly while baking. The best way to avoid overmixing is to combine the ingredients until just blended. Also, it would be best to avoid using a mixer when combining your dry ingredients since it can quickly overwork your dough.
3. Chilling Your Dough
Chilling your peanut butter cookie dough will significantly improve the texture and taste of your cookies. By chilling the dough, you allow the gluten to relax, which reduces spread and makes your cookies more tender. Refrigerating the dough for about an hour before baking will also enhance the flavor as the flavors have time to meld together.
4. Don't Skimp On The Salt
Salt enhances the flavor of your Almost Heaven peanut butter cookies, making them taste richer and more complex. A pinch or two of salt goes a long way in bringing out the flavors of the peanut butter and sugar, so don't skimp on it.
5. Leave Enough Space Between Your Cookies
When baking your peanut butter cookies, it's essential to leave enough space between them. Peanut butter cookies tend to spread while baking, and leaving enough space prevents them from sticking together. Moreover, it ensures that the cookies bake evenly, guaranteeing a uniform color and texture.
6. Know When Your Cookies Are Done
Knowing when your Almost Heaven peanut butter cookies are done can make or break your recipe. Overbaking your cookies can lead to a dry, hard, or burnt texture. On the other hand, underbaked cookies can be too soft and easily fall apart. A good rule of thumb is to look for a golden brown color on the edges and check the centers for doneness. If it looks slightly underdone, it's okay since it will continue to cook for a few minutes once it's out of the oven.
7. Store Your Cookies Correctly
Storing your Almost Heaven peanut butter cookies correctly will keep them fresh and tasty for longer. Once your cookies have cooled to room temperature, store them in an airtight container to keep them fresh. Also, make sure to avoid stacking them on top of each other since this can lead to sticking or breaking. In conclusion, following these valuable tips when making your Almost Heaven peanut butter cookies ensures that you end up with a batch of delicious, mouth-watering treats. Always remember to use high-quality ingredients, avoid overmixing the dough, chill it, don't skimp on the salt, leave enough space between your cookies, know when your cookies are done, and store them correctly. With these tips, you're guaranteed to make the perfect peanut butter cookies every time.
