Yield Serves 6 to 8

Number Of Ingredients 16

1 1/2 pounds rhubarb, cut into 1-inch pieces (about 5 cups)
2 tart apples, such as Granny Smith (1 pound total), peeled, cored, and cut into 1/2-inch pieces (2 1/2 cups)
1 1/2 cups granulated sugar
3 tablespoons cornstarch
1/2 teaspoon grated fresh ginger
2 teaspoons fresh lemon juice
1/2 teaspoon kosher salt (we use Diamond Crystal)
1 1/2 cups unbleached all-purpose flour
1/4 cup finely ground almond flour
1/4 cup granulated sugar
1 3/4 teaspoons baking powder
3/4 teaspoon kosher salt (we use Diamond Crystal)
6 tablespoons cold unsalted butter, cut into pieces
3/4 cup heavy cream, plus more for brushing and serving
1/4 teaspoon pure almond extract (optional)
Sliced almonds and fine sanding sugar, for sprinkling (optional)

Steps:

  • Filling: Preheat oven to 375°F. In a large bowl, combine rhubarb, apples, granulated sugar, cornstarch, ginger, lemon juice, and salt. Transfer to a 2 1/2-to-3-quart baking dish or 9-by-13-inch baking pan.
  • Biscuit: Whisk together both flours, granulated sugar, baking powder, and salt. Add butter; using your fingers, work it into dry ingredients until largest pieces are the size of small peas. Add cream and almond extract; stir with a fork until a soft, sticky dough forms. Scatter in small clumps evenly over fruit in baking dish. Brush dough with cream. Sprinkle with almonds, then sanding sugar.
  • Bake until cobbler is bubbling in center and biscuits are golden brown, 55 to 60 minutes (if browning too quickly, tent with foil after about 45 minutes). Let cool on a wire rack at least 1 hour before serving warm or at room temperature, topped with more cream.

Almond rhubarb cobbler is a delicious dessert that brings together the tanginess of rhubarb and the nuttiness of almond flour. It is a simple dessert that can be enjoyed by all generations. Making a perfect almond rhubarb cobbler recipe is not a challenging task as long as you have some valuable tips. In this article, we will discuss some of the most important tips that you should keep in mind while preparing an almond rhubarb cobbler recipe.

1. Use fresh and high-quality ingredients

The first step in making a perfect almond rhubarb cobbler recipe is using fresh and high-quality ingredients. Rhubarb should be firm and crisp, and the almonds should be ground just before use. Similarly, choose high-quality almond flour that is finely ground to make the crust of the cobbler. Using fresh and high-quality ingredients will significantly improve the taste and texture of the cobbler.

2. Use a suitable baking dish

Choosing the right type of baking dish is crucial in making an almond rhubarb cobbler recipe. A larger baking dish with a wide surface area is ideal as it will allow the cobbler to cook evenly. Make sure to grease the baking dish with butter, so the cobbler doesn't stick to the bottom. You can also use parchment paper to line the dish, so the cobbler comes out easily after it cools.

3. Cut the Rhubarb into small pieces

When using rhubarb, it is essential to cut it into small pieces. This will help it cook evenly and prevent it from staying too tart. For an almond rhubarb cobbler recipe, cut the rhubarb into small chunks of approximately half an inch. This way, the rhubarb chunks will blend well with the almond flour crust, and every bite will have a balanced flavor.

4. Mix the dry ingredients well

Before adding the wet ingredients to the mix, make sure to mix the dry ingredients (almond flour, sugar, baking powder, and salt) thoroughly. This will help distribute the ingredients evenly, giving a consistent texture and taste to the cobbler. One way to achieve this is to pass the ingredients through a fine sieve, which will help remove any lumps and create a smoother texture.

5. Add enough liquids

In an almond rhubarb cobbler recipe, the liquid ingredients are what hold everything together. Make sure not to add too much or too little. Too much liquid will create a runny cobbler, while too little liquid will make the cobbler dry and crumbly. Always follow the recipe's instructions carefully, and use measuring cups to ensure accuracy.

6. Let the cobbler cool before serving

An essential step in making an almond rhubarb cobbler recipe is allowing it to cool before serving. Many people make the mistake of taking it out of the oven and serving it right away. Letting it cool for a while will help the crust set, and the filling will become more cohesive, making it easier to cut. Additionally, a warm cobbler will be very runny, and you won't be able to appreciate the texture and flavor properly.

7. Serve with toppings

Finally, to elevate the taste of your almond rhubarb cobbler, serve it with appropriate toppings. Vanilla ice cream is a classic option, but you can also serve it with whipped cream, fresh berries, or a drizzle of caramel sauce. The toppings should complement the cobbler, making it an enjoyable and satisfying dessert.
Conclusion
Making an almond rhubarb cobbler recipe is easy and straightforward, as long as you follow these valuable tips. Use fresh and high-quality ingredients, choose a suitable baking dish, cut the rhubarb into small pieces, mix the dry ingredients well, add enough liquids, let the cobbler cool before serving, and serve with toppings. By following these tips, you will be able to create a delicious almond rhubarb cobbler that will be appreciated by everyone.
