Time 1h20m

Number Of Ingredients 17

2 - 12 oz. jars maraschino cherries (drained (reserve juice), minced, squeezed VERY dry)
1 cup butter (softened)
1 cup vegetable or canola oil
1 cup granulated sugar
1 cup powdered sugar
2 large eggs
2 tsp. almond extract
2 tsp. cherry extract
4 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. cream of tartar
4 tbsp. butter (melted)
1/3 cup + 1-2 tbsp. maraschino cherry juice
1 tsp. almond extract
1 tsp. cherry extract
4 - 5 cups powdered sugar
1/2 cup slivered almonds (for garnish)

Steps:

  • As noted above, drain the maraschino cherries, reserving the juice (!), finely mince the cherries, and then pat/squeeze VERY dry. Set aside.
  • In a large mixing bowl, beat the butter, oil, and sugars until combined.
  • Beat in eggs, almond extract, cherry extract, and minced cherries.
  • In a large bowl, whisk together flour, baking soda, and cream of tartar.
  • Gradually add flour mixture to the butter mixture, beating until just combined after each addition. Do not overmix.
  • Line baking sheets with parchment paper or silicone baking mats.
  • Drop dough by teaspoonfuls onto baking sheets.
  • Bake at 375 for 8-11 minutes, or until edges and bottoms are lightly browned.
  • Remove to wire racks to cool.
  • Whisk together butter, maraschino cherry juice, and extracts.
  • Stir in 4 cups powdered sugar, mixing until smooth.
  • Add additional maraschino cherry juice or powdered sugar, as needed, to achieve a thick, but spreadable consistency. It should be thicker than a glaze, and it shouldn't run off the cookie, but should be easily spreadable.
  • Frost cookies, sprinkle with slivered almonds, decorate with additional sprinkles, if desired, and allow to set.

Ingredients

Before you start baking, it is essential to gather all the necessary ingredients to avoid any last-minute hassle. For this recipe, you will need the following ingredients:
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 cup maraschino cherries, chopped
  • 1/2 cup white chocolate chips
  • 1/2 cup sliced almonds
  • 1 cup confectioner's sugar
  • 2-3 tbsp milk

Instructions

Once you have gathered all the ingredients, it's time to start baking. Follow these valuable tips to ensure that your almond glazed cherry chip sugar cookies turn out perfect every time.
1. Softened Butter is Key
Softened butter is a crucial ingredient when it comes to baking sugar cookies. It helps create that soft and chewy texture that we all love. When you are baking this recipe, ensure that you use softened butter, as hard butter can ruin the texture of the cookies. To soften the butter, place it in a bowl and leave it at room temperature for about 30-45 minutes. You can also use the microwave to soften it, but it needs to be done cautiously.
2. Don't Over-mix the Cookie Dough
Over-mixing the cookie dough can result in tough and dry cookies. When preparing the cookie dough, ensure that you mix it until all the ingredients are combined. Over-mixing the dough can lead to gluten formation, which can make the cookies dense.
3. Chop the Maraschino Cherries into Small Pieces
When adding the cherries to the dough, it is essential to chop them into small pieces. This not only makes them easier to mix into the dough but also ensures that they are evenly distributed throughout the cookies.
4. Use Fresh Baking Powder
Baking powder is an essential ingredient when it comes to making cookies. It helps the cookies rise and become fluffy. However, if the baking powder is old or expired, it won't be effective in the recipe. Always ensure that you use fresh baking powder to ensure that the cookies turn out fluffy and light.
5. Bake the Cookies at the Right Temperature
Baking cookies requires skill and precision. The temperature of your oven plays a vital role in baking perfect cookies. When baking these almond glazed cherry chip sugar cookies, set your oven temperature to 350°F. This temperature will yield perfectly baked cookies with a crispy exterior and a soft and chewy interior.
6. Don't Over-bake the Cookies
Over-baking the cookies can make them dry and hard. To ensure that your cookies turn out perfectly, bake them for 10-12 minutes. Remove them from the oven immediately after baking and place them on a cooling rack to cool completely.
7. Drizzle the Almond Glaze with Care
The almond glaze is what sets these cookies apart from the rest. It provides a sweet and nutty flavor that complements the cherries and white chocolate chips perfectly. When making the glaze, ensure that it's not too runny, as it can make the cookies soggy. Drizzle the glaze over the cooled cookies with care to ensure that each cookie is coated evenly.

Conclusion

In conclusion, the almond glazed cherry chip sugar cookies recipe is an excellent way to indulge in some sweet treats. Follow these valuable tips to ensure that your cookies turn out perfect every time. From using softened butter to chopping the cherries into small pieces and using fresh baking powder, these tips will help you make the best cookies ever. Happy baking!
