2 cups milk chocolate chips
1 tablespoon shortening

Steps:

  • Line a 9x13 inch baking pan with parchment paper. Set aside. Put chopped almonds In a skillet. Cook, stirring often over medium high heat, until golden brown. Remove from heat.
  • In a metal bowl over a pan of simmering water, melt chocolate chips and shortening until smooth. Remove from heat and stir in 1/2 the toasted almonds. Spread onto the prepared baking pan. Sprinkle with remaining almonds, and chill 30 minutes, or until solid. Break into bite-size pieces to serve.

3 tablespoons butter
1 teaspoon almond extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
  • Roast almonds on 1 baking sheet in the preheated oven, stirring occasionally, until toasted, about 10 minutes.
  • Microwave white chocolate melting wafers and butter in a microwave-safe bowl on medium-high for 1 minute 30 seconds; stir. Microwave until completely melted, 20 to 30 seconds more. Add almond extract and stir until smooth. Stir in toasted almonds.

Butter, for the baking sheet, optional
1 pound bittersweet chocolate, chopped
1 1/2 cups whole almonds, toasted (see Cook's Note)
Sea salt, for sprinkling

Steps:

  • Butter a baking sheet or use a silicone baking mat (preferred).
  • Bring about 1 inch of water to a simmer in a medium saucepan with a bowl fitted to sit just above the simmering water. Add the chocolate. When the chocolate is melted, remove the bowl from the heat and stir in the almonds. Spread on the baking sheet in a thin uniform layer. Let set for 5 minutes, then sprinkle with the salt. Chill in the refrigerator until firm, at least 2 hours.
  • Break the bark into 1- to 2-inch pieces. Store in a cool, dry place, stacked between layers of foil or parchment in an airtight container. The bark will keep, tightly sealed in your pantry, for up to a week.

Nonstick vegetable oil spray

1/4 cup dark corn syrup
3 tablespoons water
3 tablespoons unsalted butter
2 cups chilled heavy whipping cream, divided

Steps:

  • For crust:
  • Preheat oven to 350°F. Finely grind graham crackers in processor. Mix in sugar. Add butter; mix to blend. Press onto bottom and up sides of 10-inch-diameter glass pie dish. Bake until light brown around edges, about 12 minutes. Cool completely.
  • For filling:
  • Whisk first 9 ingredients in medium bowl. Slightly soften ice cream in microwave in 10-second intervals. Measure 1 cup ice cream; cover and freeze (reserve for another use). Spoon remaining ice cream into large bowl. Working quickly, add pumpkin mixture and fold just until swirled into ice cream (do not blend completely). If ice cream begins to melt, freeze until almost firm. Spoon ice cream filling into cooled crust, cover with plastic, and freeze until firm, at least 6 hours. DO AHEAD: Can be made 2 days ahead. Keep frozen.
  • For bark, sauce, and topping:
  • Line baking sheet with parchment paper; spray with nonstick spray. Stir chocolate in bowl set over saucepan of simmering water until melted and smooth. Pour onto baking sheet. Using offset spatula, spread chocolate in even layer into 12x9-inch rectangle. Sprinkle with nuts. Place in freezer until hard, at least 30 minutes. Invert onto work surface. Peel off paper. Coarsely chop. Place DO AHEAD: Chocolate-almond bark can be made 2 days ahead. Keep frozen.
  • Bring brown sugar, corn syrup, 3 tablespoons water, and butter to boil in heavy medium saucepan, stirring until butter melts and sugar dissolves. Reduce heat to medium and boil until dark brown, stirring occasionally, about 5 minutes. Carefully stir in 1/2 cup cream, vanilla, and salt (mixture will bubble vigorously). Boil 1 minute longer.   • Using electric mixer, beat 1 1/2 cups cream and 2 tablespoons sugar in medium bowl until peaks form. Spoon decoratively over pie. Sprinkle chocolate-almond bark over. Cut pie into wedges and serve, passing warm sauce alongside.

Chocolate bark:
4 ounces bittersweet chocolate, chopped

Steps:

  • For ganache filling:
  • Simmer cream and sugar in medium saucepan, stirring to dissolve sugar. Add chocolate; whisk until smooth. Chill until just spreadable, about 6 hours.
  • For almond cake:
  • Preheat oven to 350°F. Butter three 9-inch-diameter cake pans with 1 1/2-inch-high sides. Line bottoms with parchment paper; dust pans with flour. Whisk flour, baking powder, and salt in bowl. Using heavy-duty mixer, blend brown sugar and butter in large bowl. Beat in almond paste 1 piece at a time, then beat until smooth. Add eggs 1 at a time, beating well after each addition. Beat in extracts. Fold in dry ingredients. Divide batter among pans; smooth tops. Bake cakes until tester inserted into centers comes out clean, about 25 minutes. Cool cakes in pans on rack.
  • For almond praline:
  • Line baking sheet with foil. Stir sugar and 1/4 cup water in heavy medium saucepan over medium-low heat until sugar dissolves. Increase heat; boil without stirring until deep amber, swirling pan and brushing down sides with wet pastry brush occasionally. Mix in nuts. Pour onto foil; cool. Peel foil off praline. Chop praline coarsely. DO AHEAD Praline can be made 1 day ahead; store airtight at room temperature.
  • For mascarpone frosting:
  • Beat all ingredients in large bowl just to soft peaks (do not overbeat or mixture will curdle).
  • Run knife around pan sides to loosen cakes. Turn cakes out; peel off paper. Place 1 cake layer on platter. Spread half of ganache over; sprinkle with 1/4 cup praline. Top with second cake layer. Spread remaining ganache over; sprinkle with 1/4 cup praline. Top with third cake layer. Spread frosting over top and sides of cake. DO AHEAD Cake can be made 1 day ahead; cover with cake dome and chill. Store remaining praline airtight at room temperature.
  • For chocolate bark:
  • Line baking sheet with foil. Melt chocolate in small bowl set over saucepan of simmering water. Stir until smooth. Remove from over water. Drizzle all but 1 tablespoon chocolate over foil in thick (about 1-inch-wide) zigzag lines (chocolate will pool in spots). Sprinkle 3 tablespoons praline over chocolate; chill bark until firm, about 1 hour.
  • Press praline around bottom 2 inches of cake; sprinkle more atop. Peel foil off bark; break into pieces. Press edges into frosting atop cake. Remelt 1 tablespoon chocolate over simmering water, stirring often. Using spoon, drizzle chocolate over cake. DO AHEAD Chill up to 4 hours. Serve cold or at room temperature.

Use your favorite bittersweet chocolate for this one since the chocolate is what really makes this great. I don't remember where this recipe came from but you can mix it up by using a different type of nut or even using more or less chocolate.

1 cup bittersweet chocolate, finely chopped
3/4 cup cashews or 3/4 cup brazil nut

Steps:

  • Finely chop your chocolate so that it melts evenly and quickly.
  • Add your chocolate to a double broiler until the chocolate is warm and melty. You don't want to get the chocolate too warm and it is not necessary for this recipe.
  • Once the chocolate is melted, mix in your almonds.
  • Stir well to ensure the almonds are completely coated.
  • Once well coated place the chocolate mixture to a baking sheet covered with wax paper.
  • Spread the mixture out evenly to cool.
  • It takes about two hours or so to completely cool enough to break the bark.

3/4 cup almonds, toasted and chopped
3/4 cup dried cherries
12 ounces semisweet chocolate, chopped
8 ounces white chocolate, chopped

Steps:

  • In a small bowl, combine the almonds and cherries; set aside.
  • Melt the semisweet chocolate over low heat in a 2 quart saucepan, stirring constantly. In a 1 quart saucepan, melt the white chocolate over low heat, stirring constantly. Remove both saucepans from the heat.
  • Stir half of the almond mixture into the semisweet chocolate. On a large cookie sheet, spread semisweet chocolate mixture to about 1/4" thickness. Drop the white chocolate by tablespoons onto the semisweet chocolate mixture. With the tip of your knife, swirl chocolates together for a marbles look. Sprinkle with the remaining almond mixture.
  • Refrigerate at least 1 hour or until firm. Break the bark into pieces. Store in the fridge for up to 1 month (believe me, it won't last that long!).

DARK CHOCOLATE ALMOND AND CRANBERRY BARK

1 bag 12 ounces Hershey's special dark chips (or 24 ounces for bigger pan)
1/2 cup unsalted toasted almonds (fairway) (1 cup for double recipe)
1/2 cup dried cranberries (1 cup for double recipe)

Steps:

  • LIne 8x8 WS baking pan (or 11 x 17 baking sheet if doing 2 bags of choc) with parchment paper, leaving overhangs on all sides; spray underneath with pam organic canola
  • Melt chocolate in medium pyrex (largest for double recipe) in the microwave. Start at 1 minute, 50% power, and then increments of 30 seconds or less near end.
  • Take off heat and stir occasionally while cools a bit.
  • When it is just warm and not hot, stir in almonds and cranberries.
  • Pour in pan and spread with small offset spatula. Make swirls on top.
  • Refrigerate 50 minutes until pretty set. Lift with parchment overhang. Let sit a few minutes if seems like it will crack when cutting.
  • Cut with 10 inch chef's knife. For 8 inch pan, 3 by 3, and then diagonally to get 18 triangles. Lift each piece with medium offset or hands. (For double, may need to transfer to wax lined volrath to go back in fridge to fully set after cutting.)
  • Store in airtight containers lined with wax paper in fridge.
  • actually, this chocolate tastess chalky in finish even day 2, so just stick with my ghir bittersweet and milk chocolate mix.

2.5 cups white chocolate chips
1.5 cups heavy cream

Almond Bark
Yields: 2.5 pounds of candy or 40 to 50 rough 2-inch pieces

.5 cup sliced almonds
4 cups fine-quality bittersweet chocolate chips
3 cups fine-quality white chocolate chips

Steps:

  • Scatter the bread cubes in a 9x13-inch glass baking dish. Set aside. In a heavy 3-quart saucepan, combine the cream, milk, and 1.5 cups sugar. Cut the piece of vanilla bean in half lengthwise, and scrape the tiny beans into the cream mixture. Bring the cream mixture to a simmer over medium-high heat, whisking constantly until the sugar dissolves, then whisking occasionally. Add the chocolate chips and continue cooking until the chocolate is melted, about two minutes more, whisking frequently and being sure to scrape the pan bottom clean as you whisk. Remove from heat. In a large mixing bowl, lightly whisk the eggs until frothy. Very slowly add the chocolate mixture to the eggs, whisking constantly so the eggs don't curdle. Pour this custard mixture over the bread. Let the custard sit until cool enough for you to put your hands in it, about 10 minutes. Once the custard is cool enough, toss the bread cubes with your hands, squeezing the cubes in the liquid to make sure all are well saturated. Cover and refrigerate overnight. About 3 hours before baking the pudding, remove the pan of pudding from the refrigerator, and evenly sprinkle the top with ¼ cup sugar. Let the pudding sit at room temperature for 45 minutes. Meanwhile, preheat the oven to 300°F. Once the pudding has sat 45 minutes, seal the baking dish with aluminum foil. Bake until a toothpick comes out almost clean and the pudding looks solidified with no puddles of liquid on the surface, about 2 hours. Once done, it will also start developing a few small, shallow cracks on top and there will be an irresistible smell of chocolate emanating from the oven. Remove the pudding from the oven & let sit for 15 mins at room temperature. Serving Suggestion: Cut the pudding into 8-12 equal-size rectangles and place on heated dessert plates. Drizzle 2-3 T. of the chocolate sauce on one half of each portion of pudding and the same amount of white chocolate sauce over the other half of the pudding.

1 1/2 cups whole raw almonds
1 cup pistachios
1/2 cup fresh ground coffee beans
1 tablespoons unsweetened cocoa powder
2 tablespoons coconut oil, melted
1 teaspoon vanilla extract
1/2 teaspoon sea salt
16 ounces dark chocolate, chopped, divided
1 1/2 cups unsweetened flaked coconut, toasted
Flaked sea salt, for topping

Steps:

  • Preheat the oven to 375°F. Line a baking sheet with parchment paper or a silpat. Pour the almonds onto the baking sheet. Roast, the almonds halfway through, until the almonds are fragrant, about 10 to 12 minutes. Watch closely to make sure they don't burn. In the meantime mix together the coffee grounds, cocoa powder and salt. Add the melted coconut oil and vanilla to a small bowl. When the almonds are done roasting add the pistachios to the baking sheet. Toss the nuts with the coconut oil and then toss them with the coffee. Toss well making sure the coffee grounds evenly coat the almonds and pistachios. It will seem like a lot of coffee, but this is what you want! Roast the almonds + pistachios until the coffee is fragrant and the almonds are starting to become crisp, about 10 minutes. Remove from the oven and let cool. Line a sheet pan with parchment or wax paper. Melt the dark chocolate in a double boiler or a heatproof bowl set over a pan of simmering water, stirring until melted. Pour 3/4 (leaving about 1/4 of the chocolate for drizzling over top the nuts) of the melted chocolate on to the prepared baking sheet that has been lined with wax or parchment paper and spread the chocolate out to form a rectangle, be careful not to make it too thin. Immediately sprinkle on half of the toasted coconut, then sprinkle on the almonds and pistachios, leaving out most of the coffee grounds. If desired, sprinkle the bark with a few tablespoons of the coffee grounds that were left on the baking sheet (I probably used about 1/4 cup). Add the remaining toasted coconut and then drizzle the remaining melted chocolate overtop of everything. Sprinkle with sea salt if desired. Refrigerate until firm, about 30 minutes to 1 hour. Peel off parchment, and break bark into pieces.

I like to use a dark chocolate-70-percent or higher, which is the best for you. I've trained my kids on good dark chocolate early-but for some families this may feel like an adult treat. If that's the case, you can blend in a few chocolate chips or another semisweet chocolate to bring the sweetness forward. For my taste, there's enough sweet going on from the dried fruits-this is a harvest combo that feels perfect for deep fall and right into the holiday season. (There are so many options here for the dried fruit-dried fig would work as well!) The smoky almonds add crunch and if you love that bright citrus vibe in your chocolate, a little orange zest goes a long way here. Finish it with a flaky sea salt that makes the whole thing hit all the sweet-salty notes I crave to give a dreamy finish. This one is slightly thicker than a lot of chocolate barks, so it holds all the goodies on top, and feels a bit more like a candy bar. It's also easier to pack without any melting or shattering.

  • Line a 9-by-9-inch baking sheet with parchment paper, coating the bottom and up the sides (this makes it super easy to remove your bark when it sets).
  • Add two-thirds of the chocolate to a large metal bowl set over a pot with simmering (not boiling water). Stir gently to melt. When the chocolate is completely melted, sprinkle in the remaining chocolate and whisk to melt (adding the chocolate in stages helps the chocolate stay in temper and keep its shiny luster).
  • Pour the melted chocolate into the prepared pan and use an offset spatula to smooth the top. Sprinkle on the raisins, apricots and almonds, pressing a few pieces in just slightly to adhere. Sprinkle the orange zest lightly over the top (taking care not to let it clump all in one area) and top with flaky salt. Set aside at room temperature until completely set, about 4 hours (yes, you can speed this up in the fridge, but the cold can throw the chocolate out of temper and lesson your shiny, snappy results).

In the top of a double boiler or in a heatproof bowl over barely simmering water, melt the chocolate chips and shortening, stirring until smooth. *Also try 16 ounces of chocolate with 1 cup of nuts in an 8 x 10 perimeter on a parchment lined baking sheet.

Steps:

  • Line 8 x 8 WS baking pan with parchment paper, leaving overhangs on all sides. Spray Pam Organic Canola spray just underneath, but not on top. Melt chocolate in a double boiler. (Med pyrex over duncan bowl; green spatula.) Take off heat, stir some, and then stir in almonds. Pour in pan and spread and even out with small offset spatula. Make swirls on top. Refrigerate 1 hour until set. Lift with parchment overhang. Make sure isn't stuck to parchment. Let sit 1 min or so before cutting with chef's knife. Cut carefully and if you see it's cracking, wait a minute more.) Cut 3 by 3, and then each diagonally to get 18 triangles. Quickly lift each piece with medium offset and put in airtight containers lined with wax paper. Store in fridge right away since gets melty right after cutting. [Tried with ghirardelli semisweet chips and didn't like - too harsh, tangy/fruity. Then tried back to back with ghirardelli milk chocolate baking bars and that had strange taste to it. STICK WITH DOVE MILK CHOCOLATE!!!!]
