ALMOND FLOUR CRAB CAKES WITH LEMON AIOLI

Almond Flour Crab Cakes with Lemon Aioli image

Provided by Catherine Saint Louis

Categories     appetizer

Time 30m

Yield 12 crab cakes

Number Of Ingredients 23

1/3 cup mayonnaise
2 tablespoons Dijon mustard
1 egg
1 egg yolk
2 teaspoons lemon zest
2 teaspoons lemon juice
2 cups ground almond meal, plus 2/3 cup for dredging
4 scallions, finely chopped
1 tablespoon chopped dill
1 tablespoon chopped tarragon
1 tablespoon chopped cilantro
1 pound lump crab meat, picked over
1/2 teaspoon salt
1/4 teaspoon white pepper
1/3 cup yellow cornmeal
1/2 to 3/4 cup canola or grapeseed oil for frying
2 egg yolks
2 teaspoons Dijon mustard
1 clove garlic, crushed
1/2 teaspoon lemon zest
2 teaspoons lemon juice
2/3 to 1 cup grapeseed oil
Salt and pepper to taste

Steps:

  • Make the crab cakes: Whisk together mayonnaise, mustard, egg, egg yolk and lemon zest and juice in a large bowl. Mix in 2 cups of almond meal, scallions and herbs until thoroughly combined. Gently fold in crab. Season with salt and white pepper, cover with plastic wrap and chill for 30 minutes.
  • Meanwhile, make the aioli: Combine egg yolks, mustard, garlic and lemon zest and juice in a blender or food processor and purée until smooth. With machine running, slowly drizzle in the grapeseed oil a few drops at a time until the mixture begins to thicken. Gradually increase the oil to a thin, steady stream, blending to a uniform creamy consistency. If aioli breaks, drizzle in a little lukewarm water a few drops at a time until consistency is reached again. Season with salt and pepper to taste. Will keep 2 days or more in an airtight container in the refrigerator.
  • Mix remaining 2/3 cup almond meal and cornmeal in a pie plate and season lightly with salt and pepper. Divide crab mixture into 12 equal portions and form into 2-inch patties. Coat in almond-cornmeal mixture.
  • Heat 1/4 cup canola or grapeseed oil in a 12-inch skillet over medium-high heat until the oil is hot but not smoking, about 2 minutes. Cook crab cakes in batches, 3 to 4 minutes per side until deep golden brown and crisp, wiping out the skillet and adding fresh oil between the batches. Transfer to a paper-towel-lined tray. Crab cakes can be kept warm in a 200-degree oven for up to 30 minutes.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes     Bundt Cake Recipes

Yield Makes 6

Number Of Ingredients 16

10 tablespoons unsalted butter, room temperature, plus more for pans
6 tablespoons sliced almonds
1/3 cup coarsely chopped almonds
5 tablespoons packed light-brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon freshly grated nutmeg
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup granulated sugar
1 large egg
1 tablespoon pure vanilla extract
3/4 cup sour cream, or plain yogurt
2 cups sifted confectioners' sugar
3 to 4 tablespoons milk

Steps:

  • Preheat oven to 350 degrees. Generously butter six mini Bundt pans; set aside. Spread sliced almonds out on a baking pan, and toast until golden brown. Transfer nuts to a bowl to cool.
  • In a medium bowl, combine chopped almonds, light-brown sugar, cinnamon, and nutmeg; set aside. In another medium bowl, sift together flour, baking powder, baking soda, and salt; set aside.
  • In the bowl of an electric mixer, combine 6 tablespoons butter and granulated sugar. Beat on medium speed until light and fluffy, about 3 minutes. Add egg; beat until combined. Add 1 teaspoon vanilla, and beat until smooth. Add 1/3 of reserved flour mixture and half of sour cream; beat to combine. Repeat. Add final third of flour mixture, and beat to combine.
  • Fill each Bundt pan with 3 tablespoons batter, and spread evenly with a small offset spatula or spoon. Sprinkle each with 2 tablespoons of reserved almond-spice mixture. Top with additional 3 tablespoons batter; the batter should come to within 1/2 inch of the rims of the pans.
  • Bake until cakes are golden brown and a cake tester inserted into the center comes out clean, about 20 minutes. Transfer cakes to a wire rack to cool completely. Unmold cakes. Place cakes, flat sides down, on a wire rack placed over a baking pan.
  • Melt remaining 4 tablespoons butter over medium-high heat until color turns nut brown, about 5 minutes. Pour butter into a medium bowl, leaving behind any dark sediment. Stir in confectioners' sugar, remaining 2 teaspoons vanilla, and 3 tablespoons milk until smooth; add an additional tablespoon milk, if necessary, so glaze is pourable. Drizzle glaze over cakes, and sprinkle with toasted almonds. Serve.

MINI ALMOND CAKES WITH CHOCOLATE OR CHERRY

Mini Almond Cakes With Chocolate or Cherry image

These moist, rich almond cakes are miniature versions of a classic flourless almond torte, embellished here with either chocolate ganache or cherry jam. The bittersweet chocolate filling is a bit more sophisticated, while the cherry jam is sweetly crowd-pleasing. Or you can split the difference and make six of each. These gluten-free treats are best eaten within eight hours of baking so plan to make them the same day as serving. You can use either natural or blanched almond flour; the blanched will give you a slightly more delicate texture.

Provided by Melissa Clark

Categories     cakes, dessert

Time 50m

Yield 12 cupcakes

Number Of Ingredients 13

1/3 cup/80 milliliters heavy cream (optional)
3 ounces/85 grams bittersweet chocolate, finely chopped (optional)
6 tablespoons/85 grams melted unsalted butter, cooled, plus more for muffin tin
3/4 cup/85 grams almond flour or meal
3/4 cup/94 grams confectioners' sugar
1/4 teaspoon fine sea salt
2 large eggs
Few drops almond extract (optional)
3 tablespoons/24 grams cornstarch
1 1/4 teaspoons/4 grams baking powder
2 large egg whites
2 tablespoons/25 grams granulated sugar
1/4 cup/60 milliliters cherry jam (optional)

Steps:

  • Make the chocolate ganache, if using: In a heavy-bottomed saucepan, heat cream until bubbling (or place the cream in a glass measuring cup and heat it in the microwave). Remove from heat, add chocolate and let sit for 1 minute, then stir until smooth. Transfer chocolate to a small container (preferably metal) and freeze until firm, at least 30 minutes.
  • Scoop and roll into 3/4-inch balls. Note that the ganache is very soft and can be messy to handle, but getting perfectly round balls isn't necessary. Place in refrigerator until needed. Ganache balls can be prepared up to 1 week ahead.
  • Heat oven to 350 degrees. Butter a muffin tin.
  • Using a food processor or blender, mix almond flour, confectioners' sugar and salt until powdery, about 30 seconds. Add eggs and almond extract and process until smooth, 30 seconds longer. Pulse in butter, cornstarch and baking powder. Scrape mixture into a large bowl.
  • Using a beaters or an electric mixer, whip egg whites until very foamy. Gradually add granulated sugar while beating eggs until stiff peaks form.
  • Using a spatula, gently and carefully fold a third of the egg whites into almond mixture to lighten it. Then, fold in the rest of the whites just until no streaks remain.
  • Spoon batter into prepared muffin tins, and bake for 10 minutes. Remove from oven. Pull balls of ganache from refrigerator, if using, and place 1 ball in center of each cake, pushing it down halfway into batter. Or spoon 1 teaspoon cherry jam on top of each cake; do not push down. Return to oven and bake until light brown and a toothpick inserted into cake (and not the chocolate or cherry) comes out clean, another 8 to 10 minutes. Serve warm or at room temperature, preferably within 8 hours of baking.

ALMOND TEA CAKES FROM KING ARTHUR FLOUR®

Almond Tea Cakes from King Arthur Flour® image

Also known as financiers or friands, these almond-scented, bite-sized cakes are a perfect treat for a mid-morning or afternoon snack. They're prettiest when filled with fresh berries; but if looks aren't important, a teaspoonful of jam works quite well, also.

Fresh berries or jam

Almond-Crusted Shrimp Cakes with Lemon Soy Mayonnaise image

Categories     Milk/Cream     Food Processor     Fry     Mayonnaise     Bacon     Almond     Shrimp     Cilantro     Gourmet

Yield Makes 4 main-course or 8 first-course servings

Number Of Ingredients 20

For lemon soy mayonnaise
3/4 cup mayonnaise
1 1/2 teaspoons soy sauce
1/2 teaspoon finely grated fresh lemon zest
1 teaspoon fresh lemon juice
1/4 teaspoon hot sauce, or to taste
For shrimp cakes
1 bacon slice, chopped
3/4 lb large shrimp in shell (21 to 25 per lb), peeled and deveined
1 slice firm white sandwich bread
1/4 cup milk
1/2 cup chopped scallions (about 4)
2 tablespoons chopped fresh cilantro
2 teaspoons cornstarch
3/4 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon black pepper
2 cups sliced almonds (6 oz)
3 tablespoons vegetable oil
Garnish: lemon wedges and fresh cilantro leaves

Steps:

  • Make lemon soy mayonnaise:
  • Stir together all mayonnaise ingredients in a small bowl. Chill until ready to serve.
  • Make shrimp cakes:
  • Pulse chopped bacon in food processor until finely chopped. Pat shrimp dry, then add to bacon and pulse just until shrimp is coarsely chopped (do not purée). Soak bread in milk in a shallow bowl until very soft, about 30 seconds. Add wet bread to shrimp mixture, discarding any remaining milk, and pulse until just combined.
  • Transfer shrimp mixture to a bowl, then stir in scallions, cilantro, cornstarch, salt, sugar, and pepper until combined well.
  • Spread almonds on a large plate. Using a 1/4-cup measure, drop 1 mound of shrimp mixture onto almonds. Sprinkle almonds over shrimp mound to coat, gently pressing to form a (3 1/2-inch) cake (1/3 inch thick). Transfer cake to a wax-paper-lined baking sheet. Make 7 more cakes in same manner, transferring to baking sheet. Discard any remaining almonds.
  • Heat 2 tablespoons oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then cook 4 cakes, turning over once and rotating for even browning, until almonds are golden and cakes are just cooked through, 4 to 6 minutes total. Transfer to a paper-towel-lined plate and keep warm, loosely covered with foil. Discard any almonds left in skillet, then add remaining tablespoon oil and cook remaining 4 cakes in same manner. Serve warm, with lemon soy mayonnaise.

MAKROUT A LOUZ - ALGERIAN ALMOND CAKES

Makrout a Louz - Algerian Almond Cakes image

Delicious little diamonds of tangy almond delight! Easy to make and very much appreciated by all. Perfect for Eid celebrations or any special (or not so special!) ocassion. I also make these using a mix of desiccated coconut & ground almonds - 150g ground almonds + 200g desiccated coconut. You can freeze these and then put the syrup and icing sugar on later. I like to make a few things in advance so I'm not cooking 24/7 just before Eid etc.

Provided by Um Safia

Categories     Dessert

Time 50m

Yield 30-35 diamond shape cakes

Number Of Ingredients 7

3 cups ground almonds
1 cup granulated sugar
4 limes, zest of, finely grated
3 small medium eggs
3 tablespoons cornflour (maize or cornstarch)
2 cups of light sugar syrup
2 1/2 cups icing sugar (confectioners sugar)

Steps:

  • Place the first 4 ingredients in a large bowl and mix well - traditionally with your hand.
  • Dust work top with a little cornflour, seperate the dough into 1/4's and then roll mixture into a sausage shape - approximately the thickness of a frankfurter or average thumb!
  • Cut the sausage into 3cm pieces. Do this at an angle to create lozange or diamond shapes.
  • Bake on middle shelf at approx 170°C until set but still pale in colour. THEY SHOULD NOT BE golden.
  • When cooled slightly, drop one by one into the syrup. Hold on a fork and allow excess to dribble off before slowly dropping into the sugar.
  • Re-dip with sugar 5 mins later and pop into paper cases.
  • For the syrup you can make it easily by putting 2 cups of water, a halved lime and 1 cup of sugar in a pan and boiling for 10 minutes. It needs to be nice and light - just enough to hold the icing sugar on.

GLAZED ALMOND MINI CAKES

Glazed Almond Mini Cakes image

When my husband and I honeymooned in Austria, there were little pink rum cakes that caught my eye in every bakery we'd visit, they were so pretty! When I got back I created this version inspired by them, swapping out the traditional Rum soak for an almond soak!

Provided by Molly Yeh

Categories     dessert

Time 40m

Yield 16 two-in square cakes

Number Of Ingredients 23

2 cups (240 grams) all-purpose flour, plus more for the baking pan
1 tablespoon baking powder
1/2 teaspoon kosher salt
1 cup (2 sticks/226 grams) unsalted butter, at room temperature, plus 1/4 cup melted
1 cup (400 grams) sugar
4 large eggs, at room temperature
1 tablespoon pure vanilla extract
1/2 teaspoon almond extract
3 tablespoons whole milk
3/4 cup (240 grams) seedless raspberry jam
1/3 cup (50 grams) unsalted blanched toasted almonds, finely chopped,
Syrup, recipe follows
Icing, recipe follows
Nonpareils or sprinkles, for decorating
1/2 cup (200 grams) sugar
1/2 cup (57 grams) water
1/4 teaspoon almond extract
2 cups (340 grams) white candy melts (or white chocolate chips)
2 pounds (900 grams) confectioner's sugar, sifted
1/2 cup (160 grams) light corn syrup
3/4 cup (170 grams) very hot water, plus more as needed (tip: use this from the bottom of the double boiler)
1 teaspoon pure vanilla extract
Oil based pink food coloring

Steps:

  • Set an oven rack in the middle position. Preheat the oven to 350 degrees F.
  • Grease the bottom of an 8-by-12 inch metal baking pan and line the bottom with parchment. Then grease and flour the bottom and sides of the pan. Set aside.
  • For the cake: sift together the flour and baking powder. Add the salt and stir to combine.
  • In the bowl of a stand mixer fitted with the paddle attachment, add 1 cup of butter and sugar and beat on medium-high speed until light and fluffy, 2 to 3 minutes. Using a rubber spatula, scrape the bottom and sides of the bowl, as needed. Add the eggs, 1 at a time, beating on medium speed and scraping down the sides of the bowl between additions. Add the vanilla and almond extracts and beat to combine. On low speed, mix in half of the flour mixture, then mix in the milk. Mix in remaining flour mixture until just combined. Transfer the batter to the prepared pan and bake until a tester comes out clean, 18 to 20 minutes. Transfer to a rack to cool slightly, then unmold and cool completely.
  • To make the cake filling, using a serrated knife, cut the cake into an 8x8-inch square. Set aside. Crumble the portion of the cake that was removed and reserve 2 1/2 cups. Add the remainder of the cake crumbs to a large mixing bowl along with the remaining 1/4 cup melted butter, jam and almonds. Mix well (your hands are the best tool here) to make a spreadable filling.
  • To assemble the cake, use a serrated knife to split the cake crosswise into 2 halves. Arrange both halves so they're facing cut-side up. Brush the cake with about 2/3 of the cooled almond syrup. With a small offset spatula, gently spread the jammy filling over the entire bottom half of the cake and top with the top half of the cake, cut side down. Press gently to adhere. Flip the cake so the flat bottom is now facing up, to create a flat top. Freeze the cake until firm, 1 hour.
  • With a serrated knife, cut off the rough sides on the frozen cake and cut into 16 squares. Set the cake on a cooling rack over a parchment-lined baking sheet.
  • Coat the cakes 1 at a time by pouring the icing around the edges and letting it drip down to coat the sides, then fill in the top. (Set the bowl over hot water and stir if it begins to thicken before you are done.) Top with sprinkles or non pareils before the icing begins to set.
  • Combine the sugar and water in a small saucepan over low heat and cook to dissolve the sugar, 2 to 3 minutes. Remove from the heat. Add the almond extract and stir to combine. Cool completely.
  • Melt the chocolate chips or candy melts in a double boiler and stir until smooth.
  • In the bowl of a stand mixer fitted with the whisk attachment, add the confectioner's sugar, corn syrup, hot water and vanilla. Mix on low speed until smooth. Add the melted chocolate and continue to mix to make a very smooth, pourable icing, about the consistency of molasses. Add food coloring as desired.

ALMOND FLOUR CRAB CAKES WITH LEMON AIOLI image

Categories     Shellfish     Wheat/Gluten-Free

Number Of Ingredients 25

FOR THE CRAB CAKES
1/3 cup mayonnaise
2 tablespoons Dijon mustard
1 egg
1 egg yolk
2 teaspoons lemon zest
2 teaspoons lemon juice
2 cups ground almond meal, plus 2/3 cup for dredging
4 scallions, finely chopped
1 tablespoon chopped dill
1 tablespoon chopped tarragon
1 tablespoon chopped cilantro
1 pound lump crab meat, picked over
1/2 teaspoon salt
1/4 teaspoon white pepper
1/3 cup yellow cornmeal
1/2 to 3/4 cup canola or grapeseed oil for frying
FOR THE LEMON AIOLI
2 egg yolks
2 teaspoons Dijon mustard
1 clove garlic, crushed
1/2 teaspoon lemon zest
2 teaspoons lemon juice
2/3 to 1 cup grapeseed oil
Salt and pepper to taste

Steps:

  • 1. Make the crab cakes: Whisk together mayonnaise, mustard, egg, egg yolk and lemon zest and juice in a large bowl. Mix in 2 cups of almond meal, scallions and herbs until thoroughly combined. Gently fold in crab. Season with salt and white pepper, cover with plastic wrap and chill for 30 minutes. 2. Meanwhile, make the aioli: Combine egg yolks, mustard, garlic and lemon zest and juice in a blender or food processor and purée until smooth. 3. Mix remaining 2/3 cup almond meal and cornmeal in a pie plate and season lightly with salt and pepper. Divide crab mixture into 12 equal portions and form into 2-inch patties. Coat in almond-cornmeal mixture. 4. Heat 1/4 cup canola or grapeseed oil in a 12-inch skillet over medium-high heat until the oil is hot but not smoking, about 2 minutes.

TINY CHERRY AND ALMOND TEA CAKES

Tiny Cherry and Almond Tea Cakes image

Make the most of fresh cherry season by baking the little stone fruits right into charming tea cakes. The cakes, made with ground almonds, brown butter, and egg whites, are similar to financiers, which are small, springy brick-shaped cakes named for their resemblance to gold bullion. These cakes are baked with the pits left inside the cherries (be sure to warn guests before serving). Or, if you prefer, remove the pits before baking, leaving the stems intact.

Yield makes 30 mini

Number Of Ingredients 8

1/2 cup plus 2 tablespoons (1 1/4 sticks) unsalted butter, room temperature, plus more for tins
1 cup all-purpose flour, plus more for tins
1 cup unblanched almonds (5 ounces)
1 cup sugar
1 teaspoon coarse salt
5 large egg whites
1 tablespoon plus 1 teaspoon kirsch (cherry brandy)
30 sweet (Bing) cherries, stems intact

Steps:

  • Preheat oven to 400°F. Brush mini muffin tins with butter; dust with flour, tapping out excess. In a small saucepan, melt the butter over medium heat. Cook, swirling pan occasionally, until butter is lightly browned and fragrant. Skim foam from top, and remove from heat.
  • In a food processor, finely grind almonds (you should have 1 cup), and transfer to a bowl; whisk in flour, sugar, and salt to combine. Add egg whites, and whisk until smooth. Stir in kirsch. Pour in browned butter, leaving any burned sediment behind, and whisk to combine. Let batter rest 20 minutes.
  • Fill each prepared cup with 1 tablespoon batter. Push a cherry into batter of each cup, keeping stem end up. With a small spoon, smooth batter over cherries to cover.
  • Bake, rotating tins halfway through, until golden brown and a cake tester inserted near cherries comes out clean, 12 to 15 minutes. Transfer tins to wire racks to cool 10 minutes. Run a small offset spatula or knife around edges to loosen; turn out cakes onto racks to cool completely. Cakes can be stored overnight at room temperature in airtight containers.

Almond cake is a scrumptious dessert that is loved by many. It is a perfect dessert for any occasion, such as birthdays, weddings, or tea time with family and friends. Almond cakes are very similar to traditional cakes but the addition of almond flour or almond extract to the batter gives a unique, nutty flavor that sets them apart. Making an almond cake from scratch may seem intimidating, but it is not as difficult as it may seem. By following a few simple tips, anyone can make a delicious almond cake that will have everyone asking for more. Tip #1: Use high-quality ingredients The first tip for making a great almond cake is to use high-quality ingredients. It is essential to use fresh and high-quality ingredients to ensure that the cake tastes great. Baking with quality ingredients can make a significant difference in the final result of the cake. Make sure to use fresh almonds, high-quality flour, sugar, and other ingredients for the cake. Tip #2: Use almond flour Almond flour is a low-carb, gluten-free flour made from blanched almonds. This flour is perfect for making almond cakes and other gluten-free baked goods. Using almond flour in your almond cake recipe will give your cake a nutty flavor and a moist texture. When using almond flour, it is important to remember that it does not have the same structure as regular flour. As a result, the cake may appear dense, but it will still be delicious. Tip #3: Incorporate almond extract Almond extract is a common ingredient in almond cake recipes. It provides a strong almond flavor and aroma to the cake. When using almond extract, use it sparingly, as it can be overpowering. A mere 1/4 to 1/2 teaspoon of the extract is sufficient for a standard-sized cake recipe. Tip #4: Add almond slices Adding almond slices to the almond cake recipe is an excellent idea. The addition of the sliced almonds will give the cake an extra crunch and an attractive appearance. When adding the almond slices, chop them finely to ensure they mix well with the cake's batter. Tip #5: Use a cake mixer Using a cake mixer is essential for making almond cakes. The mixer will help blend the ingredients thoroughly and create a smoother batter. A cake mixer will also help in evenly distributing the ingredients, especially when adding the flour mixture. Tip #6: Don't overmix the batter Overmixing the batter can cause the cake to be tough or dense. To ensure a fluffy and light cake, mix the batter until all ingredients are just incorporated. Once the batter is well mixed, stop stirring. Overmixing the batter can cause the gluten to form, leading to a denser texture. Tip #7: Prepare the baking pan well It is essential to prepare the baking pan well to prevent the cake from sticking. Be sure to grease the pan and dust it with flour or parchment paper. This will ensure that the cake comes out of the pan easily and looks presentable. Tip #8: Avoid opening the oven door When baking the almond cake, it is important to avoid opening the oven door. This can cause the cake to fall and lose its texture. Opening the oven door can cause a rush of cold air to enter the oven, causing the cake to deflate. To check if the cake is cooked, do so by inserting a toothpick in the center. If it comes out clean, the cake is done. Tip #9: Let the cake cool completely After baking the almond cake, let it cool completely before frosting or serving. Letting the cake cool allows time for the texture to stabilize, making frosting easier. Cakes that are not allowed to cool can cause the frosting to melt and slide off the cake. Tip #10: Experiment with different toppings Almond cakes are a versatile dessert that can be served in many ways. They can be enjoyed plain or topped with frosting, whipped cream, or fruits. The addition of sliced almonds on the cake's surface can also add to the fragrance and visual appeal. Experiment with different toppings and find the one that suits your taste best. Conclusion: Almond cakes are a delightful dessert that can be made by anyone. The above tips will help you make a perfect almond cake that is fragrant, moist, and delicious. Don't be afraid to experiment with different flavor combinations or toppings to make the cake even more exciting. By following these tips, you'll be baking perfect almond cakes like a pro in no time.
