1 cup graham cracker crumbs
1 cup sliced almonds, toasted
6 tablespoons (3/4 stick) unsalted butter, melted
2 tablespoons golden brown sugar
1/4 teaspoon salt
Filling
1 1/2 7-ounce packages almond paste, crumbled
3 8-ounce packages cream cheese, room temperature
6 tablespoons sugar
4 large eggs
Apples
4 large Jonagold apples (about 2 1/2 pounds), peeled, cored, cut into 1/3-inch-thick slices
2 tablespoons fresh lemon juice
4 tablespoons unsalted butter
3/4 cup (packed) golden brown sugar
3/4 teaspoon ground cinnamon

Steps:

  • For crust:
  • Preheat oven to 350°F. Butter 10-inch-diameter springform pan. Wrap bottom with 2 layers of heavy-duty foil. Mix all ingredients in medium bowl to blend, crumbling almonds slightly. Press mixture onto bottom and 1 inch up sides of pan. Bake until set, about 7 minutes. Maintain oven temperature.

1/2 c butter softened
1/2 c ground almonds
1/4 c sugar
1/4 tsp almond extract
1 c flour
FILLING
250 g cream cheese softened
1/4 c sugar
1 egg
1/4 tsp almond extract
TOPPING
1/3 c lightly packed brown sugar
1 Tbsp flour
1/2 tsp cinnamon
4 c apples, peeled and sliced
1/3 c slivered almonds or 1/3 cup chopped almonds

Steps:

  • 1. Make the crust: In a small bowl, beat butter until fluffly. Add ground almonds and extract and mix. Work flour into mixture until a ball of dough forms. Roll out dough. I placed dough between two sheets of wax paper. Roll into a 10" circle. Place in a spring form pan and press dough slightly up the sides. Refrigerate 30 mins.
  • 2. Make filling: Beat cream cheese until smooth. Add sugar, egg and extract. Pour into chilled crust.
  • 3. Make topping: In a large bowl combine sugar, flour and cinnamon. Arrange apples on top of cake in a circular pattern until all slices are used. Sprinkle with brown sugar mixture and then sprinkle almonds on top.
  • 4. Bake in a 425 oven for 10 mins., then turn down to 350 and bake for 30-35 mins. and until apples are tender.
