Time 1h45m

Yield 12 servings

Number Of Ingredients 10

3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
3/4 cup sugar
1 large egg plus 1 large egg yolk, at room temperature
3/4 teaspoon baking powder
1/2 teaspoon fine salt
1/2 teaspoon almond extract
1 1/2 cups all-purpose flour
1/3 cup jam of your choice
1 tablespoon amaretto (you may also use another brandy or distilled spirit of your choice)
1/2 cup slivered almonds

Steps:

  • Preheat the oven to 350 degrees F. Line an 8-inch square baking pan with parchment paper, leaving an overhang on 2 sides for gripping and removing the bars after baking.
  • Beat the butter, sugar, egg and egg yolk in a medium bowl with a hand mixer until light and fluffy, about 2 minutes.
  • Add the baking powder, salt and almond extract and mix on low. Slowly incorporate the flour just until the batter comes together. Press two-thirds of the batter onto the bottom of the pan, reserving the remaining batter.
  • Stir together the jam and amaretto in a small bowl. Spread the fruit mixture over the batter, leaving a 1/2-inch border. Mix the slivered almonds into the reserved batter and crumble it on top. It will not cover all the jam, but it will spread during cooking.
  • Bake the bars until the jam is bubbly and the topping turns golden brown, about 35 minutes. Cool the bars in the pan on a rack. Use the parchment to lift the whole thing from the pan and cut it into 12 squares.

The recipe uses simple ingredients that are easily available at any grocery store, making it a convenient choice when you need to whip up something delicious in a rush.

The Ingredients

Almond Flour
Almond flour is the main ingredient in this recipe, adding a nutty flavor and a rich texture to the bars. It is also an excellent gluten-free alternative to regular flour.
Strawberry Jam
Strawberry jam adds a tangy and sweet flavor that complements the almond flour perfectly.
Butter
Butter adds richness and flavor to the bars. You can use either salted or unsalted butter, depending on your preference.
Brown Sugar
Brown sugar adds sweetness and a caramel flavor to the bars. You can use either light or dark brown sugar, depending on your preference.
Baking Powder
Baking powder is a leavening agent that helps the bars rise and become fluffy.
Salt
Salt enhances the flavor of the bars and balances out the sweetness.

The Process

Step 1: Preheat the Oven
Preheat the oven to 350°F (180°C) and line a baking dish with parchment paper.
Step 2: Make the Crust
In a mixing bowl, combine almond flour, brown sugar, salt, and baking powder. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Press the mixture evenly into the prepared baking dish and bake for 10-12 minutes or until lightly golden.
Step 3: Add the Jam
Remove the crust from the oven and spread the strawberry jam evenly over the partially baked crust.
Step 4: Add the Topping
In a separate mixing bowl, combine almond flour, brown sugar, salt, and baking powder. Cut in the butter until the mixture resembles coarse crumbs. Sprinkle the mixture over the strawberry jam.
Step 5: Bake the Bars
Bake the bars for an additional 15-20 minutes or until the topping is lightly golden. Allow the bars to cool completely before cutting them into squares.

Variations

Blueberry and Lemon Bars
You can substitute blueberry jam for the strawberry jam and add lemon zest to the topping mixture for a refreshing twist.
Peanut Butter and Jelly Bars
You can substitute peanut butter for the almond flour and use grape jelly for the filling for a classic peanut butter and jelly flavor.
Raspberry and White Chocolate Bars
You can substitute raspberry jam for the strawberry jam and sprinkle white chocolate chips over the topping mixture before baking for a decadent treat.

Almond and Strawberry Jam Bars are a perfect dessert or snack option for all almond and strawberry lovers. These bars are made with a delicious and crunchy almond base, topped with a thick layer of sweet strawberry jam. These heavenly bars are a perfect blend of sweetness and nuttiness. However, making the almond and strawberry jam bars requires a bit of preparation and attention to detail. In this article, we will share some valuable tips that will help you make the perfect almond and strawberry jam bars.

1. Use Fresh, Good-Quality Ingredients:

The primary key to making perfect almond and strawberry jam bars is to use fresh, high-quality ingredients. It is important to use good-quality almonds that are fresh and not stale. Similarly, the strawberry jam should be of high quality and preferably homemade. Avoid using pre-packaged strawberry jam as it is often loaded with preservatives and additives that can alter the taste and texture of your bars.

2. Toast the Almonds:

The almond base of the bars is the highlight of this recipe. To get the perfect nutty flavor, it is recommended to toast the almonds before using them in the recipe. Toasting helps to enhance the natural flavor of the almonds and adds a crunchy texture to the bars. You can toast the almonds in a pan or in the oven. Simply spread the almonds in a single layer on a baking sheet and toast them in the oven for 5-7 minutes at 350°F.

3. Use Room Temperature Ingredients:

Using room temperature ingredients is crucial to avoid lumps and ensure smooth mixing of the ingredients. Take the butter and eggs out of the refrigerator at least 30 minutes before starting the recipe. If the butter is too hard, it will not cream properly, resulting in a lumpy batter.

4. Line the Baking Pan:

To avoid the bars from sticking to the baking pan, it is recommended to line the pan with parchment paper or aluminum foil. Grease the lining with a little butter or oil to ensure easy removal of the bars. This will also make cleaning the pan a lot easier.

5. Do Not Overmix the Batter:

Overmixing the batter can result in tough and chewy bars. Be sure to mix just until the ingredients are fully combined. Once the ingredients are combined, stop mixing immediately. Mixing too much will result in a dense and hard bar.

6. Use a Flat Bottomed Glass to Press the Almond Base:

To ensure that the almond base is evenly distributed in the pan, use a flat-bottomed glass to press it down. This will also help to pack the base tightly and ensure that it holds its shape while baking.

7. Let the Bars Cool Completely:

Once the bars are baked, it is important to let them cool completely before slicing them. Allow the bars to cool in the pan for 10-15 minutes before transferring them onto a wire rack to cool completely. Slicing the bars while they are still hot can result in crumbling and breaking.

8. Store the Bars Properly:

Store the almond and strawberry jam bars in an airtight container at room temperature for up to three days. For longer storage, you can refrigerate the bars for up to a week. If you are freezing the bars, wrap them tightly in plastic wrap and store them in an airtight container for up to three months.

Conclusion:

With the right technique and attention to detail, making the perfect almond and strawberry jam bars is easy. Follow these valuable tips to make sure you perfect this delightful recipe every time. Get creative and experiment with different jam flavors or add some chocolate chips to the almond base for an even sweeter treat. With a little bit of effort and patience, you too can make irresistibly delicious almond and strawberry jam bars.
