- 1. Stir together flour, baking powder, soda, salt and sugar. Set aside.2. Combine Kellogg's® All-Bran® cereal and hot water. Let stand about 2 minutes or until cereal softens.3. This is the perfect recipe when you're craving dessert, but know you should really eat something healthy. With this one, you can bake your cake and eat it too! High in fiber and full of vitamins, it's hard to believe it tastes so good! I got this from the Kellogg's All Bran website.

- Stir together flour, soda, salt, cinnamon and nutmeg. Set aside.
- In medium mixing bowl, beat together the 1/2 cup margarine and the 1 cup sugar until light and fluffy.
- Add eggs. Beat well.
- Stir in apples,All-Bran Buds cereal and flour mixture. Stir until thoroughly combined.
- Spread evenly in greased 9 x 9 x 2-inch baking pan.
- Bake at 350° F about 1 hour or until cake begins to pull away from sides of pan. Cool completely.
- Frost or dust with powdered sugar.

RAISED GRIDDLE CAKES
This is a very old-fashioned version of cornmeal pancakes which rise overnight. It came to our family via my great grandmother and dates back to the mid 1870s. The cornmeal gives these pancakes a tiny hint of fried mush, a splendid treat that exceeds my patience to make.

Steps:
- In a large bowl, stir together the cornmeal and boiling water. Let soak for about 15 minutes. While still warm but not hot, stir in the flour, sugar, milk and yeast. Cover, and let rise overnight in the refrigerator.
- In the morning, mix in the eggs, baking powder and salt. If the batter seems too thin, add more cornmeal to thicken it up. If desired, set aside a cupful of batter for the next morning's batch of griddle cakes (see Cook's Note).
- Heat a lightly oiled griddle over medium heat. Spoon pancakes onto the hot griddle, and cook until browned on each side. Serve at once with butter and syrup.
