APPLE COBBLER
This easy apple cobbler recipe makes an incredible dessert. A buttery topping over warm, cinnamon apples, this is perfect topped with vanilla ice cream.

- Preheat oven to 350 degrees F. Combine 2/3 cup sugar and 1 tsp cinnamon in a small bowl.
- In a large bowl, mix apples with most of cinnamon and sugar mixture. Then place apples into a 13x9 inch baking dish. Sprinkle remaining cinnamon and sugar mixture over apples and gently mix to combine.
- In a separate bowl, combine flour, sugar, eggs, baking powder, cinnamon and salt and mix with a fork until mixture looks like coarse crumbs. Sprinkle mixture over apples in baking dish.
- Drizzle melted butter evenly over crumb mixture. Bake for 45-55 minutes or until starting to turn lightly golden brown. Remove from oven and allow to cool slightly.
- Best served warm, with individual servings topped with a scoop of ice cream and caramel sauce.

APPLE COBBLER WITH SPICE CAKE

- Preheat the oven to 350 degrees F.
- To make the apple topping: Grease a 12-inch Dutch oven or a large, deep baking dish. Add the apples, sugar, salt, cinnamon, nutmeg, butter and flour. Mix well then sprinkle with walnuts.
- To make the cake: In a large bowl or mixer, cream together the shortening and brown sugar. Mix in the egg, sour cream and vanilla. Sift the flour, baking soda, nutmeg, cloves, cinnamon and salt together into a bowl. Add the dry ingredients to the shortening mixture and mix thoroughly. Spoon the cake batter over the apple topping then bake until cake is nicely browned, begins to pull from the sides of the pan and a toothpick can be inserted and removed cleanly, about 40 minutes. Let the cake cool for 10 minutes then turn it out onto a large plate. Serve slices of cake warm or at room temperature drizzled with hot caramel sauce, if desired.

- Apple Filling: Mix first four dry items in a large pot and slowly add water. Stir to remove lumps and cook until boiling.
- Add butter, lemon Juice and apples. Cook approximately 10 minutes. Pour into large pan or casserole dish (I used a 9"x12" non-stick cake pan).
- For Biscuit Topping: Stir Bisquick and Milk until well mixed. Drop by spoonfuls on top of the apples. You can sprinkle sugar on top of the biscuit mix before putting it in the oven for a little extra sweetness.
- Preheat oven to 375 degrees.
- Bake 25 minutes or until topping is nicely browned.
- Serve warm with vanilla ice cream or half and half.
