Time 2h

Yield 10 to 12 servings

Number Of Ingredients 18

2 sticks unsalted butter, at room temperature, plus more for the pans
2 3/4 cups cake flour, plus more for the pans (see Cook's Note)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup buttermilk
1/2 cup sweetened cream of coconut (from one 15-ounce can), stirred well (see Cook's Note)
1 3/4 cups granulated sugar
4 large eggs, at room temperature, separated
2 teaspoons pure vanilla extract
1 teaspoon coconut extract
2 sticks unsalted butter, at room temperature
12 ounces cream cheese, at room temperature
3 1/2 cups confectioners' sugar
1/2 teaspoon salt
1 teaspoon pure vanilla extract
1 teaspoon coconut extract
2 cups sweetened shredded coconut

Steps:

  • For the cake: Position racks in the middle and lower third of the oven and preheat to 350 degrees F. Butter three 9-inch round cake pans and line the bottoms with parchment paper; butter the parchment, dust with flour and tap out the excess. Set aside.
  • Whisk the flour, baking powder, baking soda and salt in a medium bowl. Whisk the buttermilk and cream of coconut in a small bowl. Beat the butter and 1 1/4 cups granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 4 minutes. Add the egg yolks, one at a time, beating well after each addition, then beat in the vanilla and coconut extracts. Reduce the mixer speed to low; beat in the flour mixture in three batches, alternating with the buttermilk mixture, until combined.
  • Beat the egg whites and the remaining 1/2 cup granulated sugar in a large bowl with clean beaters on medium-high speed until stiff glossy peaks form, 4 to 5 minutes. Using a rubber spatula, fold the egg whites into the batter in three batches until just combined (do not overmix). Divide the batter among the prepared pans and bake, switching the pans halfway through, until the cakes are lightly browned and the centers spring back when lightly pressed, 30 to 35 minutes. Transfer to racks and let cool 20 minutes in the pans, then run a small knife around the edges of each cake and carefully invert onto the racks; remove the parchment and let cool completely.
  • For the frosting: Beat the butter and cream cheese in a large bowl with a mixer on medium-high speed until smooth, about 2 minutes. Reduce the mixer speed to low and beat in about half of the confectioners' sugar until combined. Add the remaining confectioners' sugar, salt and vanilla and coconut extracts and beat until combined. Increase the mixer speed to medium high and continue beating, scraping down the sides of the bowl as needed, until light and fluffy, about 3 minutes.
  • Place one cake layer on a cake stand or platter and top with a heaping 2/3 cup frosting. Add another cake layer, more frosting and the last cake layer. Cover the top and sides of the cake with the remaining frosting. Sprinkle the coconut all over the top and sides of the cake, gently pressing to adhere.

Time 4h

Number Of Ingredients 20

2 and 1/2 cups (285g) cake flour (spoon & leveled)
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
3/4 cup (1.5 sticks; 170g) unsalted butter, softened to room temperature
1 and 2/3 cups (330g) granulated sugar
5 large egg whites, at room temperature
1/2 cup (120g) sour cream, at room temperature
2 teaspoons pure vanilla extract
1 teaspoon coconut extract
1 cup (240ml) canned coconut milk, at room temperature*
1 cup (80g) sweetened shredded coconut
1 cup (230g) unsalted butter, softened to room temperature
one 8 ounce block (224g) full-fat cream cheese, softened to room temperature*
5 cups (600g) confectioners' sugar
2 Tablespoons (30ml) canned coconut milk
1/2 teaspoon pure vanilla extract
1/2 teaspoon coconut extract
1/8 teaspoon salt
2 cups (160g) sweetened shredded coconut

Steps:

  • Preheat oven to 350°F (177°C). Grease three 9-inch cake pans, line with parchment paper, then grease the parchment paper. Parchment paper helps the cakes seamlessly release from the pans.
  • Whisk the cake flour, baking powder, baking soda, and salt together. Set aside.
  • Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter and sugar together on medium-high speed until smooth and creamy, about 2 minutes. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Beat in the egg whites until combined, then add the sour cream, vanilla extract, and coconut extract. Beat until combined. Mixture will look curdled as a result of the varying textures and solid butter combining. Scrape down the sides and up the bottom of the bowl as needed. With the mixer on low speed, slowly add the dry ingredients and coconut milk. Beat on low speed until combined, then add the shredded coconut. Whisk it all by hand to make sure there are no butter lumps at the bottom of the bowl. The batter will be slightly thick.
  • Pour batter evenly into cake pans. Weigh them to ensure accuracy, if desired. Bake for around 21-23 minutes or until the cakes are baked through. To test for doneness, insert a toothpick into the center of the cake. If it comes out clean, it's done. Allow cakes to cool completely in the pans set on a wire rack. The cakes must be completely cool before frosting and assembling.
  • In a large bowl using a hand-held mixer or stand mixer fitted with a whisk or paddle attachment, beat the butter and cream cheese together on medium speed until creamy and smooth, about 2 minutes. Add confectioners' sugar, coconut milk, vanilla extract, coconut extract, and salt with the mixer running on low. Increase to high speed and beat for 3 minutes. Add more confectioners' sugar if frosting is too thin, more coconut milk if frosting is too thick, or an extra pinch of salt if frosting is too sweet.
  • Using a large serrated knife, slice a thin layer off the tops of the cakes to create a flat surface. Discard (or crumble over ice cream!). Place 1 cake layer on your cake stand, cake turntable, or serving plate. Evenly cover the top with about 1 and 1/2 cups of frosting. Top with 2nd cake layer and evenly cover the top with about 1 and 1/2 cups of frosting. Top with the third cake layer. Spread the remaining frosting all over the top and sides. I use and recommend an icing spatula to apply the frosting and bench scraper to smooth the sides. Sprinkle coconut on top of the cake and apply it to the sides. This can get a little messy and you can watch me do it in the video tutorial above. See blog post above about buttercream rose decoration.
  • Refrigerate cake for at least 20 minutes before slicing. This helps the cake hold its shape when cutting, though it's still a pretty fluffy cake!
  • Cover leftover cake tightly and store in the refrigerator for up to 5 days.

Time 1h45m

Yield 1 cake

Number Of Ingredients 18

1 cup rolled oats (not instant)
1 1/4 cups boiling water
8 tablespoons (1 stick) unsalted butter, softened at room temperature
1/2 cup sugar
1 cup light brown sugar, packed
2 eggs
1 teaspoon pure vanilla extract
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
Topping, recipe follows
10 tablespoons cold unsalted butter, cut into pieces
2/3 cup light brown sugar, packed
1/4 cup heavy cream
2/3 cup chopped walnuts or pecans
1 cup packed shredded or flaked sweetened coconut

Steps:

  • Place the oats in a medium bowl. Add the boiling water, mix, and let stand 20 minutes. Preheat the oven to 350 degrees F. Lightly butter a 9-inch cake pan, round or square. In a mixer fitted with a paddle attachment (or using a hand mixer), cream the butter until smooth. Add both sugars and mix until smooth and fluffy. Add the eggs and vanilla and mix just until combined. Add the rolled oats and mix just until combined.
  • In another bowl, mix the flour, baking soda, cinnamon, nutmeg, and salt. Working in 3 batches, add the dry ingredients to the butter-oat mixture, mixing until just combined after each addition. Pour into the prepared pan. Bake until a tester inserted into the center of the cake comes out dry and almost clean (a few crumbs are okay), 40 to 50 minutes.
  • When the cake comes out of the oven, preheat the broiler to high. Spread the coconut topping evenly over the cake and broil until golden brown, about 2 minutes, watching carefully to make sure it does not burn. Let cool at least 10 minutes before serving.
  • In a medium bowl, mix the butter, sugar, and cream. Add the nuts and coconut and mix just until combined.

Time 1h55m

Yield 10 to 12 servings

Number Of Ingredients 17

3/4 pound (3 sticks) unsalted butter, at room temperature, plus more for greasing the pans
2 cups sugar
5 extra-large eggs, at room temperature
1 1/2 teaspoons pure vanilla extract
1 1/2 teaspoons pure almond extract
3 cups all-purpose flour, plus more for dusting the pans
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup milk
4 ounces sweetened shredded coconut
1 pound cream cheese, at room temperature
1/2 pound (2 sticks) unsalted butter, at room temperature
3/4 teaspoon pure vanilla extract
1/4 teaspoon pure almond extract
1 pound confectioners' sugar, sifted
6 ounces sweetened shredded coconut

Steps:

  • Preheat the oven to 350 degrees F. Grease 2 (9-inch) round cake pans, then line them parchment paper. Grease them again and dust lightly with flour.
  • In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and sugar on medium-high speed for 3 to 5 minutes, until light yellow and fluffy. Crack the eggs into a small bowl. With the mixer on medium speed, add the eggs 1 at a time, scraping down the bowl once during mixing. Add the vanilla and almond extracts and mix well. The mixture might look curdled; don't be concerned.
  • In a separate bowl, sift together the flour, baking powder, baking soda and salt. With the mixer on low speed, alternately add the dry ingredients and the milk to the batter in 3 parts, beginning and ending with dry ingredients. Mix until just combined. Fold in the 4 ounces of coconut with a rubber spatula.
  • Pour the batter evenly into the 2 pans and smooth the top with a knife. Bake in the center of the oven for 45 to 55 minutes, until the tops are browned and a cake tester comes out clean. Cool on a baking rack for 30 minutes, then turn the cakes out onto a baking rack to finish cooling.
  • For the frosting, in the bowl of an electric mixer fitted with a paddle attachment, combine the cream cheese, butter, vanilla and almond extract on low speed. Add the confectioners' sugar and mix until just smooth (don't whip!).
  • To assemble, place 1 layer on a flat serving plate, top side down, and spread with frosting. Place the second layer on top, top side up, and frost the top and sides. To decorate the cake, sprinkle the top with coconut and lightly press more coconut onto the sides. Serve at room temperature.

ALTON BROWN'S COCONUT CAKE WITH 7 MINUTE FROSTING

Alton Brown's Coconut Cake With 7 Minute Frosting image

Saw this episode and knew I had to make this cake... ok, maybe I'll cheat here and there. Alton made his own coconut milk, coconut cream, and coconut extract from SCRATCH. Plus, he saved the coconut juice from the actual coconut to spray on top of the baked cakes. I haven't made this yet. I'm posting to see nutrition info. This will be my birthday cake in a couple days and I'm seeing what tweaking (less fat) I can get away with. Prep time is a guess.

Time 1h40m

Yield 16 serving(s)

Number Of Ingredients 18

14 1/4 ounces cake flour (3 cups)
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup coconut milk (fresh)
1/2 cup coconut cream (fresh)
8 ounces unsalted butter, room temp
16 ounces sugar (2 1/4 cups)
1 teaspoon coconut extract
4 large egg whites
1/3 cup coconut water
3 large egg whites
12 ounces sugar (1 3/4 cups)
1/3 cup coconut water
1/2 teaspoon cream of tartar
1/4 teaspoon kosher salt
1 teaspoon coconut extract
1/2 teaspoon vanilla extract
8 ounces sweetened flaked coconut

Steps:

  • Preheat oven to 350.
  • Lightly oil two 9" round pans and line with parchment paper. Spray paper with a little additional oil.
  • Whisk together flour, baking powder and salt.
  • Combine coconut milk and cream in a separate bowl.
  • Cream the butter in a 3rd bowl (I know, I know) til fluffy (1 min.) and then gradually add sugar at a low speed. After sugar is incorporated, increase the speed to medium and cream about 2-3 minutes until it's lighter in color and texture.
  • Turn speed back to low and add flour mixture and milk mixture alternately in 3 additions. Do not over mix!
  • In another bowl beat egg whites until stiff and then slowly fold into the batter. You'll want to add a bit of the batter to the egg whites and then switch to adding the egg whites into the batter bowl.
  • Divide batter evenly between two bowls and bang on the counter to remove air bubbles.
  • Place on center rack and bake about 40 minutes or until light golden brown.
  • Cool in pans for ten minutes and then cool completely on a wire rack.
  • Once cakes have cooled, slice horizontally in half to form 4 layers. Then brush or spray them with the coconut juice.
  • Frosting: Bring 1 quart water to a boil in a saucepan and decrease to maintain a simmer.
  • Meanwhile, place egg whites, coconut water, sugar, salt and cream of tarter in a medium-sized bowl.
  • Place bowl over the simmering water and immediately begin beating with hand mixer at slow speed for 1 minute, then high speed for another 5 minutes.
  • Remove from heat and beat in coconut and vanilla extracts, beating for an additional minute.
  • Allow frosting to sit for 5 minutes before using. Allow about 3/4 cup frosting per layer, sprinkling about 1/2 cup coconut on top of each frosted layer. Repeat until the final layer and frost top and sides with last of the frosting and coconut.

1 (3.5 ounce) package instant vanilla pudding mix
1 cup water
½ cup vegetable oil
2 large eggs
2 large egg whites
1 teaspoon vanilla extract
¾ cup white sugar
⅓ cup light corn syrup
2 large egg whites
1 tablespoon water
¼ teaspoon vanilla extract
¼ teaspoon cream of tartar
½ cup flaked sweetened coconut

  • Preheat oven to 350 degrees F (175 degrees C), or 325 degrees F (165 degrees C) for coated pans. Spray two 8-inch round cake pans with cooking spray.
  • Stir sugar, frozen coconut, and sour cream for filling together in a medium bowl until well combined. Set aside in the fridge until ready to use.
  • Combine cake mix, pudding mix, water, oil, eggs, egg whites, and vanilla for cake in the bowl of a stand mixer fitted with a whisk attachment. Blend on medium speed for 3 minutes, scraping down the sides of the bowl as necessary. Pour batter into the prepared pans.

  • Use a large, serrated knife to cut each cake layer in half lengthwise; you will have 4 pieces. Flip top pieces so all cut sides are facing up. Stack layers and filling on a serving platter as follows: 1 bottom layer, 1/3 of the filling, 1 top layer, 1/3 of the filling, remaining bottom layer, remaining filling, remaining top layer. Cover and chill, 30 minutes to overnight.
  • Combine sugar, corn syrup, egg whites, water, vanilla, and cream of tartar for frosting in a large heat-proof bowl; stir until well combined. Place the bowl over a double boiler and whisk using an electric hand mixer until thick and glossy, about 7 minutes. Take care that the double boiler doesn't reach higher than a slow simmer.
  • Spread frosting over cooled cake immediately and sprinkle with shredded coconut.

If you're a fan of desserts that are sweet and moist, then you'll love Aline's favorite wet coconut cake recipes. These recipes are perfect for any occasion, from birthday parties to casual dinners. However, not all coconut cakes are created equal. To ensure that your cake turns out perfectly every time, there are a few tips and tricks that you need to keep in mind. In this article, we're going to share with you some valuable tips that you should keep in mind when you're making Aline's favorite wet coconut cake recipes. Tip #1: Use High-Quality Ingredients When it comes to baking, the quality of the ingredients that you use is just as important as the recipe itself. When making Aline's favorite wet coconut cake recipes, it's important that you use high-quality ingredients. For example, using fresh coconut will make a huge difference in the flavor and texture of your cake. If fresh coconut is not available, you can use desiccated coconut or coconut milk as a substitute. Similarly, you should use high-quality butter, sugar, flour, and leavening agents to ensure that your cake turns out moist, flavorful, and fluffy. Always use fresh baking powder and baking soda to ensure that your cake rises properly. Tip #2: Don't Overmix the Batter One of the most common mistakes that people make when making cakes is overmixing the batter. Overmixing can lead to a tough and dry cake. When making Aline's favorite wet coconut cake recipes, it's important that you don't overmix the batter. Be gentle with the batter and fold in the ingredients with a spatula. Tip #3: Use Room Temperature Ingredients When making cakes, it's important that you use room temperature ingredients. It's easier to mix the ingredients when they are at the same temperature. If you try to mix cold butter with sugar, it will take a lot more effort and time to achieve a smooth batter. Room temperature eggs also help in the emulsification process, making your cake moist and tender. Cold eggs have a tendency to cause the batter to curdle and result in an uneven texture. Tip #4: Use the Right Type of Flour There are different types of flour available in the market, but not all of them are suitable for cakes. When making Aline's favorite wet coconut cake recipes, it's important that you use cake flour instead of all-purpose flour. Cake flour has a lower protein content, which helps to keep the cake tender and moist. Tip #5: Measure Your Ingredients Properly Measuring ingredients properly is crucial in baking. Use a kitchen scale to ensure that you have the right amount of ingredients. When measuring flour, use a measuring cup and spoon to ensure accuracy. Fluff the flour using a fork, then spoon it into the measuring cup and level it off with a knife. An excess of flour will result in a dry and dense cake, while too much sugar can lead to a cloyingly sweet taste. Tip #6: Don't Open the Oven Door When baking, it's important that you don't open the oven door too often. Opening the oven door can cause the temperature to fluctuate, which will affect the texture and rise of your cake. Keep an eye on the cake through the oven door window or use a thermometer to check the temperature. Tip #7: Use the Right Baking Pan The type of baking pan that you use can affect the texture of your cake. When making Aline's favorite wet coconut cake recipes, it's important that you use a baking pan that is the appropriate size and material. A pan that is too small may cause the cake to overflow, while a pan that is too big may cause the cake to dry out. Glass and dark-colored pans absorb more heat and may require adjustments in temperature or baking time. Tip #8: Let Your Cake Cool Completely After baking, it's important that you let your cake cool completely before you start frosting it. A warm cake will cause the frosting to melt and slide off the cake. Place the cake on a wire rack and let it cool for at least 30 minutes. After that, you can frost and decorate the cake as desired. Tip #9: Store Your Cake Properly Proper storage is crucial in keeping your cake fresh and moist. Wrap your cake in plastic wrap and store it in the refrigerator for up to 3 days or freeze it for up to 3 months. Let the cake come to room temperature before serving to allow the flavors to meld. Conclusion Making Aline's favorite wet coconut cake recipes is easy as long as you keep these tips in mind. Use high-quality ingredients, don't overmix the batter, use room temperature ingredients, measure your ingredients properly, use the right type of flour, don't open the oven door, use the right baking pan, let your cake cool completely, and store your cake properly. With these tips, you'll be able to make the perfect coconut cake every time.
