ALABAMA-STYLE WHITE BARBECUE SAUCE

ALABAMA WHITE BBQ SAUCE

Alabama White BBQ Sauce image

My boys use to spend their summers with their grandmother in the South. She would treat them to a meal at a restaurant that served Alabama white sauce over chicken and my family thought it was wonderful. I started making it at home and it always brings back memories of those summers in Tuscaloosa. This Alabama white sauce recipe should be applied only at the very end of your grilling or smoking because it will break down and separate if it is heated too long. -Sabrina Everett, Thomasville, Georgia

GRILLED CHICKEN WITH ALABAMA WHITE BARBECUE SAUCE

Grilled Chicken with Alabama White Barbecue Sauce image

Provided by Food Network Kitchen

Categories     main-dish

Time 9h15m

Yield 6 servings

Number Of Ingredients 16

1/4 cup sugar
Kosher salt and freshly ground black pepper
Two 12-ounce bottles amber beer, chilled
1 head garlic, split crosswise
2 fresh bay leaves
2 teaspoons whole black peppercorns
Two 4-pound chickens, cut into 8 pieces each
Vegetable oil, for brushing
1 cup mayonnaise
1/4 cup white wine vinegar
2 tablespoons drained prepared horseradish
2 teaspoons sugar
1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Hot pepper sauce, such as Tabasco, for seasoning

Steps:

  • For the chicken: In a pot large enough to hold the chicken, combine the sugar, 1/4 cup salt and 2 cups cold water. Stir until the salt and sugar dissolve. Pour in the beer and add the garlic, bay leaves and peppercorns. Submerge the chicken in the brine. Cover and refrigerate at least 8 hours and up to overnight.
  • For the Alabama white barbecue sauce: Meanwhile, whisk together the mayonnaise, vinegar, horseradish, sugar and Worcestershire in a medium bowl until smooth. Season with 1 teaspoon salt, hot sauce to taste and a liberal grinding of black pepper. Cover and refrigerate until you're ready to cook the chicken. (Can be made a day ahead, along with the chicken brine.)
  • Prepare a grill for medium indirect grilling. Drain and rinse the chicken and pat very dry. Season the chicken lightly with salt and more liberally with black pepper. Brush lightly with vegetable oil.
  • Brush the grill grates with vegetable oil and lay the chicken, bone-side down, on the indirect heat side of the grill. Cover and cook until the skin is golden and the chicken is about three-quarters cooked (130 to 135 degrees F on an instant read thermometer), 20 to 25 minutes. Flip the chicken pieces so they are skin-side down and continue indirect grilling until the chicken is cooked through and reads 165 degrees F on an instant-read thermometer, about 15 minutes more.
  • Brush the chicken all over with some of the Alabama white barbecue sauce and move the chicken, skin-side down, to the direct heat side of the grill. Grill just until the skin crisps, about 3 minutes, moving as necessary to keep it from burning. Let rest for 5 minutes before serving.
  • Serve the remaining Alabama white sauce on the side for dipping.

Time 4h

Yield 4 to 6 servings

Number Of Ingredients 12

3/4 cup kosher salt
One 5-pound chicken, quartered
2 tablespoons cornstarch
1 tablespoon vegetable oil
Alabama White BBQ Sauce, recipe follows
1 cup mayonnaise
1/4 cup apple cider vinegar
1 tablespoon prepared horseradish
1 teaspoon Dijon mustard
1 teaspoon freshly ground black pepper

Remove the chicken from the brine, pat dry with paper towels and then set on the wire rack for at least 1 hour at room temperature, though it is ideal to do this step overnight in the refrigerator. • Heat a grill to medium heat (about 350 degrees F). In a large bowl, toss the chicken with the cornstarch and vegetable oil.
  • Grill the chicken skin-side down for 15 minutes, keeping an eye on it to make sure the skin doesn't burn. Flip the chicken and cook until it reaches an internal temperature of 165 degrees F, about 20 minutes. Remove and let rest for at least 10 minutes. Serve with Alabama White BBQ Sauce.
  • Stir together the mayonnaise, vinegar, horseradish, mustard and pepper in a medium bowl. Season with salt. Serve with grilled chicken.

ALABAMA BBQ CHICKEN AND WHITE SAUCE (GRILLED)

Alabama BBQ Chicken and White Sauce (Grilled) image

Had this at a friend's house this weekend and it was great. Very different. She used a "Green Egg Smoker" which cooked the chicken slowly and kept it very moist. You can use boneless, skinless breasts and then serve them on nice bread with lettuce leaves, pickles (if you like) and the white sauce! My friend got the recipe from "Smoke and Spice" and this is a similar one from The BBQ General website from a magazine called Cook's Country. Hope you like it. I don't have a smoker but I can try indirect heating. I have a gas grill too so there are obstacles but I can experiment!

1/2 teaspoon prepared horseradish
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
3 1/2-4 lbs chicken parts, patted dry, split
2 cups hickory chips
vegetable oil, for grill grate

Steps:

  • For the sauce, mix all ingredients in blender until smooth, about 1 minute. Refrigerate sauce in airtight container for at least 1 hour or up to 2 days.

Light large chimney starter filled with charcoal briquettes (about 90 coals) and burn until charcoal is covered with fine gray ash. Place 13 by 9 inch disposable aluminum roasting pan in center of grill. Pour half of coals into pile on each side of grill, leaving pan in the center. • Transfer chickens to cutting board, brush with 2 tablespoons sauce, tent with foil, and let rest 10 minutes. Remove foil and brush chicken with 1 tablespoon sauce.

THE ALABAMA SMOKEHOUSE PIG BURGER WITH WHITE BARBECUE SAUCE

The Alabama Smokehouse Pig Burger with White Barbecue Sauce image

Provided by Food Network

Categories     main-dish

Time 40m

Yield 6 burgers

Number Of Ingredients 16

3/4 cup mayonnaise
1/4 cup apple cider vinegar
1 tablespoon lemon juice
2 tablespoons white sugar
2 teaspoons freshly ground black pepper
12 slices thick cut hickory smoked bacon
2 pounds ground pork
1 tablespoon smoked paprika
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
1 1/2 teaspoons salt
1/4 teaspoon freshly ground black pepper
Vegetable oil, for grill rack
6 thick slices smoked Gouda (recommended: Boar's Head)
6 kaiser rolls, split
2 1/2 cups shredded green cabbage

Steps:

  • Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
  • In a small mixing bowl combine the mayonnaise, apple cider vinegar, lemon juice, sugar, and black pepper. Mix until well combined and refrigerate until serving.
  • Heat a large fireproof nonstick skillet on the grill. Add the bacon and cook over medium-high heat until the bacon is crispy, about 5 minutes, flipping once. Drain on paper towels. Reserve the rendered bacon fat from the skillet.
  • Combine the pork, smoked paprika, chili powder, cayenne, salt, and pepper in a large bowl. Add 1 1/2 tablespoons of the rendered bacon fat from the skillet. Mix well, handling the meat as little as possible to avoid compacting. Divide the mixture into 6 equal portions and form the portions into patties to fit the size of the rolls.
  • Brush the grill rack with oil. Arrange the patties on the rack, cover, and cook, turning once just until done, about 4 minutes on each side for medium-rare. During the last few minutes of cooking, top the burgers with equal amounts of smoked Gouda and put the rolls, cut side down, on the outer edges of the rack to toast lightly.
  • To assemble the burgers, spread a generous amount of Alabama White Barbecue Sauce on the cut sides of the rolls. On each roll bottom, put some shredded cabbage, a cheese-topped patty, and 2 slices of bacon. Cover with the roll tops and serve.

SMOKY DRY-RUBBED GRILLED CHICKEN WITH ALABAMA WHITE SAUCE

Smoky Dry-Rubbed Grilled Chicken with Alabama White Sauce image

My mom's favorite barbecue sauce is Alabama white sauce, and it's ideal to serve with my spice-rubbed grilled chicken. The chicken halves are cooked first low and slow over indirect heat to infuse that smoky flavor from the grill into the meat. After a quick char over the flames at the end, the chicken is juicy, tender, and oh so good.

Provided by Kardea Brown

Categories     main-dish

Time 1h40m

Yield 2 to 4 servings

Number Of Ingredients 21

One 4- to 5-pound whole chicken
3 tablespoons Miss Brown's House Seasoning, recipe follows
2 tablespoons light brown sugar
1 teaspoon dried oregano
1 teaspoon smoked paprika
1 teaspoon dried parsley
Kosher salt
1 cup mayonnaise
2 tablespoons light brown sugar
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
2 teaspoons prepared horseradish
2 teaspoons hot sauce
1 teaspoon dry mustard
Juice of 1/2 lemon (about 1 tablespoon)
Kosher salt and freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • For the dry-rubbed grilled chicken: Remove the backbone from the chicken. Cut the chicken through the breastbone into two halves. Stir together the House Seasoning, brown sugar, oregano, paprika, parsley and a couple of pinches of salt in a bowl. Rub under the skin and all over the chicken halves.
  • Prepare a grill for direct and indirect cooking: Heat one side of the grill to medium heat. Leave the other side unlit.
  • Place the chicken skin-up on the grates on the unlit side of the grill. Grill, with the lid closed, until the skin begins to brown, about 45 minutes. Transfer the chicken to the lit side of the grill, starting skin-up, and cook until the chicken is done and a meat thermometer registers 165 degrees F when inserted in the thickest portion of the thigh (avoiding bone), 12 to 15 minutes on each side.
  • For the Alabama white sauce: Stir together the mayonnaise, brown sugar, vinegar, Dijon mustard, horseradish, hot sauce, dry mustard, lemon juice, and salt and pepper to taste in a medium bowl.
  • Transfer the chicken to a serving platter. Pour the sauce over the chicken and serve immediately.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container at room temperature.

Alabama White Sauce is a tangy, creamy, and delicious mayonnaise-based sauce that originated from Alabama. This sauce has become increasingly popular in recent years and can be used as a marinade, a dipping sauce, or a dressing for salads. Its unique flavor has made it a favorite for barbecue enthusiasts, and it is typically served with smoked meats such as chicken, pork, or beef.

Origins of Alabama White Sauce

Alabama White Sauce was first created in northern Alabama by Big Bob Gibson in the 1920s. He served it with hickory-smoked chicken, and it quickly became a local favorite. The sauce was kept a secret for many years, but eventually, it became so popular that other restaurants began to serve it as well. Today, Alabama White Sauce is a staple in many barbecue joints throughout the South.

Ingredients

Alabama white sauce is a unique and flavorful sauce that is used to marinade, baste, or even as a dipping sauce. It is particularly popular in Alabama and is associated with southern barbecue. This sauce is traditionally used on smoked chicken or pork, but can also be a great accompaniment to grilled seafood or vegetables. In this article, we will discuss valuable tips on how to make Alabama white sauce recipes.

Tip #1: Always Use Homemade Mayonnaise

The base of any Alabama white sauce recipe is mayonnaise. It is, therefore, essential to use homemade mayonnaise to give your sauce a unique taste. Homemade mayonnaise is easy to make and requires only a few ingredients including egg yolk, vegetable oil, lemon juice, salt, and mustard. The process involves whisking the egg yolk with mustard and lemon juice, then slowly pouring in the oil while continuously whisking until an emulsions forms. Always ensure that all the ingredients are at room temperature before starting this process.
Pro tip:
Using an immersion blender or a food processor can simplify the process of making homemade mayonnaise.

Tip #2: Get the Right Balance of Vinegar and Lemon

Alabama white sauce is known for its tangy taste, and this is achieved through the use of vinegar and lemon, both of which add acidity to the sauce. The key to getting the right balance of acidity is to start with a small amount of vinegar and lemon juice and gradually increase it till you achieve the desired taste. Remember that too much acidity can overpower the other flavors, while too little can make the sauce bland. For every cup of mayonnaise, start with a tablespoon of vinegar and lemon juice and adjust accordingly.
Pro tip:
Instead of only using distilled white vinegar, try using cider vinegar, rice vinegar, or balsamic vinegar to add different flavor notes to your sauce.

Tip #3: Experiment with Different Spices

Spices are an essential ingredient in any Alabama white sauce recipe. They are what give the sauce its unique flavor and character. The basic spices used in Alabama white sauce recipes include garlic powder, onion powder, salt, and black pepper. However, you can experiment with different spices to create a twist on the basic recipe. Some popular spices to try include paprika, cayenne pepper, chili powder, and cumin.
Pro tip:
Avoid using fresh garlic or onion in your sauce as they can overpower the other flavors. Instead, use the powdered versions to achieve a milder taste.

Tip #4: Use Buttermilk to Achieve a Creamy Texture

Buttermilk is an essential ingredient in Alabama white sauce recipes as it helps to achieve a creamy texture. It is also what gives the sauce its tangy taste. When using buttermilk, ensure that it is at room temperature to prevent it from curdling the mayonnaise. You should also start by adding a small amount of buttermilk to the mayonnaise and gradually increase it to achieve the desired consistency.
Pro tip:
If you don't have buttermilk, you can make a substitute by combining regular milk with lemon juice or vinegar.

Tip #5: Let the Sauce Sit for a While

Once you have mixed all the ingredients, it is essential to let the sauce sit for a while before serving. Letting the sauce sit allows the flavors to meld together and enhances the taste. You can either refrigerate the sauce for a few hours or leave it at room temperature for about 30 minutes.
Pro tip:
To prevent the sauce from drying out, cover it with plastic wrap, making sure that the wrap is touching the surface of the sauce to prevent a skin from forming.

Conclusion

Alabama white sauce is a delicious and versatile sauce that can be used in a variety of ways. By following these valuable tips, you can create a unique and flavorful sauce that will elevate your barbeque or grilled dishes. Remember to experiment with different spices and adjust the acidity to achieve your desired taste. With practice, you will soon be making the perfect Alabama white sauce every time.
