AIR FRYER ESSENTIALS: CHEESY BACON/EGG MUFFIN
These are easy/peasy to assemble and they taste really, really yummy. You can vary the cheese (tart, mild, or a combination), and choose a different protein (bacon, ham, sausage), or leave it out. In fact, next time I think that I will add a slice of tomato. And, as the weather gets colder... a bit of cayenne. The air fryer...

- 1. PREP/PREPARE
- 2. To make these, you will need an air fryer, or they could be baked in an oven set to convection mode for similar results.
- 3. Gather your ingredients (mise en place).
- 4. Add the diced bacon to a pan and cook until it has reached your level of doneness.
- 5. Drain on paper towels and reserve.
- 6. Chef's Note: Whatever you choose, bacon, sausage, ham, etc., make sure that it is precooked.
- 7. Set your air fryer to 375f (190c), and let it preheat for about 5 minutes.
- 8. Chef's Tip: Most air fryer recipes do not talk about preheating; however, I find that I get more consistent results if I preheat. In most cases, 5 or 6 minutes does the trick.
- 9. Cut the English muffin in half, lightly toast, and then dig a small indentation out of the middle of each one.
- 10. Chef's Tip: If you are using bacon, then lightly brush some of the bacon grease over the cut tops. If you are using something else, melt a bit of butter, and brush over the cut tops. It makes a world of difference to the final product.
- 11. Chef's Tip: I used a biscuit cutter to define the indentation, and then used a spoon to scrape it out.
- 12. Add two tablespoons of the cheese, to each half, and then add the bacon.
- 13. Add the eggs.
- 14. Divide the rest of the cheese over the tops. If you want to use more cheese... I am not stopping you :-)
- 15. Chef's Tip: I like to crack the egg in a bowl... That way I can check for any pieces of shell, and make sure the yolk stays whole.
- 16. Chef's Note: Sprinkle with a bit of salt and pepper, to taste.
- 17. Place into the air fryer and cook for about 4 - 5 minutes.
- 18. PLATE/PRESENT
- 19. Remove from the air fryer and serve while nice and hot. Enjoy.
- 20. Keep the faith, and keep cooking.

- In a small skillet, cook bacon over medium heat until cooked but not crisp. Remove to paper towels to drain; keep warm., Preheat air fryer to 350°. In a small bowl, whisk 2 eggs, cream and pepper. Wrap 2 bacon strips around the inside edges of each of two 8-oz. ramekins or custard cups coated with cooking spray. , Sprinkle each with half of the cheese and onions. Divide egg mixture between ramekins. Break 1 of the remaining eggs into each ramekin. Sprinkle with remaining cheese and onion. Place ramekins on tray in air-fryer basket; cook until eggs are completely set, 15-20 minutes. Remove from basket; let stand 5 minutes before serving.
