SPAM® is not something I eat often but when I do, I like it extra crispy. I found a can in the pantry and decided to give it a go in the air fryer. The outside was far crispier than you get in a skillet on the stovetop and the inside stayed nice and tender.

Categories     Dinner

Time 20m

Yield Makes a batch of 12

Number Of Ingredients 17

1 red pepper, diced
2 shallots, diced
2 carrots, grated (smallest function)
2 cloves of garlic, grated
peel of 1 lemon, grated
1 thumb size piece of ginger, peeled and grated
1 x 400g can of chickpeas, drained
1tsp garam masala
1tsp cumin
1tsp ground coriander
3tbsp plain flour (or any gluten-free alternative)
1 egg
30g fresh coriander, chopped
vegetable oil, for frying
half a cucumber, grated
1 clove of garlic, grated
approx 150g Greek yoghurt (or a dairy-free alternative)

Steps:

  • Combine the red pepper, shallots, garlic, lemon peel and ginger in a large bowl. Squeeze the carrots to remove the excess juice then add to the bowl.
  • Place the chickpeas in a food processor and whizz for a few seconds until broken down and crumbly. You don't want a puree so don't blend too far. If you don't have a food processor just crush with chickpeas with the back of a fork.
  • Add the chickpeas to the bowl along with the garam masala, cumin and ground coriander.
  • Add the egg and mix well then sieve over the flour and mix again.
  • Shape into small discs and fry for around 3 minutes a side in a little olive oil.
  • When cooked remove and place on kitchen paper to cool.
  • To make the tzatziki combine the cucumber, garlic and yoghurt in a bowl. Top the fritters with the chopped coriander.

  • 1/2 cup chopped fresh cilantro
  • 1/2 onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup chickpea flour
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Olive oil cooking spray
Ingredients for Sweet Spicy Sauce:
  • 1/4 cup tahini
  • 2 tbsp honey
  • 2 tbsp sriracha or your preferred hot sauce
  • Juice of 1 lime
  • Water, as needed to thin the sauce
  • Salt to taste

Instructions:

Step 1: Preheat an air fryer to 375 degrees F. Meanwhile, prepare the fritter batter. In a food processor, pulse the chickpeas, parsley, cilantro, onion, and garlic until finely chopped but not pureed.

Step 2: Transfer the mixture to a mixing bowl and add the chickpea flour, cumin powder, paprika, salt, and black pepper. Stir until well combined. The mixture should be slightly sticky but still manageable. If it's too runny, add more chickpea flour.

Step 3: Use a tablespoon to scoop the batter and form small balls. Place them on a plate or baking sheet lined with parchment paper.

Step 4: Spray the air fryer basket with olive oil cooking spray. Place the fritters in a single layer, leaving some space in between. Spray them with more olive oil cooking spray.

Step 5: Air fry the fritters for 10-12 minutes, flipping them halfway through, until they are golden brown and crispy on the outside and cooked through on the inside.

Step 6: While the fritters are cooking, prepare the sweet spicy sauce. In a small bowl, whisk together the tahini, honey, sriracha, lime juice, and salt. Add water as needed to thin the sauce until it reaches the desired consistency.

Step 7: Serve the warm fritters with the sweet spicy sauce on the side for dipping or drizzling.

Air fryer chickpea fritters with sweet spicy sauce is a delicious and healthy snack that you can make at home. Chickpea fritters are made from ground chickpeas that are blended with spices and herbs. The fritters are formed into small balls and then air-fried to give them a crispy texture. The sweet and spicy sauce is the perfect accompaniment to these fritters. In this article, we will provide you with valuable tips to ensure that your air fryer chickpea fritters turn out perfectly.

Tip #1: Use Good Quality Chickpeas

The quality of the chickpeas you use will directly impact the taste and texture of your fritters. Always use good quality chickpeas that are fresh and have a smooth texture. You can use either canned chickpeas or dried chickpeas. If you are using canned chickpeas, make sure you drain and rinse them thoroughly to remove any excess sodium. If you are using dried chickpeas, soak them overnight and then boil them until they are tender.

Tip #2: Use the Right Spices and Herbs

The spices and herbs you use will give your chickpea fritters their unique taste and aroma. You can experiment with different spices and herbs to create your own signature fritters. Common spices and herbs that are used in chickpea fritters include cumin, coriander, turmeric, garlic powder, onion powder, and paprika. Make sure that you use fresh spices and herbs for the best flavor.

Tip #3: Use a Food Processor

To achieve the perfect texture for your chickpea fritters, it is important to use a food processor. The food processor will help to break down the chickpeas and other ingredients, creating a smooth and consistent mixture. If you do not have a food processor, you can use a blender or a mortar and pestle.

Tip #4: Add a Binding Agent

Adding a binding agent to your chickpea fritters will help them to hold their shape and not fall apart during the cooking process. Common binding agents that are used in chickpea fritters include flour, cornstarch, chickpea flour, and breadcrumbs. You can also use egg as a binding agent if you are not making a vegan recipe.

Tip #5: Preheat Your Air Fryer

Before you start cooking your chickpea fritters, it is important to preheat your air fryer. Preheating your air fryer will ensure that it reaches the desired temperature before you add your fritters. This will help to create a crispy outside while keeping the inside of the fritters moist and tender.

Tip #6: Use Parchment Paper or Cooking Spray

To prevent your chickpea fritters from sticking to the air fryer basket, it is important to use parchment paper or cooking spray. If you choose to use parchment paper, make sure that it is cut to fit the size of your air fryer basket. If you choose to use cooking spray, make sure that it is evenly distributed.

Tip #7: Do Not Overcrowd the Air Fryer Basket

Overcrowding the air fryer basket can result in unevenly cooked fritters. The fritters need space to cook and move around freely. Make sure that you leave enough space between each fritter to prevent them from touching each other.

Tip #8: Flip the Fritters Halfway Through Cooking

To ensure that your chickpea fritters are cooked evenly, it is important to flip them halfway through the cooking process. This will help to create a crispy outside on all sides of the fritters.

Tip #9: Make the Sweet Spicy Sauce in Advance

Making the sweet and spicy sauce in advance will allow the flavors to blend together and develop. You can store the sauce in the refrigerator for up to a week.

Tip #10: Enjoy!

Once your air fryer chickpea fritters are cooked, it is time to enjoy them! Serve them hot with the sweet and spicy sauce for the perfect snack or appetizer.
Conclusion
Air fryer chickpea fritters with sweet spicy sauce is a tasty and healthy snack that is easy to make at home. By following these valuable tips, you can ensure that your fritters turn out perfectly every time. Remember to use good quality chickpeas, the right spices and herbs, a food processor, and a binding agent.
